Salty and sweet combination. This recipe is a 'keeper'!

Number Of Ingredients 15

1 ½ cups all-purpose flour
⅔ cup packed brown sugar
½ teaspoon baking powder
½ teaspoon salt
¼ teaspoon baking soda
½ cup butter, softened
1 teaspoon vanilla extract
2 egg yolks
3 cups miniature marshmallows
⅔ cup corn syrup
¼ cup butter
2 teaspoons vanilla extract
2 cups peanut butter chips
2 cups crisp rice cereal
2 cups salted peanuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine flour, brown sugar, baking powder, salt, baking soda, 1/2 cup butter or margarine, 1 teaspoon vanilla and egg yolks. Mix on low speed with an electric mixer until crumbly.
  • Press firmly into bottom of 13 x 9 inch pan. Bake 12- 15 minutes until golden brown.
  • Immediately sprinkle marshmallows over top and return to oven for 2 - 2 1/2 minutes. Let cool while preparing topping.
  • To Make Topping: In a large saucepan over low heat combine corn syrup, 1/4 cup butter or margarine, 2 teaspoons vanilla and peanut butter chips until smoothly melted, stirring constantly. Remove from heat and stir in cereal and nuts. Immediately spoon over marshmallows, spreading to cover. Refrigerate until firm. Cut into 36 bars.

Number Of Ingredients 5

1 cup clear corn syrup
1 cup granulated sugar
1 ½ cups peanut butter, crunchy or smooth peanut butter
1 teaspoon vanilla extract
3 cups corn flakes cereal

Steps:

  • Put sugar and syrup in a saucepan, stir, and heat to a boil.
  • Remove from heat and add the peanut butter and vanilla. Stir until smooth.
  • In big mixing bowl, pour over the corn flakes. Combine gently so all the corn flakes are covered.
  • Drop by teaspoon onto foil. Makes a bunch. Allow to cool and set up, about an hour.
  • Enjoy!

They're nutty, both crisp and chewy, and just a bit crumbly-the perfect afternoon snack. Honey and brown sugar lend a touch of sweetness, while egg whites (left over from Orange Pistachio Crescents), nuts, and seeds give the bars protein and chewiness.

Number Of Ingredients 8

1 1/2 cups sliced almonds (4 1/2 ounces)
1/3 cup sesame seeds
1/3 cup mild honey
3 tablespoons packed light brown sugar
1 tablespoon vegetable oil
3 cups crisp rice cereal (preferably brown-rice)
1 cup roasted salted cashews (1/4 pound), coarsely chopped
2 large egg whites

Steps:

  • Preheat oven to 350°F with rack in middle. Lightly oil a 9-inch square baking pan, then line bottom and sides with parchment and lightly oil parchment.
  • Toast almonds in a 4-sided sheet pan until pale golden, 6 to 9 minutes. Stir in sesame seeds and bake until seeds are golden, 3 to 4 minutes more. Transfer to a plate and cool completely.
  • Reduce oven to 325°F.
  • Gently heat honey, brown sugar, and oil in a small saucepan over low heat, stirring, until smooth.
  • Stir together rice cereal, cashews, and almond-sesame mixture in a large bowl.
  • Beat egg whites with a rounded 1/4 teaspoon salt in a small bowl with a fork until foamy, 1 to 2 minutes.
  • Stir honey mixture into cereal mixture, then stir in whites.
  • Spread mixture in baking pan, pressing gently, and bake until golden brown, 35 to 40 minutes. Cool completely, then turn out onto a cutting board and cut into bars.

Steps:

  • Preheat oven to 350°F.
  • Grease a 13x9x2 baking pan.
  • Beat eggs until light and foamy.
  • Beat in sugar, vanilla and melted butter until creamy.
  • Combine flour, baking powder and salt.
  • Add to egg mixture, mixing at low speed until well blended (mixture will be stiff).
  • Stir in nuts by hand.
  • Spread evenly in prepared baking pan and bake at 350F for 25-30 minutes or until top is light brown.
  • Cool at least 15 minutes on wire rack before cutting into bars.

This special treat is naturally sweet and full of omega-3s. This was adapted from Jennifer White in the program Helping Your Child Eat Well on 3ABN. Enjoy!

3/4 cup water
1/2 cup dates
1/4 cup toasted almond
1/3 cup raw cashews
1/4 cup raw walnuts
2 teaspoons ground flax seeds
1 tablespoon pure maple syrup
1/4 cup finely grated coconut (for rolling Chewies in)

Steps:

  • Place dates in water and bring water to a boil. Cover, remove from heat, and set aside to let dates to soften. If your dates are really soft, you may skip this step.
  • Meanwhile, grind the almonds in a food processor until fine. Add cashews and grind until fine. Add walnuts and grind until fine. Remove dates from water and add to food processor along with remaining ingredients and process until mixture is well combined.
  • With your hands, form a ball using about 2 teaspoons of mixture at a time. Roll each ball in coconut. Serve and enjoy!
