Chicken Curry Stuffed Sweet Potatoes image

Use convenience ingredients, like cooked chicken (leftover or purchased) and store-bought curry sauce to whip up these easy loaded baked potatoes. We call for cauliflower in this recipe, but feel free to sub in whatever veggies you have on hand for a quick and easy dinner. You can also swap the sweet potatoes for russets.

4 medium sweet potatoes (about 8 ounces each)
½ cup Madras curry sauce
1 ½ cups chopped cooked cauliflower
8 ounces chopped cooked chicken, warmed
4 teaspoons chopped fresh cilantro

Steps:

  • Pierce potatoes all over with a fork. Microwave on Medium, turning once or twice, until soft, about 20 minutes. (Alternatively, bake potatoes at 425 degrees F until tender, 45 minutes to 1 hour.) Transfer to a clean cutting board and let cool slightly.
  • Holding them with a kitchen towel to protect your hands, make a lengthwise cut to open the potato, but don't cut all the way through. Pinch the ends to expose the flesh.
  • Top each potato with some curry sauce, cauliflower, chicken and cilantro. Serve warm.

Stuffed Chicken Breast in Curry Sauce over Roasted Potatoes and Cauliflower image

1 head cauliflower, separated into small florets
3 red potatoes, cubed
1/4 cup chopped fresh chervil leaves
1/4 cup raisins
2 tablespoons olive oil
Salt and freshly ground black pepper
1 cup red grapes
1 cup walnuts
3/4 cup dates
4 boneless, skinless chicken breast halves
2 cups all-purpose flour
5 eggs, lightly whisked
2 cups bread crumbs
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons kosher salt
2 tablespoons canola oil
2 tablespoons butter
1/4 cup chopped yellow onion
2 tablespoons curry powder
2 tablespoons all-purpose flour
2 cups chicken stock

Steps:

  • Potatoes and cauliflower:
  • Preheat the oven to 350 degrees F.
  • On a large baking sheet toss together the cauliflower, potatoes, chervil, raisins, olive oil and salt and pepper, to taste. Arrange in a single layer on the baking sheet and roast until the potatoes are tender, about 25 minutes. Remove the potatoes to a bowl and set aside.
  • Chicken: In a blender or food processor, combine the grapes, walnuts and dates and blend until smooth.
  • Put the chicken breasts between 2 sheets of plastic wrap and, using a meat mallet, pound the chicken until evenly flat and thin. Remove the top sheet of plastic. Season the chicken with salt and pepper, to taste. Divide the grape mixture between the chicken breasts, topping each piece with about 2 tablespoons of the filling. Using the plastic as your guide, roll up the chicken around the filling.
  • Put the flour, eggs and bread crumbs in separate dishes. Season the bread crumbs with the garlic powder, onion powder and salt. Dip the chicken rolls into the flour, coating completely, then into the egg and finally into the bread crumbs. Chicken should be coated completely with each step of the breading process.
  • Heat 2 tablespoons of oil in a large oven-proof skillet over medium-high heat. Pan fry the chicken until golden brown on all sides, turning after a few minutes on each side. Transfer the pan to the oven and bake until cooked through, about 15 minutes.
  • Curry sauce: Melt the butter in a skillet over medium heat, then add the onion and curry powder. Cook for 2 minutes then whisk in the flour and cook for 1 minute. Whisk in the chicken stock and bring to a simmer. Whisk until the sauce is thickened and smooth.
  • Remove the chicken from the oven to a cutting board and slice. Spoon a bed of potatoes and cauliflower on each serving plate and top with curry sauce.

1 lb ground chicken
1/2 cup diced carrots
1/4 cup sliced green onion
2 tablespoons vegetable oil, divided
1 tablespoon kosher salt
1/2 cup diced roasted piquillo peppers
2 cloves garlic minced
2 tablespoons fresh ginger, chopped
1/2 cup chicken stock
1 cup coconut milk
1/4 cup tomato paste
1/2 teaspoon turmeric
1/2 teaspoon ground coriander
1/4 teaspoon cumin
1/4 teaspoon smoked paprika
1/2 teaspoon sea salt

Steps:

