NIGERIAN CHICKEN PEPPER SOUP

This Nigerian Chicken Pepper Soup is an easy and hearty comfort food. What better way to enjoy the cold months.

1500 g Large whole Chicken (( cleaned and cut up.))
1 Large Onion ((finely chopped))
1 Tbsp chicken boiullon powder ((or 2 seasoning cubes))
1/8 tsp Salt ((or to taste))
1/2 to 1 Tbsp Cameroon Pepper ((you can sub with 2 habenero peppers))
1 Tbsp Crayfish ((optional))
1 Tbsp Pepper-soup spice*
2 Tbsp Palm oil ((optional))
2-3 Scent leaves (nchianwu) ( ( finely chopped I had run out of Scent leaves so I used Parsley flakes))

Steps:

  • Place the washed and cut up chicken in a pot.
  • Add about 6cups of water, the chopped onions, salt and 2 seasoning cubes and bring to a boil.
  • When the contents in the pot begins to boil, add the pepper soup spice, Cameroon pepper and crayfish ( if using). .
  • Cook till chicken meat is tender then lower heat.
  • Add the chopped scent leaves and palm oil. Allow to simmer for about a minute, then turn off the heat
  • Your Chicken Pepper Soup is ready. Enjoy!!!
  • You can eat it on its own, with some hot white rice, boiled unripe plantains or boiled yam. My choice of what to eat it with depends on my mood ?

Number Of Ingredients 23

Peppersoup Spice Mixture:
1 tablespoon anise seeds
1 tablespoon coriander seeds
1 tablespoon cumin seeds
1 tablespoon allspice berries
1 tablespoon ground ginger
1 tablespoon fennel seeds
1 tablespoon Sichuan peppercorns
1 tablespoon dried tamarind pulp
1 teaspoon whole cloves
Chicken Peppersoup:
1 (3-pound) chicken, cut into serving pieces
1/4 cup freshly squeezed lemon juice
4 cups water
1 onion, minced
2 cloves garlic, minced
2 tablespoons dried bird chiles, or to taste
Salt, to taste
4 cups chicken stock
1/4 cup Pepper Soup Spice Mixture
2 tablespoons minced dried smoked shrimp
2 tablespoons chopped fresh mint
Mint sprigs, for garnish

Steps:

  • Peppersoup Spice Mixture:
  • Mix all the ingredients together in a bowl. Place them in a spice mill and pulse until they are pulverized. Spoon the peppersoup spice mixture into a clean glass jar and cover tightly. While the peppersoup spice mixture will keep virtually indefinitely, the spices will lose their bite over time, so it is better to make a small batch at first and then increase the amount made as you use it more often. (Makes about 1/2 cup.)
  • Chicken Peppersoup:
  • Wash the chicken pieces, rub them with lemon juice, and place them in a large stockpot with the water, onion, garlic, and minced chiles. Salt to taste and bring to a boil over high heat. Lower the heat to medium and simmer for 30 minutes. Add the chicken stock and 1/4 cup Peppersoup Spice Mixture and continue to cook for an additional 30 minutes, or until the chicken is well cooked. Stir in the shrimp and mint and continue to cook for an additional 10 minutes. Serve hot in soup bowls, garnished with a few sprigs of fresh mint.

2 lb chicken
2 Tbsp Crayfish
3 inches ginger root
1 Tbsp pepper soup spice
6 to 8 cups water (or as needed)
2 scotch bonnets
1 onion
2 plantains (Green)
3 to 4 tsp seasoning powder (About 3 cubes)
5 garlic cloves
Salt to taste
Fresh Basil leaves

Steps:

  • Blend onions, ginger, garlic, and scotch bonnet and set aside.
  • Cut the chicken into pieces and clean thoroughly.
  • Put the cleaned chicken inside a pot. Add the blended mixture, seasoning powder and salt to taste. Mix thoroughly and leave to cook for about 10 to 15 minutes.
  • Add the pepper soup spice, crayfish, and water. Stir and leave to cook for another 15 minutes.
  • Meanwhile, peel the plantains and cut them into about 2-inch chunks.
  • Add the cut plantains inside the cooking soup and leave to cook for 15 to 20 minutes or till the plantains become tender
  • Stir in the basil leaves and serve hot or warm.

