This chicken on the beach features a medley of sweet, citrusy, and savory flavors from pineapple juice, cilantro, jalapeno, and agave.

2 roughly 1½ lbs whole chicken leg quarters
2 roughly 16 oz whole boneless chicken breasts
for seasoning salt and ground black pepper
1 cup shortening
3 cups pineapple juice
5 tbsp lemon or lime juice
1 cup chicken broth
6 oz halved red onions
2 oz crushed garlic cloves
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp dried oregano
2 oz roots and all fresh cilantro
2 tsp preferably ancho chili powder chili powder
1 tbsp smoked paprika
¼ cup pickled jalapeño with juice
¼ cup or brown sugar agave nectar
to taste salt and ground black pepper

Steps:

  • Preheat the oven to 300 degrees F.
  • Using a blender or food processor, puree all ingredients for the sauce. Season to taste with salt and pepper. Adjust accordingly. Set aside.
  • Season both chicken parts with salt and pepper.
  • Preheat a skillet over medium heat. Melt the shortening and sear chicken evenly on all sides. Transfer to a braising pan.
  • Pour sauce onto the chicken, ensuring that it covers at least ¼ of the chicken.
  • Cover with foil and transfer to the preheated oven.
  • Braise for approximately 45 minutes, or until chicken juices run clear but remain moist. Note that the chicken breast will cook faster than the chicken leg, so keep a close eye as you may need to set aside the chicken breasts earlier.
  • Place the excess sauce into a saucepot. Reduce over medium heat until thickened, enough to brush over the chicken, but not cloying in taste.
  • Towards the last 5 minutes of braising, remove and discard the foil. Return the chicken breasts to reheat. You may also need to drain away some of the sauce from the braising.
  • Brush the glaze over and around the chickens. Increase the top heat of the oven to 400 degrees F and roast the chicken briefly for the remaining 5 minutes until the skin turns a deep color.
  • Serve together with the dipping sauce, choice of vegetables, and rice. Enjoy your chicken on the beach!

2 tsp olive oil
1.5 lbs uncooked boneless skinless chicken breast (cut into small bite size pieces )
1 tsp Goya Adobo Seasoning
1 10 oz pkg Vigo Saffron Yellow Rice (Arroz Amarillo)
1 cube Knorr Tomato Bouillon ((optional))
2½ cups water
3 oz White Queso Dip (*see notes)
2 tbsp milk (skim, 1%, 2%, or whole all work)
cooking spray

Steps:

  • If the chicken seems "wet" pat it dry with a paper towel and then sprinkle with the adobo seasoning and rub it in all over.
  • Heat oil in a large dutch oven or non stick large deep skillet with tight fitting lid over medium heat. Add diced chicken breast and cook on one side for about 3 minutes and then turn and continue to cook for a few minutes.
  • When the chicken is cooked and browned add in the package of rice, crushed up tomato bouillon, and water. Stir and bring to a boil for one minute. Reduce heat to a simmer. Cover and let cook for at least 20 minutes before checking the rice for doneness. It should be done between 20-25 minutes.
  • When rice is cooked add in queso and milk then fluff all together with fork. Serve warm!*see notes about rice cooking*

The sauce for this dish is somewhat like a sweet and sour sauce, but has a brighter flavor and is easier to make. I have made this many times and always gets rave reviews. Rumor has it this dish was once on the menu at a popular restaurant on Waikiki Beach.

4 boneless skinless chicken breasts
1/2 cup flour
1 (20 ounce) can pineapple chunks in juice
3/4 cup cider vinegar
2 tablespoons soy sauce
1 cup sugar
1/2 teaspoon ginger
1 chicken bouillon cube
1/4 cup cold water
2 tablespoons cornstarch
1 large green pepper
3 cups hot cooked rice, for serving

Steps:

  • Preheat oven to 400°F and spray a 9x13 baking pan or dish with cooking spray.
  • Set aside.
  • Trim any visible fat from chicken breasts and dry thoroughly with paper towels.
  • Coat chicken with flour, shaking off any excess.
  • Place chicken in prepared dish and place in oven while preparing sauce.
  • Drain juice from pineapple into a medium saucepan and set pineapple chunks aside.
  • Add the vinegar, sugar, soy sauce, ginger, and bouillon cube to saucepan.
  • Combine cornstarch and water and blend until smooth.
  • Add to saucepan and bring to boil over medium-high heat, whisking slowly to dissolve sugar.
  • Boil for two minutes, whisking vigorously.
  • The sauce should thicken and turn clear after boiling for about 1 minute or so.
  • Pour sauce over chicken and lower oven temperature to 350°F.
  • Bake for 20 minutes.
  • Meanwhile, remove stem and seeds from green pepper and remove white veins.
  • Slice into rings and set aside.
  • Distribute pineapple chunks and pepper rings evenly over chicken and bake 20 more minutes.
  • To serve, place about 2/3 cup rice on plate and top with a chicken breast.
  • Top with plenty of the pineapple and pepper rings and drizzle a generous amount of the sauce over all.
  • Serve at once.
  • NOTE: Be sure to use Heinz apple cider vinegar, not a store brand in the sauce.
  • Using any other brand will make the sauce foam up and boil over in addition to having a poor flavor.

1 chicken, cut up (I use 6 boneless, skinless chicken breast halves)
1/2 cup flour
1/3 cup salad oil
1 teaspoon salt
1/4 teaspoon pepper
1 (20 ounce) can sliced pineapple
1 cup sugar
2 tablespoons cornstarch
3/4 cup cider vinegar
1 tablespoon soy sauce
1/4 teaspoon ginger
1 bouillon cube (chicken)
1 large green pepper, sliced

Steps:

  • Heat oven to 350*.
  • Coat chicken with flour.
  • Heat oil in large frying pan and brown chicken on all sides.
  • Remove to a shallow roasting pan.
  • Arrange pieces skin side up.
  • Sprinkle with salt and pepper.
  • Prepare sauce: Drain pineapple syrup into a 2 cup measuring cup.
  • Add water to make 1 1/4 cups.
  • Mix in cornstarch to dissolve.
  • In medium saucepan combine sugar, syrup with cornstarch, vinegar, soysauce, ginger and bouillon cube.
  • Bring to a boil for 2 minutes.
  • Pour over chicken.
  • Bake uncovered for 30 minutes.
  • Add pineapple slices and peppers.
  • Bake 30 minutes more.
  • Serve with rice and enjoy!
