No-Chill Sugar Cookies with Icing image

A no-chill dough that leaves the cookies soft and yummy-the only sugar cookie recipe I make. Mix, roll, bake and cool. Then you're ready to decorate. I used to hate making sugar cookies because the dough had to be chilled and I didn't like the taste, but these are different.

COOKIE DOUGH
1 cup(s) unsalted butter, room temperature
1 cup(s) sugar
1 teaspoon(s) vanilla extract
1/2 teaspoon(s) almond extract
1 - egg
2 teaspoon(s) baking powder
3 cup(s) flour
ICING
4 cup(s) powdered sugar
6 tablespoon(s) whole milk
6 tablespoon(s) light corn syrup
1 1/2 teaspoon(s) almond extract
- assorted sprinkles for decorating

Steps:

  • Preheat oven to 350° F. In the bowl of your mixer cream butter and sugar until smooth. Beat in extracts and egg.
  • In a separate bowl combine baking powder with flour and add a little at a time to the wet ingredients. The dough will be very stiff. If it becomes too stiff for your mixer turn out the dough onto a countertop surface. Wet your hands and finish off kneading the dough by hand.
  • DO NOT CHILL THE DOUGH. Divide into workable batches, roll out onto a floured surface and cut. You want these cookies to be on the thicker side (closer to 1/4 inch rather than 1/8). Bake at 350 for 6-8 minutes. Let cool on the cookie sheet until firm enough to transfer to a cooling rack.
  • To make the icing-n a large mixing bowl, whisk together powdered sugar and milk until smooth. Add in corn syrup, and 1 ½ teaspoons almond extract. You can use vanilla extract if you'd like. Place icing in a large ziplock bag, snip the tip of the bag and then pip all the way around the cookies. Fill in the middle by piping in the middle, and it should fill in by itself-help it with a toothpick if you need to though. Sprinkle with colored sugar or decorations after icing them. When dry, they will be dry to the touch on top.

This recipe is from Wilton and was on the back of some cookie cutters I recently purchased. I liked that it didn't require chilling. It's a rich, buttery cookie, very tasty.

1 cup unsalted butter
1 1/2 cups granulated sugar
1 egg
2 teaspoons vanilla
2 3/4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt

Steps:

  • Preheat oven to 400 degrees.
  • In mixing bowl, cream butter with sugar until light and fluffy. Beat in egg and vanilla.
  • Mix flour, baking powder, and salt in a separate bowl; add to butter mixture 1 cup at a time, mixing after each addition.
  • Do not chill dough. Divide dough into two balls. On a floured surface roll each ball into a circle approximately 12" wide and 1/8" thick. Dip cookie cutter in flour and cut out cookies.
  • Bake on ungreased cookie sheet for 6 - 7 minutes or until cookies are lightly browned. It helps to line pans with parchment paper for easy cookie removal.

  • In the bowl of an electric mixer fitted with the paddle attachment, beat the cold butter and sugar until creamy. Beat in the half and half and almond extract and then the eggs, one at a time, until mixture is well combined. Add the flour, baking powder and salt. Mix on low speed until a thick dough forms. *If the dough seems too wet, add an additional 1/4 cup of flour at a time until it comes together smoothly.
  • On a floured surface, roll half of the dough out to 1/4-inch thickness. Cut into desired shapes. Repeat with remaining dough until you’ve used it all.
  • Place cookies about an inch apart on the prepared baking sheets. Bake for about 7-9 minutes, rotating cookie sheets after 5 minutes, or until cookies are just set and starting to turn light brown around the edges. Let cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
