CHICKEN & CHORIZO PAELLA
Try swapping traditional seafood paella for a chicken and chorizo version - a hearty family supper for four

Steps:
- Heat the olive oil in a deep frying pan over a high heat. Brown the chicken all over - don't cook completely. Once browned, transfer to a plate.
- Reduce the heat to low, add the onions and cook slowly until softened, about 10 mins. Add the garlic, stir for 1 min, then toss in the chorizo and fry until it releases its oils.
- Stir in the spices, then tip in the rice. Stir to coat the rice in the oils and spices for about 2 mins, then pour in the stock. Bring to the boil, return the chicken to the pan and simmer for about 20 mins, stirring occasionally.
- Add the peas to the pan and simmer for a further 5 mins until the rice is cooked and the chicken is tender. Season well and serve with the lemon and parsley.

This is a very wonderful and tasty chicken and rice dish, everything is cooked in one skillet, so it is quite easy to make.

Steps:
- In a large deep non-stick skillet, or a paella pan with cover, warm olive oil over medium-high heat.
- Season the chicken with salt and pepper on all sides.
- Add the chicken, and brown on all sides.
- Remove chicken; set aside.
- Add in the onion and garlic, saute until translucent.
- Stir in the rice, cook for 1 minute.
- Add in tomatoes, chicken broth, capers and the cayenne pepper.
- Press chicken pieces down into the liquid.
- Cover the pan, and bring the liquid to a slow simmer; reduce the heat to very low.
- Cook until the rice is tender (about 30-40 minutes).
- Top with olives and peas; stir very gently.
- Arrange the pepper strips on top of the paella.
- Cover the pan again, cook for 3-4 minutes, or until the peas are hot.
EASY PAELLA

- In a medium bowl, mix together 2 tablespoons olive oil, paprika, oregano, and salt and pepper. Stir in chicken pieces to coat. Cover, and refrigerate.
- Heat 2 tablespoons olive oil in a large skillet or paella pan over medium heat. Stir in garlic, red pepper flakes, and rice. Cook, stirring, to coat rice with oil, about 3 minutes. Stir in saffron threads, bay leaf, parsley, chicken stock, and lemon zest. Bring to a boil, cover, and reduce heat to medium low. Simmer 20 minutes.
- Meanwhile, heat 2 tablespoons olive oil in a separate skillet over medium heat. Stir in marinated chicken and onion; cook 5 minutes. Stir in bell pepper and sausage; cook 5 minutes. Stir in shrimp; cook, turning the shrimp, until both sides are pink.
- Spread rice mixture onto a serving tray. Top with meat and seafood mixture.

CHICKEN & MUSHROOM PAELLA
A Quick And Simple Meal which is all cooked in one pan. This is really filling.

- Chop the re onion
- Chop the Mushroom
- Chop the chicken
- Place a large NON STICK pan with a lid on the hob on a mid heat and cook the onions still soft then add the mushroom and cook till mushroom turn soft place the chopped chicken in and cook till almost cooked, while that's cooked prepare the stock (6 cups of stock to 3 cups of rice)
- Add the paella rice to the pan and stir while adding the stock. (I like to add a splash of milk to make light and fluffy) stir until any stuck residue has left the bottom of the pan then allow to simmer then turn the heat to low then place the lid on and leave to cook (the rice absorption differs so check it so it does not dry out and stir while checking it) it can take from 20 to 40 minutes to cook. once cook plate it up and eat!! or use a mold to fancy it up
- This is a great idea for hot buffet. Just remember 1 cup of rice to 2 cups of stock. you can increase the number of of rice to stock to serve as many guest you want, for the chicken I use 1 breast per person but you can get away with 1 large for two people.
SPANISH CHICKEN AND MUSSEL PAELLA

- Make the sofrito: In a skillet heat 2 tablespoons olive oil. Add the onion and pepper, and cook until softened, about 2 minutes. Add tomatoes, thyme, basil, cumin seed, bay leaf and garlic. Season with salt and pepper. Cook the mixture for 5 to 7 minutes, or until almost all the liquid has evaporated. Set aside.
- Pat dry the chicken and season it with salt and pepper. In a large deep ovenproof skillet heat the oil over moderately high heat until it is hot. Add the chicken to the skillet, cook it for 7 to 10 minutes on each side, or until it is browned and transfer it to a plate. Add the sausage or ham to the skillet, cook it, tossing, until it is browned lightly, and transfer with a slotted spoon to the plate.
- To assemble the paella: Preheat the oven 400 degrees. In a saucepan bring the broth to a simmer over modertaely high heat, add the saffron or tumeric and let the mixture steep for 5 minutes. In a 14-inch paella pan or a large deep ovenproof skillet, arrange the rice, chicken, sausage or ham and sofrito. Add the prepared broth, bring the liquid to a simmer over high heat, stirring, and immediately remove the pan from the heat. Arrange the shellfish in the pan and bake the paella on the floor of the oven for 25 minutes. (Do not stir the paella during cooking. If the mixture becomes dry, add the additional broth.) Add the peas and bake the paella for 10 minutes more, or until the liquid is absorbed and the mussels have opened. Let the paella stand, covered with a dish towel, for 5 minutes before serving. Serve the paella in its dish garnished with the cilantro and lemon wedges.

CHICKEN & PRAWN PAELLA

Steps:
- Cut the chicken breasts into cubes about 2cm.
- Heat olive in a medium paella pan(38 cm is ideal).
- Saute onions and garlic until soft.
- Add chicken and brown for a few minutes.
- Add peppers and cook for another five minutes.
- Add tomatoes, saute for a couple of minutes then add the paprika. Continue for another couple of minutes.
- Add 900ml of the chicken stock, salt & pepper, and rice, saffron (or tumeric), bring to boil then reduce heat and simmer for 20 minutes covered with foil.
- Add mushrooms, prawns and peas to surface of paella, do not mix in - re-cover.
- Cook for about 10 minutes or until prawns are cooked and liquid has been absorbed. Note- add more chicken stock if required.
- Once cooked remove paella from heat and leave to rest covered for 5 minutes.
- Scatter parsley, spread lemon wedges of paella and serve.

- 1 Heat a large non-stick pan with oil. Cook chicken in batches until cooked through. Remove and set aside.
