One of my favorite recipes, this chicken with a sherry mushroom sauce is tender and loaded with rich flavors. Plus it comes together in under an hour, with just 20 minutes of active preparation time.

Number Of Ingredients 8

4 Chicken Breasts
Salt and Pepper
2 tablespoons Butter
2 cloves of Garlic (crushed or chopped)
8 ounces Sliced Mushrooms (I like baby bella)
1 cup Dry Sherry
1/3 cup Heavy Cream
1/2 teaspoon Thyme

Steps:

  • Heat your oven to 350 degrees.
  • Melt 1 tablespoon of butter in a large skillet over medium-high heat. Generously salt and pepper both sides of the chicken breasts. Once the butter has melted, add the chicken to the skillet. Then add 1/4 cup of sherry. Cook the chicken for 3 minutes per side, until browned. Then remove the chicken from the skillet and place it on a plate while you work on the sauce.
  • Melt another tablespoon of butter in the same skillet you just used to cook the chicken. Add the garlic and stir, scraping up any brown bits. After a minute add the mushrooms. Generously salt and pepper and toss until the mushrooms are evenly coated with butter. Cook for 2 minutes. Then add the remaining sherry. Let the mushrooms simmer for another 4 minutes. Then stir in the cream and thyme. Let the sauce reduce for 5 minutes then add the chicken back to the skillet. Place the skillet in the oven for 30 minutes so that the chicken can finish cooking. (Make sure you are using an oven-safe skillet!)
  • After 30 minutes in the oven the chicken should be done - serve it with pasta or rice pilaf. Spoon the sauce over the top.

1 (10 ounce) can no-salt-added chicken broth
2 tablespoons all-purpose flour
1/8 teaspoon salt
1/4 teaspoon pepper
4 (4 ounce) boneless skinless chicken breast halves
vegetable oil cooking spray
1 tablespoon margarine, melted
2 cups sliced fresh mushrooms
2 tablespoons minced shallots
1/4 cup dry sherry or 1/4 cup madeira wine
1 tablespoon chopped fresh parsley

Steps:

  • Place chicken broth in a small saucepan, bring to a boil over high heat, and cook 5 minutes or until reduced to 1 cup; set aside.
  • Combine flour, salt and pepper, sprinkle over chicken.
  • Coat a large frypan with cooking spray and place over medium high heat until hot.
  • Add chicken, cook 5 minutes on each side or until browned.
  • Remove chicken from frypan, and set aside.
  • Wipe drippings from frypan with a paper towel.
  • Add margarine, mushrooms and shallots to frypan, cook over medium high heat until mushrooms are lightly browned, stirring constantly.
  • Add sherry, and bring to a boil, add broth and cook 7 minutes or until sauce is reduced to 1 1/4 cups.
  • Return chicken to frypan, reduce heat, cover and simmer 10 minutes or until chicken is done.
  • Remove chicken to a serving platter and keep warm.
  • Cook sauce over high heat about 5 minutes or until reduced to 1 cup, stir in parsley.
  • Serve sherry mushroom sauce with chicken breasts.

1/2 cup fat-free milk
4 boneless skinless chicken breast halves (4 ounces each)
1 tablespoon olive oil

1/2 medium onion, thinly sliced
1/4 cup sherry or chicken broth
1/2 teaspoon salt

Steps:

  • Mix cornstarch and milk until smooth. Pound chicken with a meat mallet to 1/4-in. thickness., In a large nonstick skillet, heat oil over medium heat; cook chicken until no longer pink, 5-6 minutes per side. 3 -4 boneless skinless chicken breasts, cut into 1/2 inch strips (about 2-2 1/2 lbs, I find that 3 breasts adequately feeds my family)
1 tablespoon all-purpose flour
2 tablespoons olive oil
1 onion, halved lengthwise and sliced thin crosswise
2 garlic cloves, minced
1/2 lb mushroom, sliced thin
3 tablespoons medium-dry sherry
1 tablespoon fresh lemon juice
1/3 cup cream
1/2 cup chicken broth
cooked noodles
1 tablespoon minced fresh parsley leaves

Steps:

  • Pat chicken dry and toss with flour and season to taste.
  • In a large skillet, heat 1 tblsp of oil over high heat until hot but not smoking; brown chicken and transfer to a bowl.
  • Heat remaining tblsp of oil until hot but not smoking and saute onions, garlic and mushrooms, stirring, for 2-3 minutes, or until golden.
  • Add Sherry and lemon juice and deglaze skillet, stirring and scraping up brown bits.
  • Stir in chicken, cream and broth. Taste and adjust seasoning.
  • Bring to a boil and boil until thickened.
  • Arrange noodles on a platter, spoon chicken and sauce over and sprinkle with parsley.