  • Pierce potatoes several times with a fork. Rub skin lightly with oil. Sprinkle with kosher salt, Bake at 400 degrees until skin is crisp and potatoes seem soft when squeezed. (about 45 to 50 minutes). Pierce the length of the cooked potato with a fork. Squeeze to pop open.
  • While potatoes bake, prepare curry chicken. In a large skillet, add remaining oil, chicken, carrots, green onions, garlic and ginger. Cook over medium heat until chicken browns and vegetables are crisp tender.
  • In a small bowl, mix together turmeric, coriander, cumin, paprika and sea salt.
  • In a medium bowl, whisk together stock, coconut milk and tomato paste. Add dry spices and roasted peppers. Pour mixture over chicken. Simmer until thoroughly cooked. (about 10 minutes)
  • Spoon mixture over potatoes. Serve.

1 tablespoon cumin
1 tablespoon turmeric

1 tablespoon grapeseed oil
1 large yellow onion, diced
1 jalapeno pepper, seeded and diced

1 pound baby Yukon Gold potatoes, cut into 1-inch dice
One 28-ounce can diced tomatoes

Steps:

  • For the marinade: In a resealable plastic bag, mix together the cream, lime juice, cardamom, cumin, turmeric, black pepper and salt. Add the chicken and toss to coat. Marinate in the refrigerator for a minimum of 2 hours and up to 4 hours.
  • For the curry: Heat the oil in a large skillet over medium heat. Add the onions, jalapenos and garlic and cook until soft, 8 to 10 minutes. Add the cumin, ginger and salt and cook until fragrant, 1 minute. Add the potatoes, tomatoes, cinnamon, tomato paste and chicken stock; stir to combine. Raise the heat to high and bring the mixture to a boil, then lower the heat and simmer for 5 minutes. Add the chicken and all of the marinade. Cook, covered, until the potatoes are easily pierced, 20 to 25 minutes.
  • Stir in the coconut milk and cook until the sauce has thickened slightly, another 10 minutes. Sprinkle with cilantro. Taste for salt and pepper and add more as needed.

4 medium baking potatoes
1 cup chicken broth
2 tablespoons all-purpose flour
1/2 teaspoon curry powder
1/4 teaspoon onion salt
1 tablespoon oil
2 cups fresh broccoli florets or 2 cups frozen chopped broccoli
1/4 cup chopped red bell pepper
1 cup sour cream
2 teaspoons lemon juice
1 cup chopped cooked chicken
1/2 cup shredded cheddar cheese

Steps:

  • Heat oven to 400°F Pierce potatoes with fork. Bake at 400 F for 45 to 55 minutes, or until tender.
  • Meanwhile, in a small bowl using wire whisk, blend broth, flour, curry powder and onion salt. Heat oil in large skillet over medium-high heat until hot. Gradually add frozen broccoli and bell pepper; cook and stir 5 to 7 minutes, or until broccoli is crisp-tender. Reduce heat to medium.
  • Gradually stir in chicken broth mixture; cook and stir until sauce is thickened and bubbly. Remove from heat. Stir in sour cream, lemon juice and chicken. Cook over low heat 2 minutes, or until thoroughly heated.
  • To serve, cut potatoes in half lengthwise, cutting to but not through bottom of potatoes. Mash slightly with fork. Place potatoes on 4 individuals plates; spoon chicken mixture over hot potatoes. Sprinkle with cheese.

  • In 2-quart microwave-safe casserole, cook broccoli with bell peppers as directed on broccoli package; drain.
  • In 4-cup microwave-safe measuring cup using wire whisk, blend broth, curry powder and onion salt. Microwave on HIGH for 3 1/2 to 4 1/2 minutes, or until mixture boils and thickens, stirring once half way through cooking. Stir in sour cream, leamon juice and chicken. 1 pound Italian sausage links
1 cup finely chopped onion
1 tablespoon butter

This recipe is sufficient for 2 chickens, stuffed with a curried rice stuffing and cooked in a tasty curry sauce. This dish is even better when prepared a day ahead as the flavours mix together and will be even tastier heated up the next day.

