During culinary school I worked at a Mexican restaurant in Saranac Lake, NY, called Casa Del Sol. My favorite dish was the Chile Verde. In this version I simmer large chunks of chicken slowly in an exotic green sauce of tomatillos and chilies.

1 whole chicken, cut into 6 pieces
salt and freshly ground black pepper
1 tablespoon vegetable oil
8 tomatillos, husked and quartered
2 fresh jalapeno peppers, chopped
6 cloves garlic
½ bunch cilantro
3 cups chicken stock
1 tablespoon vegetable oil
1 onion, diced
2 tablespoons ground cumin
2 teaspoons dried oregano
1 bay leaf
1 ½ pounds potatoes, peeled and cubed
salt and freshly ground black pepper to taste
½ cup sour cream, for garnish

Steps:

  • Season chicken pieces with salt and black pepper on all sides.
  • Heat 1 tablespoon vegetable oil in a skillet over medium-high heat. Cook chicken, 2 to 3 pieces at a time, until browned on all sides, about 15 minutes total. Set aside.
  • Place tomatillos, jalepeno peppers, garlic, cilantro, and chicken stock in a blender and puree until smooth. Set aside.
  • Heat 1 tablespoon vegetable oil over medium-low heat in a Dutch oven. Stir in onion, cook and stir until onion is soft and translucent, about 10 minutes. Stir in cumin, oregano, and bay leaf; cook 1 minute.
  • Place chicken over onion mixture in the Dutch oven. Pour in tomatillo mixture. Bring to a boil, decrease heat to low and simmer, covered, until the meat is tender and falling off the bone, about 1 hour 15 minutes.
  • Stir in potatoes and cook, uncovered, until they are easily pierced with a fork, about 35 minutes.
  • Season with salt and pepper to taste; serve garnished with sour cream.

This chili is good the day it's made and even better reheated the next day for lunch. We use dark chicken meat rather than white, so it will remain tender.

1 tablespoon canola oil
1 pound boneless, skinless chicken thighs
1 medium onion, diced
2 garlic cloves, minced
1 medium poblano chile, diced
2 cans (14.5 ounces each) reduced-sodium chicken broth
2 cans (15 ounces each) white navy beans, drained and rinsed
1 can (15 ounces) hominy, drained
Coarse salt and ground pepper
Fresh cilantro, for garnish (optional)
Jalapeno-pepper sauce, such as green Tabasco, for serving (optional)

Steps:

  • In a large pot (5 quarts), warm oil over medium-high heat. Brown chicken until golden, 3 to 4 minutes per side. Transfer to a plate; set aside.
  • Reduce heat to medium. Add onion, garlic, and chile; cook, stirring often, until onion softens, 3 to 4 minutes.
  • Cut browned chicken into 1/2-inch strips. Add chicken, broth, and beans to pot; bring to a boil. Reduce heat to an active simmer, and cook until chicken is very tender and chili has thickened, 25 to 30 minutes.
  • Reserve 1/2 cup hominy to use as garnish; stir remaining hominy into chili. Season with salt and pepper. Ladle into bowls; garnish each serving with reserved hominy and cilantro, and drizzle with jalapeno sauce, as desired.

8 skin-on, bone-in chicken thighs (about 2 1/2 pounds)
1 15-ounce can white hominy, drained, rinsed and patted dry
1/2 medium acorn squash, seeded and diced
1 yellow bell pepper, chopped
3 tablespoons extra-virgin olive oil
1 tablespoon fresh lime juice, plus wedges for serving
2 scallions, thinly sliced
1/4 cup chopped fresh cilantro

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 425 degrees F. Line 2 baking sheets with foil. Mix 1 1/2 teaspoons chili powder, 1/2 teaspoon cumin, 3/4 teaspoon salt, the cinnamon and lime zest in a bowl. Rub the spice mixture all over the chicken, then transfer to one of the baking sheets; set aside until ready to roast.
  • Toss the hominy, squash, bell pepper, 2 tablespoons olive oil, the remaining 1/2 teaspoon each chili powder and cumin, and 1/4 teaspoon salt in a medium bowl. Spread on the other baking sheet.
  • Transfer the chicken to the upper oven rack and the hominy to the lower rack. Roast, stirring the hominy occasionally, until the hominy is lightly browned and the chicken is cooked through, about 25 minutes.
  • Transfer the hominy to a bowl and add the lime juice, the remaining 1 tablespoon olive oil, the scallions and cilantro. Season with salt and toss. Serve with the chicken and lime wedges.

1/2 jalapeno pepper (stems and seeds removed, as you like)
cooking spray
1 1/2 lbs tomatillos
1/4 cup finely chopped fresh cilantro
1 1/2 teaspoons ground cumin
1 teaspoon dried oregano
2 cups chicken broth, divided (I used 3C)
2 tablespoons olive oil, divided
1 1/2 cups finely chopped onions
1/2 cup chopped carrot (I used a LOT more)
1/2 cup chopped celery (I used a LOT more)
1/2 cup chopped red pepper (I used a LOT more)
3 tablespoons flour (I excluded)
4 teaspoons finely chopped garlic
1 lb chicken thigh, skinless, boneless cut into 1 1/2 inch pieces (I used boneless skinless breasts)
3/4 teaspoon salt, divided
1/2 teaspoon black pepper, divided
1 (29 ounce) can hominy, rinsed and drained
6 tablespoons reduced-fat sour cream

