A good stir-fry sauce for beef or chicken and vegetables, best added after other ingredients are cooked. Pour over stir-fry and toss. Also great on rice.

- Pat chicken pieces dry with paper towels. In a medium bowl, toss chicken with cornstarch until coated; season generously with salt and pepper.
- In a large wok or nonstick skillet, heat 2 teaspoons oil over medium-high. Cook half the chicken, turning once, until browned, but not completely cooked through, 2 to 3 minutes total. Transfer to a plate. Repeat with another 2 teaspoons oil and remaining chicken. Transfer chicken to plate. Set aside. Wipe out skillet with a paper towel.
- To skillet, add remaining 2 teaspoons oil, onion, and bell peppers; cook over medium-high heat, tossing often, until beginning to brown, 3 minutes. Add garlic; cook until fragrant, about 1 minute.
- Add 1/4 cup water, vinegar, soy sauce, and chicken to pan; cook, tossing, until chicken is cooked through, about 1 minute. Remove from heat. Stir in basil leaves. Serve immediately, over white rice, if desired.

This dark, rich marinade can be used with any type of beef or chicken. If you want it spicy, mix in the chopped hot peppers of your choice. Yummy!

Steps:
- Saute sliced chicken in hot oil until one side is cooked and then add white onion while turning chicken.
- Cook until onions are very soft.
- Toss in red and green peppers, mushrooms and green onion and continue sauteing over med/high heat.
- Stir in Cilantro, garlic powder, ginger, salt and pepper.
- (If you use a very salty soy sauce you might not want to add salt)
- Continue cooking until red and green peppers are soft.
- Once peppers are soft stir in Marsala wine and soy sauce, continue cooking over med/high heat until almost all of the liquid has evaporated and you are left with a thick sauce.
- Pour over a bed of rice and serve.
- NOTE*It is very important to keep cooking until nearly all of the liquid has evaporated because you want the flavor of the soy sauce and wine on the vegetables NOT on the plate in a puddle.
- If you prefer extra sauce for the rice just use more soy sauce and wine but make sure you burn off most of the excess water or your dish will lack flavor and be too liquidy.
- Adding a little extra olive oil will always help to thicken the sauce.
- Enjoy.

- Heat vegetable oil in a large wok or skillet over medium-high heat; cook and stir beef until browned, 3 to 4 minutes. Move beef to the side of the wok and add broccoli, bell pepper, carrots, green onion, and garlic to the center of the wok. Cook and stir vegetables for 2 minutes.
- Stir beef into vegetables and season with soy sauce and sesame seeds. Continue to cook and stir until vegetables are tender, about 2 more minutes.

BEEF & CHICKEN STIR FRY

- Mix all marinade ingredients except olive or canola oil, sesame seeds. Divide in half and pour into 2 freezer ziploc bags. Add steak to one and chicken to other. Set aside to marinate at least 30 minutes.
- In a large wok, heat a little oil until hot!
- Add marinated meat/onions in batches, frying till no longer pink. Remove to plate.
- Add onions and garlic, cook a few minutes and remove to plate.
- Add broccoli with a few tablespoons of water to help it steam and stir fry until water evaporates and broccoli is green but still crisp.
- Return meats to pan and onions garlic along with any remaining marinade in bags.
- Cook a few more minutes until meats cook all way through!
- Season with salt as needed.
- Sprinkle on sesame seeds.

- Cut chicken into 1/2-in. strips; place in a resealable plastic bag. Add cornstarch and toss to coat. Combine the soy sauce, ginger and garlic powder; add to bag and shake well. BEEF OR CHICKEN TERIYAKI STIR-FRY
I love stir frys and this one is a good one! The longer you marinade the meat in the teriyaki sauce the better it is.

Steps:
- Marinate your beef or chicken for about 5 hours using about 1/2 the bottle of the teriyaki sauce.
- Put oil in a wok or a frying pan with a cover and heat.
- Drain the meat from the marinade discarding the marinade and add the meat and garlic to wok.
- Cook until it is done about 7 minutes.
- Remove the meat from the wok and wipe out the wok with a paper towel.
- Add more oil and stir fry the carrots for about 6 minutes.
- Add the zucchini, crookneck squash, baby corn and mushrooms and stir fry for about 10 minutes.
- Add the meat back into the wok and stir through and add more teriyaki sauce to taste.
- Cover and cook for about 5 minutes.
- Serve over rice.

- Heat oil in a wok or large heavy skillet. Add chicken or pork (see Cook's Note), garlic, and oyster sauce, and stir-fry for 10 minutes.

CHICKEN OR BEEF STIR FRY

Steps:
- Place the meat in a bowl with the soy sauce and Chinese five spice and leave to marinate for 20 mins.
- Prepare broccoli, pepper and spring onions. Mushrooms would also be good, or you could just buy a bag of stir fry vegetables.
- Heat the oil in a wok or large frying pan and add the meat, ginger and garlic and stir fry for a few mins until cooked through.
- Add the vegetables and stir fry for a further 2-3 mins.
- Add the liquid to the pan and cover to allow the vegetables to steam for a minute or two. Instead of sherry/water you could use a sachet of stir fry sauce at this point.
- If you want to serve with noodles, add (cooked or straight to wok) noodles after the vegetables. Otherwise serve with rice.
