Number Of Ingredients 1

You will need: 1 family sized bag of frozen battered chicken nuggets (Not breaded) 1 tsp oil 1/2 each red, green and yellow sweet bell pepper, trimmed and cut into chunks 1 medium onion, peeled and cut into chunks 1 large clove garlic, peeled and minced 1 tin (435g/14 oz) pineapple chunks in juice, drain and save the juice For the sauce: 55g of tomato ketchup (1/4 cup) 1 tsp soy sauce 60ml of white vinegar (1/4 cup) 50g soft light brown sugar (1/4 cup packed) 95g of white sugar (1/2 cup) 180ml of water or a mix of water and pineapple juice (3/4 cup) plus 2 1/2 TBS 1 1/2 TBS corn flour (corn starch) To serve: 1 spring onion, thinly sliced on the diagonal cooked rice

Steps:

  • Preheat the oven to the temperature recommended on the package of chicken nuggets. Spread the nuggets out on a tray in a single layer and then bake according to package directions. While the nuggets are baking, make the sauce. Whisk the tomato ketchup, soy sauce, vinegar, brown sugar, white sugar and pineapple juice/water mixture together. In a bowl mix together the 2 1/2 TBS of water and the cornflour. Set aside. Heat the oil in skillet. Add the vegetables and cook, stirring, until crispy tender. Add the pineapple chunks. Pour in the tomato ketchup mixture. Bring to the boil, then whisk in the cornflour/water mixture and cook stirring until the mixture thickens and becomes glossy. Remove the chicken from the oven. Place a third of the sauce in a baking dish. Top with half the nuggets. Pour another third of the sauce over top of the nuggets. Top with the remaining nuggets, and then finally the remaining sauce. Bake in the heated oven, uncovered, for 10 to 15 minutes until hot and bubbling. Remove from the oven. Scatter the spring onion over top and serve along with cooked rice.

1 medium green pepper, cut into chunks
1 large onion, cut into wedges
1 to 2 tablespoons canola oil
1 can (14-1/2 ounces) chicken broth
1/2 cup pancake syrup
1/4 cup cider vinegar
1 tablespoon soy sauce
1 can (8 ounces) pineapple chunks
2 to 3 tablespoons cornstarch
20 pieces breaded chicken nuggets, thawed
Hot cooked rice

Steps:

  • In a large skillet, saute green pepper and onion in oil until crisp-tender; remove and keep warm. Add the broth, syrup, vinegar and soy sauce to the skillet; bring to a boil., Drain pineapple, reserving juice; set pineapple aside. Combine cornstarch and juice until smooth; gradually add to broth mixture. Bring to a boil; cook and stir for 2 minutes or until thickened., Add chicken nuggets; cook for 2 minutes. Stir in the pineapple and sauteed vegetables; heat through. Serve over rice.

2 tbsp olive oil
16 oz frozen stir fry vegetables
3/4 cup sweet & sour sauce
3 green onions (sliced)
3 cups cooked brown rice

Steps:

  • Bake chicken nuggets at 400 degrees for 11 - 13 minutes.
  • Meanwhile, heat olive oil over medium high heat in a deep skillet. Add frozen vegetables. Cover and cook 5-7 minutes until tender, stirring occasionally.
  • Once nuggets are done, slice in half and add to cooked vegetables in skillet.
  • Stir in sweet & sour sauce and green onions. Lower heat to simmer, cover, and cook an additional 5 minutes. Serve over brown rice.

  • In a bowl or plastic bag, combine bread crumbs and lemon-pepper seasoning. Add chicken pieces, a few at a time, and toss to coat., Heat oil in a skillet over medium heat. My kids love this fast fix for chicken nuggets. There is an unusual ingredient, but it works perfectly. I wondered about the addition of pancake syrup also, but it makes such a nice sweet and sour sauce. This meal is very much a kid pleaser!

1 box frozen breaded chicken nuggets (about 20 per package)
1 green pepper (chopped)
1 onion (cut into wedges)
2 teaspoons vegetable oil
1 (14 1/2 ounce) can chicken broth
1/2 cup pancake syrup (yes, use pancake syrup, no substitutions)
1/4 cup cider vinegar
2 -3 tablespoons soy sauce
1 (8 ounce) can pineapple chunks, reserve juice
3 tablespoons cornstarch
1/2 teaspoon garlic powder
2 cups hot cooked rice

Steps:

  • Cook chicken nuggets for only half of required baking time and set aside.
  • Saute onion and green pepper in vegetable oil until crips tender.
  • Add pineapple chunks, reserving juice.
  • Heat on low.
  • Add cornstarch to reserved pineapple juice and stir until dissolved.
  • Add chicken broth, pancake syrup, vinegar, garlic powder, and soy sauce to vegetable mixture.
  • Bring to a boil and add cornstarch mixture.
  • Continue to boil until mixture begins to thicken@ 2-3 minutes.
  • Reduce heat.
  • Add chicken and stir to coat them in sauce.
  • Cook until heated through@ 5-10 minutes.
  • Serve over rice.
