3/4 cup marinara sauce, plus more for dipping
2 cups shredded rotisserie chicken
1 pound pizza dough
8 ounces mozzarella cheese, shredded
4 ounces Parmesan cheese, shredded
olive oil to brush the calzones

Steps:

  • Preheat oven to 425˚F. In a bowl combine marinara sauce and the chicken. Mix until everything is well combined. Divide the dough into 6 equal sized balls. Roll each in o a 6-inch circle. Divide the chicken mixture evenly onto the 6 circles of dough. Sprinkle mozzarella cheese and about 1/2 of the Parmesan cheese over the chicken. Make sure to leave about 1/2 inch border around the circle. Fold the dough over the filling, and pinch the edges to seal. You can use a fork to press the edges together. Slice 2 vents across the top of the calzones. Brush with olive oil, and sprinkle with the remaining Parmesan cheese. Bake for 12-15 minutes until golden brown. Serve with additional marinara sauce for dipping, if desired

My version of chicken parmesan is a little different than what they do in the restaurants, with less sauce and a crispier crust.

4 skinless, boneless chicken breast halves
salt and freshly ground black pepper to taste
2 eggs
1 cup panko bread crumbs, or more as needed
½ cup grated Parmesan cheese
2 tablespoons all-purpose flour, or more if needed
1 cup olive oil for frying
½ cup prepared tomato sauce
¼ cup fresh mozzarella, cut into small cubes
¼ cup chopped fresh basil
½ cup grated provolone cheese
¼ cup grated Parmesan cheese
1 tablespoon olive oil

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Place chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to a thickness of 1/2-inch. Season chicken thoroughly with salt and pepper.
  • Beat eggs in a shallow bowl and set aside.
  • Mix bread crumbs and 1/2 cup Parmesan cheese in a separate bowl, set aside.
  • Place flour in a sifter or strainer; sprinkle over chicken breasts, evenly coating both sides.
  • Dip flour coated chicken breast in beaten eggs. Transfer breast to breadcrumb mixture, pressing the crumbs into both sides. Repeat for each breast. Set aside breaded chicken breasts for about 15 minutes.
  • Heat 1 cup olive oil in a large skillet on medium-high heat until it begins to shimmer. Cook chicken until golden, about 2 minutes on each side. The chicken will finish cooking in the oven.
  • Place chicken in a baking dish and top each breast with about 1/3 cup of tomato sauce. Layer each chicken breast with equal amounts of mozzarella cheese, fresh basil, and provolone cheese. Sprinkle 1 to 2 tablespoons of Parmesan cheese on top and drizzle with 1 tablespoon olive oil.
  • Bake in the preheated oven until cheese is browned and bubbly, and chicken breasts are no longer pink in the center, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

We folded Pillsbury classic pie crust over ricotta cheese, cooked chicken, Italian blend cheese and seasonings to make our hearty Easy Chicken Calzones. They're ready in just 1 hour.

1 can (13.8 oz) refrigerated Pillsbury™ Classic Crust Pizza Crust
1/4 cup part-skim ricotta cheese
1/2 teaspoon herbes de Provence
1 cup chopped cooked chicken
1 cup shredded Italian cheese blend (4 oz)

Steps:

  • Place baking stone in oven. Heat oven to 425°F. Let stone heat in oven 30 minutes.
  • On pizza peel sprinkled with cornmeal, unroll dough. Spread ricotta cheese evenly over dough to about 1/2 inch from edge. Sprinkle with herbs de Provence. Sprinkle chicken over half of dough; top chicken with cheese blend.
  • Fold dough in half over filling to form pocket; press edges to seal. Slide calzone onto heated baking stone.
  • Bake 18 to 20 minutes or until golden brown. Cool 10 minutes before serving.

2 tablespoons butter
¼ cup Buffalo wing sauce
1 refrigerated pizza dough
2 tablespoons vegetable oil, divided

Steps:

  • Preheat oven to 410 degrees F (210 degrees C). Grease a pizza pan.
  • Place chicken into a large pot and cover with salted water; bring to a boil. Cook the chicken breasts until no longer pink in the center and the juices run clear, about 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer chicken to a bowl and shred with two forks.
  • Melt butter in a skillet over medium-high heat. Cook and stir chicken and Buffalo wing sauce in the hot butter until chicken is coated and heated through, 2 to 4 minutes.
  • Turn pizza dough out onto a generously floured surface. Roll dough into a 12-inch round. 6 boneless chicken breasts
Salt

1 container Italian style bread crumbs
3 large eggs
Extra virgin olive oil
2 jars mushroom and garlic spaghetti sauce
6 pieces mozzarella cheese (from deli), sliced about 1/8-inch thick
Spaghetti
Grated Parmesan cheese

Steps:

  • Preheat oven to 425 degrees. Clean and trim chicken breasts. Season each chicken breast with salt, pepper and garlic powder. On a plate, pour enough bread crumbs to coat the chicken. In a bowl, break 3 eggs and beat. Run each piece of chicken individually through the eggwash, coat completely with the bread crumbs and place on a separate plate. Heat some olive oil in a large non-stick pan. Place the chicken in the pan and cook only until both sides of the chicken are browned. Remove the chicken and let drain on a paper towel. Spread some sauce thinly on the bottom of a large Pyrex casserole. Place the chicken in the casserole and put into 425 degree oven and cook for 15 minutes or until almost cooked through. While chicken is cooking, place a large pot of water on stove and let come to a rolling boil. Salt the water until it tastes like "the sea." Place spaghetti in boiling water, reduce heat to a simmer and stir. Cook spaghetti until done. Take a noodle out and taste to measure how done they are. When done cooking, drain the spaghetti into a colander. Take chicken out of the oven and spoon sauce over each piece of chicken. Cover each piece of chicken with cheese. Place chicken back into oven and heat until cheese is melted. In a saucepan, heat the remainder of the sauce. Take chicken out of oven and plate. Remove spaghetti from colander, plate and spoon sauce over the top. Grate Parmesan cheese over the top to taste.

2 garlic cloves, minced
1 lb ground chicken breast
3/4 cup pizza sauce
italian seasoning, to taste
1/4 teaspoon crushed red pepper flakes
1/4 cup fresh basil, chopped
13 7/8 ounces of refrigerated pizza dough
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 425 degrees.
  • Heat a large nonstick skillet over medium-high heat. Spray with cooking spray. Add garlic and chicken to pan and saute for 5 minutes or until chicken is no longer pink.
  • Stir in pizza sauce, italian seasoning, and red pepper. Reduce heat and simmer 5 minutes, stirring occasionally. Remove from heat and stir in basil. Let sit for 10 minute.
  • Unroll pizza dough onto a baking sheet coated with cooking spray. Cut into quarters and pat each into an 8x6" rectangle. Divide chicken mixture evenly onto the rectangles and sprinkle with 2 tbsp of cheese on each.
  • Fold each rectangle in half over the chicken and pinch the edges to seal.
  • Bake for 12 minutes or until golden brown.
