I had some leftover beer in the house which had gone flat. Had chicken breasts in the house so decided to try and combine the two.

2 teaspoons oil (I used extra virgin olive oil)
4 boneless chicken breast halves
1/4 teaspoon fresh ground black pepper
1/8 teaspoon salt
3 tablespoons thinly sliced shallots
1/2 cup beer
2 tablespoons low sodium soy sauce
1 tablespoon whole grain Dijon mustard
1/4 cup honey
2 tablespoons fresh cilantro leaves

Steps:

  • 1. Heat a pan over medium-high heat. Add oil to pan; swirl to coat.
  • 2. Sprinkle chicken evenly with pepper and salt. Add chicken to pan; sauté 6 minutes on each side or until done.
  • 3. Remove chicken from pan; keep warm.
  • 4. Add shallots to the same pan and cook for 1 minute or until translucent.
  • 5. Combine beer, soy sauce, dijon mustard and honey in a small bowl and stir with a whisk.
  • 6. Add beer mixture to pan; bring to a boil, scraping pan to loosen browned bits.
  • 7. Cook 3 minutes or until liquid is reduced to 1/2 cup.
  • 8. Return chicken to pan; turn to coat with sauce. Sprinkle evenly with cilantro.

¼ cup grainy mustard
2 tablespoons honey
3 (6 ounce) skinless, boneless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
½ medium white onion, chopped
2 cloves garlic, minced
4 tablespoons Dijon & honey (liquid) LF
salt and ground black pepper to taste
1 tablespoon water

Steps:

  • Mix grainy mustard and honey together in a ceramic or glass bowl. Add chicken pieces and massage with marinade. Let sit to absorb flavors, about 30 minutes.
  • Heat oil in a cast iron skillet over medium-high heat. Add onion and saute until soft and translucent, about 5 minutes. Add garlic and 2 tablespoons honey Dijon mustard. Season with salt and pepper. Reduce heat to medium and saute until onion and garlic are browned, 3 to 4 minutes. If necessary, add 1 tablespoon of water during this process.
  • Add chicken to the skillet and remaining 2 tablespoons honey Dijon. Mix well and cover. Cook, stirring occasionally, until chicken is no longer pink in the centers, 7 to 10 minutes.
  • Uncover, increase heat, and reduce sauce until creamy and thick, 3 to 5 more minutes.

2 tablespoons olive oil
2 tablespoons honey
2 tablespoons mustard (see note at end of directions)
2 teaspoons orange marmalade
1/2 teaspoon paprika
1/8 teaspoon chili pepper flakes
2 garlic cloves, minced
1/2 cup chicken stock (cube is fine)
2 -3 tablespoons olive oil
4 boneless skinless chicken breasts
1/2 cup flour
salt and pepper

Steps:

  • In small bowl, mix olive oil, honey, mustard*, orange marmalade, paprika, pepper flakes, garlic and stock. If you want, use a hand blender to get all the ingredients combined well. Set aside.
  • Heat olive oil in large skillet over medium-high heat. If breasts are big, cut in half horizontally. Season flour with salt and pepper, and dredge chicken in flour. Fry in pan about 2-3 minutes each side.
  • Pour sauce around chicken and cover. Lower heat to medium and simmer for about 10-12 minutes.
  • Remove chicken to plate and pour sauce over top and serve.
  • *NOTE* I used a mustard called Bone Suckin' Sweet Hot Mustard which I bought at a local kitchenware store (Lakeland Ltd.) here in the UK. It contains ingredients such as molasses, brown sugar and jalapeno peppers. You can use a similar type of mustard if you can find one or just use dijon. However, I think that a bold flavored mustard like the one I used is what really brought this dish together. If you try this recipe and review it, please let others know what type of mustard you used.

  • Mix together the butter, mustard, honey (fill the empty mustard jar with honey) paprika and lemon juice. Season and taste. You may need more lemon juice. It may tasta a little spicy, depending on what mustard you use but remember that will calm down a lot once it is cooked. In an ovenproof casserole, place the chicken thighs skin side down and pour over half the sauce. cook for 15 minutes in a moderate oven. Remove from the oven and turn the thighs over. pour over the remainder of the sauce and sprinkle each thigh with some poppy seeds. Place back in the oven for a further 10 mins or until the thighs are cooked through. Great served with creamy mashed potatoes and seasonal veg. Any remaining sauce can be spooned over you chicken and potatoes.