3/4 lb boneless skinless chicken breast (cut into thin 3-inch medallions)
salt and pepper (to taste)
1/2 cup all-purpose flour (to bread as needed)
3 tablespoons butter
1 (10 ounce) package white mushrooms, sliced
1/4 cup red onion, finely minced
1 garlic clove, minced
1/2 cup sweet sherry
1 cup prepared beef gravy (use mix or your favorite recipe)
2 tablespoons fresh chives, minced

Steps:

  • Season the chicken with salt and pepper, and dust with flour. Shake off any excess.
  • Heat the half butter in a large skillet on medium-high until it stops bubbling.
  • Add the chicken and cook for about 1 minute on each side until light golden.
  • Transfer the chicken to a plate and keep warm.
  • Without cleaning the pan (unless you prefer to do so, but not cleaning will add extra flavor to sauce) add the remaining butter, and heat on medium-high until it stops bubbling.
  • Add the mushrooms, onion, and garlic. Sauté until the water released from the mushrooms evaporates.
  • Remove pan from fire.
  • Add half of the sherry, return to fire and boil for 1 minute.
  • Add the gravy, and bring to a simmer.
  • Return the chicken to the skillet along with the remaining sherry and the chives.
  • Cook for about 3 minutes to heat through and serve.

1 tablespoon plus 1 teaspoon olive oil
1/2 cup oyster or shiitake mushrooms, trimmed and roughly chopped
1/4 cup sliced shallots
2 teaspoons honey
2 tablespoons sherry vinegar or good-quality wine vinegar
1/3 cup dry fino or oloroso sherry (do not use cream sherry)
1 cup meat, chicken or vegetable stock
4 pieces boneless, skinless chicken breast, 1 to 1 1/2 pounds
Salt and black pepper to taste

Steps:

  • Place a 10-inch skillet over medium-high heat for a minute or two. Add the tablespoon of olive oil, then mushrooms and shallots, and turn heat to high. Cook, stirring occasionally, until mushrooms brown on edges, about 5 minutes.
  • Add honey, and stir until it evaporates, less than a minute. Add vinegar, and cook, stirring occasionally, until mixture is dry, about 2 minutes. Add sherry, and cook, stirring once or twice, until mixture is syrupy and nearly dry, about 5 minutes. Add stock, and cook, stirring once or twice, until mixture thickens slightly, about 5 minutes. Reduce heat to medium low; keep warm.
  • After adding stock to sauce, sprinkle chicken with salt and pepper and grill, broil or saute.
  • When chicken is done, season sauce with salt and pepper and strain if you like; stir in remaining olive oil. Serve chicken with sauce spooned over it.

3 lbs chicken pieces, your choice of which parts
1/2 cup butter
1 (10 3/4 ounce) can cream of mushroom soup
1 cup sherry wine
seasoned flour (for dredging)
salt

Steps:

  • Preheat oven to 375 degrees.
  • Melt butter in a glass baking dish.
  • Season flour with salt and pepper.
  • Wash chicken pieces and pat dry with paper towel.
  • Dredge chicken pieces through flour to coat and place skin side down in the pan with the melted butter.
  • Bake in preheated oven for 30 minutes.
  • Meanwhile, Whisk together soup and sherry until smooth; set aside.
  • At the end of the half hour, turn chicken pieces over and pour in the sherry mushroom sauce.
  • Bake an additional 30 minutes or until chicken is done.
  • Can be served with noodles if you like.
  • Note: for a lower calorie meal, I have used boneless skinless chicken breasts which I marinated in the sherry mushroom mixture overnight. Then I baked the chicken and sauce in a glass pan in a 350 degree oven for about 45 minutes. Do not overbake.

This was originally a recipe for Beef Tenderloin with Red Wine Reduction that I converted for my daughter who didn't like beef at the time. I serve it with Rissoto and Grilled Asparagus and Carrots. It is a nice easy dinner for 2 on a work night when you don't have a lot of time or energy, but can be multiplied for dinner parties when you want the compliments also without expending a lot of time or energy.

2 boneless skinless chicken breasts
2 teaspoons coarse salt
2 teaspoons black pepper
2 teaspoons garlic powder
1/2 teaspoon tarragon
1 small onion, diced
3/4 cup chicken broth, divided use
1 cup white wine
2 tablespoons unsalted butter
1 pinch salt and pepper, if needed

Steps:

  • Preheat oven to 500 degrees.
  • Combine the salt, pepper, and garlic powder in a zip closure bag.
  • Very lightly oil the chicken with olive oil.
  • Sprinkle the mixture liberally over all sides of the chicken and press into the meat.
  • Heat 1 tablespoon olive oil in a heavy ovenproof skillet or roasting pan over medium high heat.
  • Sear the chicken for a minute or so on all sides, sprinkle with Tarragon.
  • Add ¼ cup of chicken broth to the skillet (to prevent smoking in the oven and keep meat moist).
  • Transfer skillet to preheated oven and roast chicken for about 8 to 10 minutes.
  • Remove skillet from oven; transfer chicken to a cutting board, cover with aluminum foil and allow meat to rest. You can prepare up to this point and hold the meat under the foil for 35- 45 minutes if needed.
  • Do not wash skillet or discard the roasting juices and bits. With skillet still hot, add the chopped onion and cook for a minute or so. Add ½ cup chicken broth to the skillet, scraping all the caramelized juices and bits with a spoon.
  • Add the wine and bring to a boil to reduce the volume of the sauce by about half.
  • If holding the final preparation, stop at this point, cover skillet, and turn heat off.
  • Just before serving, slice the chicken into ¾" to 1" medallions.
  • Return skillet to medium high heat, add about 2 tablespoons unsalted butter to the sauce and allow it to melt, taste and if needed adjust with a pinch or salt or pepper.
  • Return the medallions to the hot pan and gently warm them in the sauce until completely cooked.
  • Remove the medallions to warmed platter or serving plate, pour sauce over them, and serve.
