- Mix mango, tomatoes, onion, jalapeno pepper, cilantro, and juice of 1 lime in a large bowl; set aside.
- Whisk olive oil, 1/4 cup lime juice, sugar, chipotle chile powder, cumin, and garlic powder together in a bowl; set aside.
- Toss spinach leaves, broccoli coleslaw mix, chicken, red, green, and yellow bell peppers, cranberries, and pecans together in a large bowl.

CHICKEN, MANGO & JICAMA SALAD W TEQUILA-LIME VINAIGRETTE
That name is a mouthful, I know! But a tasty mouthful. If you've never tried jicama, here is your chance! This a bit time consuming but you can easily make the dressing ahead of time. You can also do the tortilla strips ahead and store in a airtight container, or omit them altogether and use store-bought tortilla chips.

Steps:
- For vinaigrette:.
- Combine all ingredients and whisk until thoroughly combined. Chill until ready to use.
- For Tortilla strips:.
- Place strips in large bowl and spray with cooking spray, tossing to coat.
- Combine seasonings and sprinkle over strips, tossing to coat.
- Fry in oil until lightly browned or spread over cookie sheet and bake at 350 for 8 minutes. They will get crispy as they cool.
- For Chicken:.
- Combine marinade ingredients in large zip-loc bag.
- Add chicken and marinate at least 2 hrs, turning bag occasionally.
- Preheat grill.
- Remove chicken from bag and discard marinade.
- Sprinkle chicken with 1/2 tsp salt.
- Grill 5 minutes on each side or until done.
- Cut meat into 1/2" slices.
- For Salad:.
- Combine jicama, mango and greens in large bowl.
- Pour vinaigrette over salad and toss to coat.
- Divide into servings and top with chicken and tortilla strips.
- Whew! Sit down and enjoy it all with a frozen margarita that someone else fixed!

- Add all of the ingredients for the tequila-lime chicken marinade to a small blender and blend until completely smooth. Place chicken breasts in a zip-lock bag along with the marinade. Marinate at least 1 hour, up to 4 hours.
- Brush of your grill with a wire brush and preheat it to medium-high (about 350 to 400 degrees F). Place chicken breasts on the grate directly over the burners and sear for 2 to 4 minutes per side, or until grill marks appear. Continue cooking and flipping every 1 to 2 minutes, until chicken is cooked through and reaches an internal temperature of 155 to 160 degrees F. Remove chicken from the grill and allow it to rest on a cutting board - the chicken will continue to cook as it rests and the internal temperature should rise to 165 degrees F.
- While the chicken is resting, prepare the salad. Whisk (or blend) together the ingredients for the tequila-lime vinaigrette, and set aside until ready to use.
- Divide the ingredients for the salad among 2 to 4 bowls and drizzle in desired amount of tequila-lime vinaigrette. Toss until everything is coated. Serve salad with chopped grilled chicken.
