Grandma Nonny's Chicken Ortega Casserole

Number Of Ingredients 9

1 - 1 1/2 lbs. chicken breasts
1 small onion, chopped
2 - 4 oz. cans Ortega green chiles
1 can (10 3/4 oz) cream of mushroom soup
1 can (10 3/4 oz) cream of chicken soup
1 cup sour cream
10 corn tortillas
1/2 lb. sharp cheddar cheese
1 cup sliced black olives

Steps:

  • Preheat oven to 350 degrees.
  • Season chicken breasts with salt and pepper. Wrap in foil with some onion and 1 - 4 oz. can of Ortega green chiles. Bake at 350 degrees until fully cooked, reaching an internal temperature of 165 degrees F.
  • Remove from oven and open foil to cool. Once cool, slice the chicken. Be sure to save any juices/broth.
  • Combine the saved broth, 1 - 4 oz. can Ortega green chiles, soups, and sour cream in a medium bowl. Stir well to combine.
  • In a 13×9 inch casserole dish, layer the bottom with half of the tortillas, half of the sliced chicken, half of the soup mixture, and one third of the cheese. Repeat this process.
  • Top with remaining cheese and the black olives. Bake at 350 degrees for 1 hour.
  • Remove from oven, slightly cool, and serve. Enjoy!

I clipped this from an Ortega ad in a magazine. I usually cook my chicken breasts in my George Foreman grill. You could also sub those pre cooked chicken tenders if you're pressed for time.

1 lb cooked chicken breast, cut into 1/2 to 1 inch pieces (4 cups)
1 (16 ounce) bottle ortega thick and smooth taco sauce
1 medium onion, diced
2 (4 ounce) cans ortega diced green chilies
1 cup frozen corn kernels
3/4 cup instant rice
1/2 cup water
1 (2 1/4 ounce) can sliced riped olives, drained
1 (12 count) package taco shells, crumbled
2 cups shredded monterey jack cheese or 2 cups cheddar cheese (8 ounces)
sliced green onion
sour cream

Steps:

  • Preheat oven to 375.
  • In a large bowl combine chicken cubes, taco sauce, onion, chilies, corn, rice, water and olives.
  • Spoon into ungreased 13x9-inch baking dish.
  • In a medium bowl, combine taco shell pieces and cheese.
  • Sprinkle over chicken mixture.
  • Bake 40-45 minutes, or until top is golden brown.

This is what my Grandma served every year for Christmas brunch. It is very rich but you can add more eggs if you'd like to tame it down or make it fluffier. Prep time based on using pre-shredded cheese.

1 (14 ounce) can evaporated milk (I use PET brand)
8 ounces monterey jack cheese
8 ounces cheddar cheese
4 eggs, beaten
1 teaspoon salt
2 tablespoons flour

Steps:

  • Mix all ingredients in a casserole dish. Bake at 350 for 35 minutes or until cheese starts to brown.

Found this on an Ortega website when looking for a way of using up leftover turkey. Great with both chicken and turkey.

1 tablespoon oil
1 medium onion, chopped
2 -2 1/2 cups shredded cooked chicken
diced green chilis, to taste
1 package taco seasoning mix
8 corn tortillas
1 (15 ounce) can kidney beans (drained)
2 cups shredded cheddar cheese (divided)
2 cups salsa (or to taste)

Steps:

  • Preheat oven to 350.
  • Grease 13x9x2 inch baking dish. Heat oil in large skillet Saute onion, stirring occasionally, until tender.
  • Remove from heat.
  • Stir in chicken, chiles and seasoning mix
  • Layer half of tortillas in prepared baking dish. Top with chicken mixture, beans and 1 cup cheese
  • Layer with remaining tortillas. Top with salsa and remaining cheese
  • Bake for 30 to 35 minutes or until heated through and cheese is melted
