SPICY STEAK MARINADE

Spicy Steak Marinade image

My family loves this slightly spicy marinade, we've even cooked it down and added tomato sauce and made it into a type of basting/barbeque sauce. Place steaks in a resealable plastic bag and pour marinade over the top. Allow to rest for at least 2 hours, preferably overnight for best flavor and tenderness.

SPICY KOREAN STEAK TACOS WITH KIMCHI

Spicy Korean Steak Tacos with Kimchi image

Salting the steaks helps to tenderize the beef and adds to its flavor. Turning the steaks ensures they cook evenly and caramelize on the outside.

Provided by Donna Hay

Categories     HarperCollins     Taco     Steak     Dinner

Yield Makes 16 tacos

Number Of Ingredients 17

For the steak:
2 (1 1/2-inch/4-cm-thick) rump steaks or boneless sirloin steaks (700g)
1 tablespoon extra virgin olive oil
2 cups (600g) coarse salt
Cracked black pepper
For the Spicy Ginger Sauce:
2 tablespoons oyster sauce
1 tablespoon Chinese cooking wine (Shaoxing)
1 tablespoon finely grated ginger
1 teaspoon dried chile flakes
1 tablespoon finely grated palm sugar or brown sugar
For the tacos:
16 small flour tortillas, lightly toasted
1/2 cup (150g) Japanese mayonnaise
2 cups (160g) finely shredded daikon
1 cup (200g) store-bought kimchi
1/2 cup coriander (cilantro) leaves

Steps:

  • Rub the steaks with the oil. Spread half the rock salt over a tray, top with the steaks and cover with the remaining salt. Set aside for 20 minutes.
  • Meanwhile make the spicy ginger sauce: Place the oyster sauce, cooking wine, ginger, chile flakes and sugar in a small bowl and mix until the sugar has dissolved.
  • Wipe all the salt from the steaks, using paper towel, and sprinkle with pepper.
  • Preheat a grill pan or barbecue over high heat.
  • Cook the steaks, turning every 1 minute, for 2-3 minutes each side or until cooked to your liking. In the last 30 seconds of cooking time, brush the steaks with the spicy ginger sauce and turn to caramelize both sides.
  • Cover gently with aluminum foil and allow to rest for 5 minutes. Thinly slice the steaks. Spread the tortillas with the mayonnaise. Top with the daikon, steak, kimchi and cilantro to serve.

SIRLOIN WITH CREAMY PEPPER SAUCE

Sirloin With Creamy Pepper Sauce image

This is based on a recipe from the local Sunday paper with a bit of adaption on our part. I've allowed a little extra time on the preparation if cracking your own peppers (I use a grinder on pulse for a rough cracked pepper).

Provided by ImPat

Categories     Steak

Time 20m

Yield 4 serving(s)

Number Of Ingredients 6

800 g sirloin steaks (4 x 200 gram steaks)
3 tablespoons black pepper (cracked)
1 teaspoon sea salt
3/4 cup cream (single or pouring)
2 tablespoons sour cream
2 tablespoons olive oil (for brushing)

Steps:

  • Mix pepper and salt on a plate.
  • Brush both sides of steaks with olive oil.
  • Press steaks into pepper and salt mixture (both sides).
  • Heat a large non-stick frypan over high heat. Place steaks in frypan and cook 3 minutes per side for medium-rare or until your liking (about 5 minutes per side got it well done).
  • Remove steaks from the pan and rest for 5 minutes. I put them in a 50 degree celsius oven while making sauce.
  • To make the cream sauce, add the cream and sour cream to the pan stirring well to pick up all the peppers for about 2 to 3 minutes or until thickened.
  • Serve cream sauce over the steaks.

kosher salt
3 garlic cloves, minced
2 plum tomatoes, chopped
1 tablespoon fresh lime juice
1 teaspoon ground dried ancho chile powder
1 1/2 lbs sirloin steaks

Grilled Sirloin Steaks with Pepper and Caper Salsa image

Provided by Giada De Laurentiis

Categories     main-dish

Time 3h15m

Yield 4 to 6 servings

Number Of Ingredients 12

2 red bell peppers
2 yellow bell peppers
1 tablespoon water
3 tablespoons extra-virgin olive oil
3 tablespoons balsamic vinegar
1/4 cup capers, rinsed and drained
3 tablespoons chopped fresh flat-leaf parsley
Kosher salt and freshly ground black pepper
4 (8-ounce) boneless sirloin steaks, about 1-inch thick
2 teaspoons smoked salt or kosher salt
2 teaspoons herbs de Provence
Olive oil, for drizzling

Steps:

  • Salsa: Put a grill pan over medium-high heat or preheat a gas or charcoal grill. Grill the peppers on all sides until charred, about 10 minutes. Put them in a bowl with 1 tablespoon water. Cover the bowl with a lid or plastic wrap for 30 minutes. Remove the charred skin, core and seeds from the peppers. Cut the flesh into 1/4-inch thick strips and put them in a small bowl. In a separate bowl whisk together the olive oil, balsamic vinegar, capers, and parsley until smooth. Season with salt and pepper, to taste. Pour the mixture over the peppers and toss until coated. Refrigerate for at least 2 hours, (can be made 1 day in advance).
  • Steaks: Put a grill pan over medium-high heat or preheat a gas or charcoal grill. Season the steaks on both sides with the smoked salt and herbs de Provence. Drizzle with olive oil and grill for 4 to 6 minutes each side for medium-rare. Remove the steaks from the grill pan to a cutting board and let sit for 5 minutes before serving.
  • Thinly slice the steaks and arrange on serving plates. Top with the salsa and serve.

SIRLOIN STEAK WITH CRUSHED PEPPERCORNS

Sirloin Steak With Crushed Peppercorns image

Provided by Pierre Franey

Categories     dinner, easy, quick, main course

Time 15m

Yield 4 servings

Number Of Ingredients 11

4 boneless shell steaks, about 8 ounces each, with the excess fat removed
Salt to taste
4 tablespoons cracked peppercorns, white or black
1 tablespoon vegetable oil
2 tablespoons finely chopped shallots
1/2 cup dry red wine
1/2 cup beef broth, fresh or canned
2 teaspoons tomato paste
2 sprigs fresh thyme or 1/2 teaspoon dried
2 tablespoons butter
2 tablespoons finely chopped parsley

Steps:

  • Sprinkle the steaks with salt.
  • Use a mallet or meat pounder to crush the peppercorns, but not too fine. Sprinkle the peppercorns evenly over the steaks on both sides. Press down with your hands to help the peppercorns adhere to the meat.
  • Heat the oil in a cast-iron skillet large enough to hold the steaks in one layer. When the skillet is hot and almost smoking, add the steaks, cook about 3 minutes until browned, then turn. Cook about 2 to 3 minutes more for medium rare. Remove to a warm platter.
  • Pour the fat out of the skillet, add the shallots and cook, stirring, until they are wilted. Do not brown. Add the wine, broth, tomato paste and thyme. Reduce to half a cup. Add any liquid that may have accumulated around the steaks. Bring to a simmer. Remove from heat and swirl in the butter.
  • Remove the thyme sprigs and pour the sauce over the steaks. Sprinkle with parsley.
