A satisfying chicken and mushroom one-pot that makes a great family supper or freeze leftovers for another day.

1 tbsp olive oil
1 large onion, finely chopped
3 thyme sprigs, leaves picked
2 garlic cloves, crushed
350g chicken breasts, cut into small chunks
250g chestnut mushrooms, sliced
300ml chicken stock
100g crème fraîche
1 tbsp wholegrain mustard
100g kale
2 tsp cornflour, mixed with 1 tbsp cold water
375g pack puff pastry, rolled into a circle slightly bigger than your dish
1 egg yolk, to glaze

Steps:

  • Heat ½ tbsp oil over a gentle heat in a flameproof casserole dish. Add the onion and cook for 5 mins until softening. Scatter over the thyme and garlic, and stir for 1 min. Turn up the heat and add the chicken, frying until golden but not fully cooked. Add the mushrooms and the remaining oil. Heat oven to 200C/180 fan/gas 6.
  • Add the stock, crème fraîche, mustard and kale, and season well. Add the cornflour mixture and stir until thickened a little.
  • Remove from the heat and cover with the puff pastry lid, pressing into the sides of the casserole dish. Slice a cross in the centre and glaze with the egg. Bake for 30 mins until the pastry is puffed up and golden.

2 onions
600 g chicken thighs, skin off, bone out
350 g mixed mushrooms
1 bunch of fresh thyme (30g)
375 g block of all-butter puff pastry, (cold)

Steps:

  • Preheat the oven to 220°C/425°F/gas 7.
  • Place a 30cm non-stick ovenproof frying pan on a high heat, with a smaller non-stick pan on a medium heat alongside. Pour 1 tablespoon of olive oil into the larger pan.
  • Peel and roughly chop the onions, adding them to the larger pan as you go.
  • Roughly chop two- thirds of the thighs, finely chop the rest, and add to the onion pan. Cook for 6 minutes, or until golden, stirring occasionally.
  • Meanwhile, place the mushrooms in the dry pan, tearing up any larger ones. Let them toast and get nutty for 4 minutes, then tip into the chicken pan and strip in half the thyme leaves.
  • Remove the pan from the heat, add a pinch of sea salt and black pepper, then stir in 1 tablespoon of red wine vinegar and 150ml of water.
  • Working quickly, roll out the pastry so it's 2cm bigger than the pan, then place it over the filling, using a wooden spoon to push it into the edges.
  • Very lightly criss-cross the pastry, then brush with 1 teaspoon of olive oil. Poke the remaining thyme sprigs into the middle of the pie.
  • Bake at the bottom of the oven for 15 minutes, or until golden and puffed up. Easy!

1 carnival squash - peeled, seeded, and cubed
4 skinless, boneless chicken breasts, diced
1 ½ cups chopped fresh mushrooms
1 (10.75 ounce) can reduced-fat condensed cream of mushroom soup
10 ¾ fluid ounces water
2 ¼ cups all-purpose flour
2 eggs, divided

Steps:

  • Place squash cubes in a large pot and cover with water; bring to a boil. Reduce heat and simmer until tender, about 20 minutes. Drain squash. Mash and set aside to cool.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Heat a dry skillet over medium heat. Add chicken and mushrooms; cook and stir until chicken is no longer pink, 5 to 10 minutes.
  • Drain chicken and mushrooms. Add mushroom soup. Fill empty can with water and pour in. Cook until mixed well, 2 to 3 minutes.
  • Add flour and 1 egg to the cooled mashed squash. Mix to form the pastry. Transfer to a well floured surface. Divide into 6 pieces. Roll out 3 pieces to fit 3 nonstick pie pans. Prick the bottoms with a fork.
  • Spoon chicken and mushroom filling over the pastry. Roll out remaining pastry and place over the filling. Beat remaining egg and brush over the tops.
  • Bake in the preheated oven until golden, about 30 minutes.

