This recipe for Chicken Curry is very easy and very good. Rich and creamy! Serve with hot rice and condiments - such as chopped peanuts, chopped apples, raisins, chutney, etc. - if desired.

1 and 1/2 lb skinless, boneless chicken breasts
2 Tbsp butter
salt and pepper to taste
1/4 c finely chopped shallots
1 Tbsp curry powder, or more to taste
1/2 c dry white wine
1 and 1/4 c heavy cream

Steps:

  • 1. Cut chicken breasts into thin strips or small chunks. Melt butter in a skillet and when it is hot but not brown, add the chicken. Season with salt and pepper.
  • 2. Cook chicken, stirring, until it loses its 'raw' look, about 2 minutes. Sprinkle chicken with the shallots and curry powder; stir to blend. Cook for 2 minutes or so, til chicken is done. With the small/thin pieces it will not take long. Do not overcook. Transfer all to a bowl.
  • 3. Add wine to the skillet and cook over high heat for about 3 minutes, or until it is reduced by about half. Add the cream to the skillet, along with any juices that have accumulated in the bowl holding chicken,and cook, stirring, over medium-high heat for 4 minutes. Add chicken and stir to blend; heat through.
  • 4. Nice sprinkled with chopped peanuts and/or minced parsley!

This is a really great recipe for people that do not like or can not eat coconut or coconut milk. It is smooth and creamy, with a nice curry flavor.

1 1/2 lbs chicken breasts or 1 1/2 lbs chicken tenders, cut into 1 inch pieces
1 teaspoon salt and pepper, to taste
1 tablespoon curry powder
2 tablespoons vegetable oil
1 yellow onion, chopped fine
1 cup chicken stock
2 tablespoons cornstarch
2 tablespoons curry powder
1 teaspoon salt and pepper, to taste
1 cup Greek yogurt
1 tablespoon vegetable oil
3 cups cooked rice
1/4 cup peas, cooked (optional)
1/4 cup raisins (optional)

Steps:

  • Chicken:.
  • Cut chicken into 1 inch (bite size pieces).
  • Season the chicken pieces with salt and pepper and curry powder.
  • Add the oil to a preheated pan on med-high, then add the chicken pieces and cook until done,.
  • Remove from heat and set aside to make the sauce.
  • Sauce:.
  • In a sauce pan, add the oil and chopped onions. Cook on medium heat until tranlucent.
  • In a medium mixing bowl, add the stock, corn starch, curry powder, salt and pepper. Whisk will to combine. (This would be the time to add any other additional spices you like in curry, if you just like curry powder, do not add any other spices).
  • Add mixture to onions and heat over med-med/low heat until thick. Stirring often.
  • In another mixing bowl, add the yogurt and whisk smooth.
  • Temper the yogurt with the starch mixture and add back to the pan. (add a small amount of the hot liquid to the yogurt and mix well, continue until about half of the hot liquid is mixed into the yogurt. Then add that mixture to the hot and mix will). Turn heat to low and cook until sauce is hot.
  • Look online for "how to temper an egg," if you are not familliar with this procedure.
  • Service:.
  • Once the sauce is hot add chicken to the sauce and let cook 1-2 minutes. Then top the sauce over rice and enjoy.

This easy staple chicken curry is a fantastic recipe for family dinners. It's made with just a handful of ingredients and is enriched with creamy yogurt

2 tbsp sunflower oil
1 onion, thinly sliced
2 garlic cloves, crushed
thumb-sized piece of ginger, grated
6 chicken thighs, boneless and skinless
3 tbsp medium spice paste (tikka works well)
400g can chopped tomatoes
100g Greek yogurt
1 small bunch of coriander, leaves chopped
50g ground almonds
naan breads or cooked basmati rice, to serve

Steps:

  • Heat the oil in a flameproof casserole dish or large frying pan over a medium heat. Add the onion and a generous pinch of salt and fry for 8-10 mins, or until the onion has turned golden brown and sticky. Add the garlic and ginger, cooking for a further minute.
  • Chop the chicken into chunky 3cm pieces, add to the pan and fry for 5 mins before stirring through the spice paste and tomatoes, along with 250ml water. Bring to the boil, lower to a simmer and cook on a gentle heat uncovered for 25-30 mins or until rich and slightly reduced. Stir though the yogurt, coriander and ground almonds, season and serve with warm naan or fluffy basmati rice.

Steps:

  • Cut chicken into strips 1/2 inch wide.
  • Melt butter in skillet and add the chicken pieces when hot. Sprinkle with salt and pepper. Cook, stirring often, about 2 minutes.
  • Sprinkle over chicken the shallots and curry powder. Stir well. Cook about 1 minute.
  • Transfer chicken to a bowl.
  • Add wine to skillet and cook over high heat about 3 minutes, until reduced to 1/4 cup. Add chicken juices from the bowl.
  • Add cream to the skillet and cook over high heat about 4 minutes.
  • Add chicken and stir to blend. Chicken should be hot through.
  • Serve with rice and cucumber raita.

  • Heat about a tablespoon of oil in a pan and add in the chopped onion, garlic and ginger. Give everything a good pinch of salt. Let everything sauté and continue to cook until very soft and translucent and fragrant.
  • Once everything is very fragrant and soft add in the tomato puree and spices (curry powder & turmeric) Give everything a good stir to get the onions coated in the tomato puree and spices. This is where you add in the sugar and the soy sauce. Go easy on both. We can add more when the sauce has come together and we taste it. Better to under-do it here rather than overdo it.
  • Now add in the tinned tomatoes and coconut milk. Scrape up any brown bits from cooking the onions and garlic. Give everything a good whisk and taste. Add in anything you think it needs. I added in extra soy sauce and sugar, but you may want more curry powder or chili flakes. Either way, this curry sauce is so flexible that you really can add in extra of whatever you want.
  • Once you've got the sauce tasting just right, bring it up to a gentle simmer and add in the diced chicken. Cook for about 15 minutes, until the chicken is cooked through. Stir in the chopped coriander and squeeze in some lime juice.
