1/2 cup plus 2 Tbsp. chopped pecans, divided
2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
1 cup cold milk
1 cup canned pumpkin
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided

Steps:

  • Pour 1/4 cup caramel topping onto bottom of pie crust; sprinkle with 1/2 cup nuts.
  • Beat next 5 ingredients in large bowl with whisk until blended. Stir in 1-1/2 cups COOL WHIP; spoon into crust.
  • Refrigerate 1 hour. Top with remaining COOL WHIP, caramel topping and nuts just before serving.

1-1/2 cups crushed gingersnap cookies (about 30 cookies)
1/4 cup butter, melted
Filling:
4 packages (8 ounces each) cream cheese, softened
1 cup packed brown sugar
2/3 cup sugar
1 can (15 ounces) solid-pack pumpkin
2 tablespoons all-purpose flour
2 teaspoons pumpkin pie spice
4 large eggs, lightly beaten
Topping:
4 ounces bittersweet chocolate, chopped
2 tablespoons butter
1/2 cup chopped pecans, toasted
1/2 cup caramel sundae syrup
Whipped cream, optional

Steps:

  • In a small bowl, combine cookie crumbs and butter. Press onto the bottom and 1 in. up the sides of a greased 10-in. springform pan. Place pan on a baking sheet. Bake at 325° for 8-10 minutes. Cool on a wire rack. , In a large bowl, beat cream cheese and sugars until smooth. Beat in the pumpkin, flour and spice. Add eggs; beat on low speed just until combined. Pour into crust. Return pan to baking sheet., Bake for 55-65 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove sides of pan., Just before serving, melt chocolate and butter in a microwave; stir until smooth. Top cheesecake with pecans, chocolate mixture, caramel syrup and if desired, whipped cream.

This is a very simple and delicious recipe. The combination of caramel, pecans, pumpkin, and a graham cracker crust brings the flavors together. Taste-wise I prefer to make a homemade crust, but a pre-made graham cracker crust can be substituted to reduce prep time. It is a staple in our family around the holidays and has won several cooking contests. I hope you enjoy it as much as we do! Store leftovers in the refrigerator.

1 ¼ cups finely crushed graham cracker crumbs
¼ cup white sugar
6 tablespoons butter, melted
¼ cup caramel topping
½ cup pecan pieces
1 cup cold milk
1 cup canned pumpkin
2 (4-serving size) packages instant vanilla pudding mix
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 (8 ounce) container whipped topping (such as Cool Whip®), thawed and divided
2 tablespoons pecan pieces
2 tablespoons caramel topping

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl until evenly moistened; press into the bottom and sides of a 9-inch pie pan.
  • Bake in the preheated oven until the crust is lightly browned and smells toasted, about 6 minutes. Remove from the oven and allow to cool.
  • Spread 1/4 cup caramel topping onto the cooled crust. Sprinkle 1/2 cup pecan pieces over the caramel topping.

40 vanilla wafers, divided
2 Tbsp. sugar
3 Tbsp. butter or margarine, melted
1/4 cup plus 2 Tbsp. caramel ice cream topping, divided
1/2 cup plus 2 Tbsp. pecan pieces, divided
1 cup cold milk
2 pkg. (4-serving size each) JELL-O Vanilla Flavor Instant Pudding
1 cup canned pumpkin
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided

Steps:

  • Reserve 16 of the wafers. Finely crush remaining 24 wafers; place in medium bowl. Add sugar and butter; mix well. Press onto bottom of 9-inch pie plate. Stand reserved wafers around edge of pie plate. Spread 1/4 cup caramel topping onto bottom of crust. Sprinkle with 1/2 cup pecans.

Steps:

  • Pour caramel topping onto bottom of pie crust; sprinkle with pecans.