2 refrigerated puff pastry sheets (thawed (not frozen) and rolled out)
4 strips of bacon (cooked til crisp and chopped)
8 ounces sliced mushrooms
2 tablespoons butter
2 teaspoons minced garlic
3 cups shredded (or diced cooked chicken)
1 cup medium (or sharp cheddar cheese)
1 egg (whisked)
6 tablespoons butter
3 tablespoons flour
1 cup chicken broth
1 cup milk
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon cracked black pepper

Steps:

  • Preheat oven to 400 degrees. Grease a round pie dish. Gently pat one sheet of puff pastry into the greased pie dish. Set aside.
  • Prepare the homemade cream of chicken by melting 6 tablespoons butter in a medium sauce pan over medium-high heat. Stir in the flour for 1 minute. Gradually whisk in broth and milk. Stir in salt, pepper, and garlic powder. Once thickened and smooth, remove from heat.
  • In a large skillet melt the 2 tablespoons of butter. Stir in mushrooms and minced garlic for 2-3 minutes til garlic is fragrant and mushrooms begin to brown.
  • Stir in chicken and bacon for 1 minute, then stir in cream of chicken and cheddar cheese.
  • Transfer mushroom and chicken mixture to your pie dish. Cover with remaining sheet of puff pastry (it doesn't have to cover all the edge of the pie dish, just line up the corners with the corners of the bottom puff pastry sheet).
  • Brush whisked egg all over the top crust.
  • Bake on bottom rack for 25 minutes til crust is puffed and golden brown. Cool slightly before serving.

1 1/2 ounces bacon, finely chopped
1 tablespoon extra-virgin olive oil
1 medium onion, chopped
6 ounces cremini mushrooms, quartered
3 medium carrots, sliced 1/4 inch thick
1 celery stalk, thinly sliced
Coarse salt and freshly ground pepper
1/4 cup plus 1 1/2 teaspoons all-purpose flour
3 cups chicken stock
2 1/4 pounds boneless, skinless chicken breast halves and thighs, cut into 1-inch cubes
3 tablespoons heavy cream
1 disk Pate Brisee
All-purpose flour, for surface
1 large egg, lightly beaten for egg wash

Steps:

  • Make the filling: Cook bacon in a large saucepan over low heat until crisp, about 10 minutes. Transfer bacon to a plate using a slotted spoon. Raise heat to medium, and add oil. Add onion, and cook until translucent, about 8 minutes. Add mushrooms, carrots, and celery, and cook until softened, about 10 minutes. Season with salt and pepper. Stir in flour.
  • Add stock, and bring to a simmer. Cook until thickened, about 5 minutes. Add chicken and cream. Simmer until chicken is just cooked through, about 5 minutes. Return bacon to saucepan. Let cool.
  • Divide filling among eight 4-inch (12 ounce) ramekins.
  • Preheat oven to 375 degrees. Make the topping: Roll out pate brisee to a 1/4-inch thickness on a lightly floured surface. Cut out 8 circles that are 1 inch wider than the ramekins. Top ramekins with dough, and crimp edges with a fork to seal. Brush dough with egg wash. Freeze for 20 minutes.
  • Bake until toppings are golden and fillings are bubbling, about 40 minutes.

1 cup boiling water
1 cube chicken bouillon
2 tablespoons butter, divided
1 large onion, sliced
1 pint white button mushrooms, sliced
4 (5 ounce) skinless, boneless chicken breasts, cubed
1 tablespoon Worcestershire sauce
ground black pepper to taste
¾ cup milk
¼ cup water
1 cup frozen mixed vegetables (carrots, corn, peas)
2 teaspoons cornstarch
1 (14 ounce) package pastry for double-crust pie
1 large egg yolk, beaten

Steps:

  • Combine 1 cup boiling water and chicken bouillon in a liquid measure; set aside to dissolve.
  • Meanwhile, melt 1 tablespoon butter in a pot over medium heat. Add onions and saute until translucent, about 5 minutes. Increase heat to medium-high and add mushrooms; fry for about 3 minutes. Remove onion-mushroom mixture from the pot.
  • Add remaining butter to the pot with chicken pieces. Stir chicken and splash Worcestershire sauce over top. Cook, stirring continuously, until chicken is seared on all sides but not cooked through, about 3 minutes. Stir in onion-mushroom mixture, bouillon, and pepper.
  • Add milk and 1/4 cup water; boil for 20 minutes. Add frozen vegetables and boil for 10 more minutes.
  • Preheat the oven to 400 degrees F (200 degrees C). Grease an 8-inch oven-proof dish and lay down bottom crust in it. Set top crust aside.
  • After filling has boiled for 10 minutes, use a large ladle to scoop out approximately 1 cup sauce from the mixture and pour into a cup. Add cornstarch to the cup and stir until all lumps have dissolved. Add cornstarch mixture back to the pot; cook and stir until filling has thickened to your liking.
  • Bake bottom crust in the preheated oven for approximately 5 minutes. Remove from the oven, add filling, and cover with the top crust, making sure the edges are sealed. Make cute decorations with pastry cut-offs and use a knife to make several small slits in the top to allow steam to escape. Lightly paint egg yolk over the top crust.
  • Bake until golden brown, 15 to 20 minutes. Ovens vary so baking time may vary-keep an eye on it.

A delicious Chicken and Mushroom Pie fancy enough for entertaining, but easy enough for a weeknight meal.

1.5lb (680g) Chicken, bone-in, skin-on breast (or You can use store-bought rotisserie chicken to save time, but you'll only need 2 cups (300 grams) that will allow for enough sauce)
4 slices bacon, diced
1 ¼ cup (190g) yellow onion, sliced into half-moons
2 tablespoon (30 ml) fresh thyme, minced and patted dry of any moisture
8 oz (230g) sliced mushrooms
3 tablespoon (38g) butter
2 tablespoon (15g) flour
2 cups (480ml) chicken broth
2-5 dashes Worcestershire sauce
1 teaspoon (5ml) mustard
1 tablespoon (15ml) heavy cream (if desired)
1 sheet store-bought puff pastry
1 egg, beaten

Steps:

  • Preheat oven to 400F (200g). Roast chicken on a sheet pan with a rack until cooked through 45 minutes. Set aside to cool.
  • Roll the pastry out to remove any seams. Score decorative diagonal lines, in opposing directions, vertically along the pastry, being careful not to cut through the pastry, otherwise the sauce will rise up and spill out over your browning pastry and prevent it from puffing up fully.
  • Place pastry on a baking sheet lined with parchment paper and keep refrigerated until ready to use.
  • In a 10" (25cm) cast-iron skillet, cook bacon until crispy. Remove bacon with a slotted spoon, onto a plated lined with a paper towel. Keep the fat in the pan!
  • Cook the onions in the bacon fat until tender and fragrant. Then add the thyme and continue to cook for 1-2 minutes. Then remove onions with a slotted spoon and transfer them to a large bowl and set them aside. Keep fat!
  • Cook mushrooms in the bacon fat, or add 1 tablespoon (15g) of butter if needed. Sautee until golden brown and they release their juices. Add mushrooms to a large bowl. Do not wash out the pan.
  • Melt the butter in the pan, once foamy add the flour, whisk until a paste forms, then add the chicken broth, Worcestershire sauce, mustard, and haevy cream (if using) and stir until combined. Allow to simmer.
  • Shred the cooked chicken off the bone into large shredded chunks. Set aside.
  • Add back in the mushrooms and onions, and the chicken. Stir to combine.
  • Taste for seasoning. Add salt and pepper if needed. Allow to cool for 15 mins. Meanwhile prep the puff pastry.
  • Remove the pastry from the refrigerator. Transfer it to the cooled filling, tuck pastry under on all sides, into the pan, brush with beaten egg. If pastry has warmed up too much, pop the whole pan in the freezer for 10 minutes to firm back up before baking. Bake at 400F for 20-25 mins. Serve immediately oven to table.
