MAPLE-OATMEAL COOKIES

Steps:
- Preheat oven to 350 degrees, with racks in upper and lower thirds. In a medium bowl, stir together oats, flour, salt, and baking soda. In a large bowl, using an electric mixer, beat butter and sugars on high until pale and fluffy, 3 minutes. Beat in maple syrup, egg, vanilla, and 1/4 cup water, scraping down bowl as needed. With mixer on low, beat in oat mixture in 2 additions until just combined.
- Drop dough in rounded teaspoons, 2 inches apart, onto parchment-lined baking sheets. Bake until edges are golden, about 11 minutes, rotating sheets halfway through. Let cookies cool on sheets until set, about 2 minutes, then transfer to wire racks and let cool completely. (Store cookies in an airtight container, up to 1 week.)

Chewy and delicious. Everyone that tries my oatmeal cookies gets hooked! I recreated this recipe from memory from my childhood. They are so good, they have a place in every woman's cookbook in my family.

- Preheat oven to 375 degrees F (190 degrees C).
- Beat brown sugar, shortening, milk, egg, and vanilla extract in a bowl until mixture is creamy. Stir oats, flour, baking soda, and salt into moist ingredients. Drop dough by spoonful onto ungreased baking sheets.
- Bake in the preheated oven until cookies are lightly golden brown, 8 to 10 minutes.

- In a large bowl, cream butter and sugar until light and fluffy. Beat in the egg, syrup and vanilla. Combine the oats, flour, baking soda and salt; gradually add to creamed mixture and mix well. Here's a recipe I found many years ago in an old Pillsbury Bake-Off Cookbook. These yummy cookies have a unique crispy-chewy texture and a delicious mapley flavor. My family loves them!

- Cream butter (a combination of half butter and half margarine works best) and sugars; add molasses, maple extract, and eggs; beat well.
- Combine flour, baking powder, cinnamon, and salt; add to dough; stir in oatmeal and crisp rice cereal.
- Drop heaping teaspoonfuls of dough onto greased baking sheets.
- Bake at 350 for 8-10 minutes until light golden-brown.
- Cool 2 minutes on baking sheets; remove cookies and cool completely on rack.
- Store cooled cookies in sealed container to preserve their chewy texture.

CHEWY MAPLE PECAN COOKIES

- Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
- In the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl with a hand mixer), cream the butter and brown sugar until light and fluffy, 3 to 4 minutes. With the mixer running on low speed, add the maple syrup in a slow, steady stream and mix to combine.
- Scrape the bowl well, then add the egg and mix on medium speed until the mixture is well combined. Beat in the vanilla.
- Add the flour, baking powder and fine salt to the mixer and pulse until it starts to combine, then scrape the bowl well and mix on low speed until uniformly combined. Add the pecans and mix until evenly incorporated.
- Scoop the dough into 2 tablespoon-size rounds on the prepared baking sheets, staggering the rows and leaving at least 1 1/2 inches between each cookie to allow room to spread. Sprinkle flaky sea salt on the surface of each cookie. Transfer to the oven and bake until the cookies are lightly golden around the edges, 15 to 18 minutes. Transfer to a cooling rack to cool before serving.
CHEWY MAPLE COOKIES
These are sooo good!They come out chewy and full of maple flavor.They taste kind of like maple pancakes.My kids loved them!Be sure to space them,they do spread and flatten out.I left out the coconut.They are so easy and quick to make too.