8 skinless, boneless chicken breasts
1 cup bread crumbs
1 teaspoon dried oregano
½ teaspoon garlic salt
salt and ground black pepper to taste
6 tablespoons olive oil, divided
2 (14 ounce) cans diced tomatoes
2 teaspoons white sugar
1 teaspoon garlic salt
1 teaspoon dried basil
½ teaspoon dried oregano
salt and ground black pepper to taste
6 ounces sliced pepperoni
3 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place chicken breasts between 2 sheets of heavy plastic or waxed paper on a solid, level surface. Firmly pound with the smooth side of a meat mallet to a 1/2-inch thickness.
  • Combine bread crumbs, 1 teaspoon oregano, 1/2 teaspoon garlic salt, salt, and black pepper in a shallow bowl. Dip both sides of chicken in bread crumb mixture until evenly coated.
  • Heat 1 1/2 tablespoon olive oil in a large skillet over medium heat. Cook 2 chicken breasts until browned and no longer pink in the center, about 4 minutes per side. Repeat with remaining olive oil and chicken breasts. Arrange chicken breasts in a 9x13-inch baking dish.
  • Combine tomatoes, sugar, 1 teaspoon garlic salt, basil, 1/2 teaspoon oregano, salt and black pepper in a saucepan. Cook over medium-low heat until heated through, 10 to 15 minutes. Pour sauce evenly over chicken breasts in the baking dish.
  • Cover tomato sauce with pepperoni and mozzarella cheese.
  • Bake in the preheated oven until cheese is melted, 20 to 30 minutes.

1½ lb of the boiler chicken
1tbsp of Nigerian pepper soup spice
4 habanero peppers i.e. ata-rodo
1 tsp Uziza i.e. piper guineense
4 toasted ehuru seeds or calabash nutmeg(toasted)
1 small garlic clove(grated)
Half of a medium onion
1inch of ginger(grated)
1 Knorr cube
salt to taste
2½- 3tbsps of Nigerian pepper soup spices
salt to taste
1tbsp of grinded crayfish
½tsp of utazi i.e. gongronema latifolium . You may substitute with rocket leaves
a hand full of sliced basil or scent leaf for garnishing
½ tbsp. of olive or vegetable oil(optional)

Steps:

  • Cut chicken into desired pieces. Wash and pat dry.
  • Blend all the ingredients from part a into a smooth paste. Season the chicken with salt and toss with the blended paste. Cover and let it sit for 30minutes to 12 hours.
  • After marinating, pour the chicken into a soup pot along with enough water to cook it. Season it with the remaining pepper soup spices and cook until meat is tender(you may use a slow cooker at this point. Pour in all your seasonings with enough water and slow cook on high for about 4 hours; making sure you add the Utazi along with the garnishes once the soup is done).If using the stove top, you may add more water at anytime and adjust the seasonings if you need to. once the meat is tender, add the utazi, crayfish and oil. Then stir to combine. Serve with freshly chopped basil and any side of your choice

1 teaspoon chili flakes
1 teaspoon dried oregano
3 garlic cloves, minced
1 red bell pepper, cut into thin strips

3 cups chicken stock
500 g free-range chicken breast fillets, sliced
chopped coriander or parsley and lime wedge, to serve

Steps:

  • Saute the onion, garlic, and chilli in the oil until fragrant.
  • Add stock, tomatoes, and oregano and bring to the boil.
  • Tip in the bell pepper and chicken, lower heat and simmer for 5 minutes, ot until chicken is just cooked through.
  • Serve sprinkled with the herbs and add a squeeze of lemon juice.

I got this fabulous recipe when I vacationed at Disney's Animal Kingdom Lodge. The soup was on the Boma - Flavors of Africa Buffet. When I inquired about a cookbook with the recipe, the waitress went & got the recipe from the kitchen. This is posted in the same manner I got it, but I'll tell you that finding 1 gallon containers of broth is difficult. So I use 10 14oz cans, it's a little more, but just as good. I also usually use 2 poblanos. Using ready to go chicken tenders is a big time saver. I just sautee them in a little sesame oil & garlic before I dice them. This soup is very tasty and borderline addicitive. I've made several times since I got back. It is absolutley delicious the next day and freezes well. Hope you enjoy it as much as I do.

6 chicken breasts, Diced
1 gallon low sodium chicken broth (or 10 14oz cans)
2 cups low sodium soy sauce (1 15oz bottle)

1 cup cornstarch
1 cup water
2 red bell peppers, Chopped

2 tablespoons sesame oil

Steps:

  • Cook chicken unitl half done. Set Aside.
  • Heat Chicken Stock, Soy Sauce, Garlic, Sugar, Sesame Oil, and Hot Sauce. (You can add Collard Greens at this point if desired.) Bring to Boil.
  • Make a slurry. Combine 1 Cup Cornstarch with 1 Cup Water and mix until all Cornstarch is disolved. Add to Stock and reduce heat and simmer for 20 minutes.
  • Add all Vegetables and Chicken. Cook until Chicken and Vegetables are done. Another 20 to 30 minutes depending on Chicken.
  • Drizzle with Sesame Oil when serving. If desired, you can add fresh Spinach just before serving.
