This Avocado Chicken Salad recipe is a keeper! Easy, excellent chicken salad recipe with lemon dressing, plenty of avocado, irresistible bites of bacon and corn. Optional: For even more protein, we add 2 hard boiled eggs, halved or quartered.

2 large cooked chicken breasts (shredded or chopped)
2 large avocados
1 cup corn (from 1 cooked cob)
6 oz lean bacon (cooked and chopped)
1/4 cup Chives ((or green onion), chopped)
2 Tbsp Dill (chopped, or to taste)
3 Tbsp lemon juice (freshly squeezed)
3 Tbsp extra virgin olive oil
1 tsp sea salt (or to taste)
1/8 tsp black pepper

Steps:

  • Dice or shred the 2 large cooked chicken breasts and place into a large mixing bowl.
  • Peel and pit 2 large avocados, slice into bite-sized pieces and add to the mixing bowl.
  • Add 1 cup of cooked corn (freshly cooked corn is best), toss in 1/4 cup chopped green onion, chopped bacon, and 2 Tbsp fresh Dill.
  • Add dressing ingredients to a small bowl and stir to combine. Drizzle over your salad and toss to combine. Serve with slices of hard boiled egg if desired.

"Our family and friends always rave over this dish at Sunday afternoon barbecues," confirms Patty Cook of West Palm Beach, Florida. "We usually grill the corn the night before. I especially like this recipe because it lets me share the cooking with my husband, Rich. We call him "King of the Grill'!"

1 bottle (16 ounces) fat-free Italian salad dressing
1 to 2 tablespoons minced fresh rosemary or 1 to 2 teaspoons dried rosemary, crushed
7 medium ears sweet corn, husks removed
7 plum tomatoes, sliced
7 cups torn fresh spinach

Steps:

  • In a large resealable plastic bag, combine the dressing and rosemary; add corn. Seal bag and turn to coat; remove corn from marinade. Seal bag and refrigerate marinade. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill corn, covered, over medium heat for 15-18 minutes or until tender, turning occasionally. Return corn to the marinade; add tomatoes. Seal bag and turn to coat; refrigerate for at least 4 hours or overnight., Drain corn and tomatoes, reserving marinade. Cut corn off the cob. Arrange spinach on salad plates; top with tomatoes and corn. Drizzle with reserved marinade.

¼ cup olive oil
2 tablespoons lemon juice
salt
pepper
paprika
chili powder
12 oz roasted red pepper
1 chicken breast
2 tablespoons oil
3 romaine lettuces
1 cup corn
15 oz black beans
1 jalapeño
¼ red onion

Steps:

  • Blend the roasted red peppers with lemon juice, olive oil, salt, pepper, and paprika.
  • Infuse the chicken breast with a preferred oil, salt, pepper and chili powder.
  • Bake the chicken breast for 20 minutes at 400 F.
  • Slice three heads of romaine and add it to a salad bowl, along with corn, drained black beans, diced chicken, red onion, and a jalapeno, toss the salad.
  • Pour the dressing over the tossed salad.
  • Enjoy!

1 cup fresh corn kernels (from 2 medium ears)
2 tablespoons reduced-fat mayonnaise or salad dressing
2 tablespoons fat-free sour cream
2 tablespoons lime juice
2 teaspoons 40% less-sodium taco seasoning mix
3 cups shredded cooked chicken
1 small red bell pepper, finely chopped (1 cup)
2 medium green onions, finely chopped (2 tablespoons)
1/2 small avocado, pitted, peeled and cubed (1/2 cup)
2 tablespoons chopped fresh cilantro

Steps:

  • In 1-quart saucepan, heat 2 inches of water to boiling. Add corn; reduce heat. Simmer uncovered 5 minutes; drain. Rinse with cold water; drain.
  • In large salad bowl, mix mayonnaise, sour cream, lime juice and seasoning mix with wire whisk. Add chicken, corn, bell pepper and onions; toss to coat.
  • Gently stir in avocado; sprinkle with cilantro.
