CINNAMON COOKIES
Steps:
- Preheat the oven to 350 degrees F.
- On a large piece of waxed paper, sift together the flour, baking soda, salt, cinnamon, cloves and ginger.
- Cream the shortening and 1 cup of the sugar in a stand mixer fitted with the paddle attachment. Add the flour mixture and mix to combine. Mix in the molasses and the egg. Cover the dough in plastic wrap and chill until firm, 1 hour.
- Roll the dough into 1-inch balls. Roll the dough balls in the remaining 1/2 cup sugar and place on an ungreased cookie sheet, spaced 1- to 1 1/2-inches apart.
- Bake for 20 minutes. Transfer the cookies to a wire rack to cool. Store in an airtight container.
OATMEAL CINNAMON COOKIES
My family loves these big old-fashioned cookies. They're crisp, yet still chewy in the center, and the cinnamon makes them a little different from typical oatmeal cookies.

- In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Combine the flour, baking soda, cinnamon, baking powder and salt; gradually add to creamed mixture and mix well. Stir in oats. , Shape into 1-1/2-in. balls. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Cool for 1 minute before removing to wire racks.

CHEWY CINNAMON COOKIES
These are yummy cinnamon cookies made with graham cracker crumbs. If you want a little variation, throw in a bag of butterscotch chips. My kids love them plain. I find it easiest to freeze the dough in logs, then slice and cook them as I want them. Enjoy!

- Preheat an oven to 350 degrees F (175 degrees C). Stir together graham cracker crumbs, flour, cinnamon, baking soda, and salt in a mixing bowl; set aside.
- Beat the butter, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Beat in the eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Mix in vanilla. Mix in the flour mixture. Scoop the dough out onto ungreased baking sheets by rounded spoonfuls.

Steps:
- Beat butter and brown sugar in a large bowl until fluffy.
- Add egg and corn syrup; mix well.
- Place 1 cup cinnamon chips in a microwave safe bowl. Microwave for 1 minute at 50% power; stir. If necessary, microwave at 50% power in 15 second increments, stirring after each heating, until chips are melted when stirred.
- Stir melted chips into butter mixture.
- Stir together flour, baking soda and salt; add to cinnamon chip mixture, beating just until blended.
- Cover and refrigerate for 1 hour or until firm enough to handle.
- Heat oven to 350* (300* convection oven).
- Shape dough into 1 inch balls (or #60 scoop); roll each ball into nuts, lightly pressing nuts into dough.
- Place dough 2 inches apart on ungreased cookie sheets. (Flatten cookies slightly if using convection oven.).
- Bake 8 minutes (5 minutes convection) or until edges are firm. Cool slightly; remove from sheets to wire rack. Cool completely.
- Prepare drizzle: Heat cinnamon chips and shortening in a medium microwave safe bowl. (Use same timing and heating method as above.).
- Drizzle evenly over cooled cookies.

- Heat oven to 350°F.
- Spray cookie sheet with nonstick cooking spray.
- Beat butter until creamy.
- Add brown sugar and 3 tablespoons granulated sugar; beat until blended.
- Add egg, baking soda, corn syrup and vanilla; beat well.
- Stir together flour and cocoa; beat into butter mixture.
- If batter becomes too stiff, use wooden spoon to stir in remaining flour.
- Cover; refrigerate about 30 minutes, if necessary, until batter is firm enough to shape.
- Shape dough into 1-inch balls.
- Combine 1/4 cup granulated sugar and cinnamon; roll balls in mixture.
- Place balls 2-inches apart on prepared cookie sheet.

CINNAMON COOKIES

- Beat the butter, muscovado sugar, caster sugar and 2 tsp cinnamon together with an electric whisk for 2-3 mins until well-combined. Add the egg, flour, baking powder and raisins, if using, and continue to beat until the mixture becomes a uniform dough. Roll tablespoons of the dough into balls between the palms your hands (you should have 12-15). Chill in the fridge for at least 2 hrs until firm, or overnight. The unbaked dough balls will keep in an airtight container in the freezer for up to three months (see tip, below).
- Heat the oven to 180C/160C fan/ gas 4 and line two large baking trays with baking parchment. Place the dough balls 3-4cm apart on the prepared baking trays to allow the mixture to spread without touching. Bake for 10-12 mins until lightly golden at the edges but still soft and gooey in the centre. Leave to cool completely on the baking trays.
- Mix the icing sugar with the remaining cinnamon, then dust over the cookies. Will keep in an airtight container for up to five days.