  • Preheat broiler to high. Halve, stem, seed chiles. Place chiles, skin side up, on a foil-lined baking sheet coated with cooking spray; broil for 5 minutes or until charred. Place chiles in a paper bag; seal. Let stand for 15 minutes. Peel and discard skins.
  • Arrange tomatillos (husked and washed) on prepared baking sheet, and broil 14 minutes or until blackened, turning once. Combine the chiles, tomatillos, 1/4 C cilantro, cumin and oregano in a blender. Add 1 C broth; process until smooth.
  • Heat a large dutch oven over medium high heat. Add 2 tsp olive oil; swirl to coat. Add jalapeno, onion, carrot, celery, and bell pepper; saute for 2 minutes stirring frequently. (you would add flour here - and stir for 2 minutes if you are using it -- ) Add garlic, saute for 30 seconds, stirring constantly. Place onion mixture in a large bowl.
  • Sprinkle chicken with 1/2 tsp salt and 1/4 tsp pepper. Add 2 tsp oil to pan. Add half of chicken; saute 3 minutes. Add browned chicken to onion mixture. Repeat with remaining chicken.
  • Combine remaining 1 C broth, tomatillo mixture, onion mixture and hominy in pan over medium high heat. Bring to a boil, then cover, reduce and simmer for 45 minutes, stirring occasionally. Add more S&P to your taste.
  • Ladle into bowls, top each with 1 Tbl sour cream and garnish with cilantro.
  • Note - I added more chicken broth and made more of a soup. With less chicken broth it is more of a stew -- .

POZOLE VERDE (MEXICAN HOMINY AND CHICKEN)



Pozole Verde (Mexican Hominy and Chicken) image

A traditional Mexican pozole as printed in our local newspaper today. Nixtamal is dried corn cooked with food-grade lime until it can be hulled. The softened, cooked corn can then be ground into masa for tortillas or tamales. Or it is left whole and cooked further to make pozole by putting the corn into a pot, adding water, and simmering until the kernels "pop" open. Canned hominy may be substituted, but since it's processed slightly differently the flavor isn't quite identical. Mexican-style canned hominy brands such as Juanita's and El Mexicano are processed in the traditional manner. Cooking time may be reduced if canned hominy is used. Supermarkets that stock Latino foods usually carry both canned Mexican-style hominy and fresh nixtamal, which is usually packed in 2 to 5 pound bags and found in the refrigerated section. It's also available at most tortillerias.

1 (2 lb) bag nixtamal (canned hominy may be used if unavailable)
6 quarts water
1 cup water
6 chicken breast halves, about 4 pounds
6 1/2 teaspoons salt, divided
1 lb poblano pepper (4 medium)
1 bunch cilantro
2 medium onions, divided
4 cloves garlic, peeled
1 head iceberg lettuce, shredded
6 serrano peppers, sliced
4 -6 limes, cut into wedges
1/4 cup dried oregano (or more)
1 package crisp corn tortilla (used for tostadas)

Steps:

  • Rinse nixtamal thoroughly in a strainer.
  • Pour into large Dutch oven or heavy lidded pot, add 4 quarts water and bring to boil.
  • Simmer gently, loosely covered about 2 hours, or until tender.
  • Do not allow to boil dry (enough water should remain at end of cooking time to keep nixtamal moist).
  • While corn is cooking, rinse the chicken and place in a pot with 2 quarts water and 2 teaspoons salt.
  • Bring chicken to boil, reduce heat, cover and simmer 1 hour.
  • Strain and measure broth, adding water if necessary to equal 8 cups.
  • Shred meat, discarding skin and bones.
  • Set aside broth and chicken.
  • When nixtamal is tender, remove it to bowl.
  • Rinse the pot and return cooked nixtamal to pot.
  • Wash poblano chiles and discard stems and seeds.
  • Cut into chunks.
  • Wash cilantro and cut off tips of stems.
  • Place chiles and cilantro in blender with a cup of water and whirl.
  • Slice one of the onions.
  • Add chile-cilantro puree, chicken broth, sliced onion, garlic cloves and 4 1/2 teaspoons of salt to nixtamal.
  • Stir to combine, bring to boil, reduce heat, cover and simmer for 30 minutes.
  • Add chicken and cook 15 more minutes.
  • Dice remaining onion and place in small bowl.
  • Arrange lettuce, serrano chiles, lime wedges and oregano in separate bowls, and crisp tortillas in basket or bowl.
  • To serve, ladle pozole into large soup bowls and garnish with lettuce, chile slices, lime juice and oregano and tortillas.

Steps:

  • Sprinkle chicken with salt and pepper. Coat with flour. Heat 1 tablespoon oil in heavy large skillet over medium-high heat. Add half of chicken to skillet and sauté until golden brown, about 10 minutes. Transfer to large pot. Repeat with 1 tablespoon oil and remaining chicken.
  • Heat 2 tablespoons oil in same skillet over medium-high heat. Add onions and garlic; sauté until onions are tender, about 5 minutes. Transfer to pot with chicken. Heat 1 tablespoon oil in same skillet over medium-high heat. Add Anaheim chilies and green bell peppers. Sauté until tender, about 4 minutes. Transfer to pot with chicken. Heat 1 tablespoon oil in same skillet. Sauté half of corn until tender, about 2 minutes. Transfer to pot with chicken. Repeat with remaining 1 tablespoon oil and corn.
  • Add chicken broth, tomatillos, oregano, chili powder, cumin, paprika and cinnamon sticks to pot. Bring liquid to boil. Reduce heat and simmer until mixture thickens and flavors blend, stirring occasionally, about 2 hours. (Can be prepared 1 day ahead. Refrigerate until cool. Cover and keep refrigerated. Rewarm over medium heat before continuing.)
  • Mix cilantro into chili. Transfer to large serving bowl. Garnish with tortilla chips and serve.