2 whole chickens, appox. 1 5 kg in weight
90 g butter
2 small onions, chopped
25 g mild curry powder (to taste)
30 ml flour
1 liter chicken stock
30 ml soft brown sugar
30 ml apricot chutney
5 ml salt
1/2 lemon, juice of
200 g uncooked rice
50 g butter
2 small onions, chopped
20 ml mild curry powder
5 ml salt

Steps:

  • Rinse chickens in cold water and dry with paper towel.
  • Melt butter for curry sauce in a pot and braise onions for 5 minutes.
  • Add curry powder and cook a further 5 minutes.
  • Add the flour and then gradually add the chicken stock.
  • Bring the mixture to the boil and add the sugar, chutney, salt and lemon juice.
  • Cover and cook the sauce for half an hour on very low heat.
  • Boil the rice for the filling for 5 minutes and drain.
  • Braise the onions in the butter until soft, adding curry powder and rice, then salt.
  • Put this filling into the chicken cavity, stuffing the neck cavity as well. Do not overstuff, as the rice will expand during cooking. Close up the cavity with toothpicks.
  • Place the chickens in a casserole dish with a lid.
  • Pour the curry sauce through a strainer or sieve over the chickens and cover.
  • Bake in a 160 C oven for 3 to 4 hours. No need to pre- heat the oven. Baste the chickens with the sauce during cooking.
  • Note: This is rustic food, perfect family meal on a cold winters day, served with extra white rice (as the stuffing is not alot, but worth making as the taste is beautiful)-
  • I do not bother to strain the sauce, and serve extra sauce in a jug on the side.
  • If I am in a hurry I do not make the rice stuffing - cook at 180 C for about 2 hours.

There's nothing more comforting than chicken and potatoes, and this recipe is no exception. Getting its flavor and heat from a combination of mild Jamaican curry powder and Scotch bonnet pepper, it's not as hot as some Indian or Thai curries. Jamaican curry powder tends to be heavy on turmeric and less on spice, and this recipe uses just one Scotch bonnet pepper, which is kept whole but punctured to gently release flavor. The result is more warming than spicy. Eat this one-pot recipe by itself as a kind of stew, or over rice, letting all the flavors meld together.

3 pounds bone-in, skin-on chicken legs and thighs, skin removed
1 tablespoon garlic powder
Kosher salt and black pepper
2 tablespoons olive oil, plus more as needed
1 large onion, sliced
4 garlic cloves, minced
2 tablespoons Jamaican hot curry powder, such as Jamaican Choice or Grace, plus more as needed
1 Scotch bonnet or habanero pepper
4 medium Yukon Gold potatoes, washed and quartered
1 to 2 quarts chicken stock (reduce or add liquid depending on pot size)
1 dried bay leaf
2 fresh thyme sprigs
1/4 cup cornstarch
White rice, for serving

Steps:

  • Place chicken in a large bowl. Season chicken with the garlic powder, 2 teaspoons salt and 1/2 teaspoon pepper, making sure it's evenly coated. Let come to room temperature.
  • Heat a deep Dutch oven or heavy pan over medium-high. Drizzle in the olive oil. Add sliced onions, season with salt and pepper. Using a rubber spatula or wooden spoon, stir to combine, and cook until soft and fragrant, 3 to 4 minutes. Add garlic, stirring to keep the garlic from scorching, and cook for 30 seconds or until tender. Using a pair of tongs or a spoon, remove onions and garlic from the pan; set aside in a bowl.
  • If needed, add more oil to coat the bottom of the pan. Reduce the heat to medium. Add the room-temperature chicken to the pan, and sear chicken on both sides, in batches if necessary, until golden brown, about 7 to 8 minutes total.
  • Sprinkle curry powder over and around chicken. Let the spices bloom and toast until fragrant, about 2 minutes.
  • Add reserved onions and garlic to the pan. Using a paring knife, pierce the Scotch bonnet pepper. Add to the pan. Add potatoes, and stir to evenly coat chicken and potatoes.
  • Pour in chicken stock to nearly cover the chicken. Add the bay leaf and thyme sprigs. Bring to a simmer. Remove Scotch bonnet pepper. Cover pot and cook for 30 minutes, or until chicken is tender and falling off the bone. Taste and adjust the curry powder, salt and pepper as needed.
  • In a small bowl, combine cornstarch with 1/4 cup water to form a slurry. (The chicken curry can be eaten as is, like a soup, or slurry can be added to thicken the sauce to a gravy-like consistency.) Add 1 tablespoon of the slurry, and bring to a boil to thicken, adding more slurry to reach desired consistency. Retrieve bay leaf and thyme stems and discard. Serve with rice.
