1 tsp. cornstarch
One 10.75-oz. can 98% fat-free cream of celery condensed soup
2 cups frozen petite mixed vegetables
12 oz. cooked and finely chopped skinless chicken breast
12 large square egg roll wrappers
Optional seasonings: salt and black pepper

Steps:

  • Preheat oven to 350 degrees. Spray a baking sheet with nonstick spray.
  • In a small bowl, mix cornstarch with 1 tsp. cold water until dissolved. Transfer mixture to a large bowl. Add soup and mix well. Stir in veggies and chicken.
  • Lay an egg roll wrapper flat on a dry surface. Moisten all four edges with water. Evenly distribute 1/12th of the chicken mixture (about 1/3 cup) on the bottom half of the wrapper. Fold the top half over the mixture so the top edge meets the bottom. Dab the edges with water and press firmly with the prongs of a fork to seal. Place on the baking sheet.
  • Repeat with remaining ingredients, for a total of 12 pockets, evenly spaced on the sheet.
  • Bake until edges begin to brown, 15 to 18 minutes. Dig in!

1 (3 ounce) package cream cheese, softened
1 tablespoon butter
¼ teaspoon salt
⅛ teaspoon ground black pepper

2 cups chopped cooked chicken
2 tablespoons butter, softened
3 tablespoons cracker crumbs, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Unroll crescent roll dough onto a work surface; make 4 rectangles by placing 2 dough triangles next to each other. Pinch perforations closed.
  • Mix cream cheese, 1 tablespoon butter, salt, black pepper, milk, and minced onion in a bowl until evenly combined; gently stir chicken into cream cheese mixture. Spoon 1/4 the chicken mixture onto each dough rectangle. Roll dough over the filling and pinch seams closed. Place onto a baking sheet. Spread about 1 1/2 teaspoons butter on each pocket and sprinkle with cracker crumbs.
  • Bake in the preheated oven until browned and filling is hot, 20 to 25 minutes.

2 skinless, boneless chicken breasts, cut into 1/2-inch cubes
1 (14.5 ounce) can fat-free chicken broth, divided
½ (16 ounce) package frozen mixed vegetables
1 cup dehydrated onion flakes
⅓ cup granulated garlic
4 cloves garlic, minced
1 packet dry chicken gravy mix
½ teaspoon salt
1 cup instant potato flakes
cooking spray
2 (7.5 ounce) cans reduced-fat refrigerated biscuit dough (such as Pillsbury® Reduced Fat Crescents)
1 small egg, beaten

Steps:

  • Place chicken in a large skillet over medium-high heat. Cover and cook, stirring halfway, until no longer pink in the center, 6 to 12 minutes.
  • Pour half the chicken broth into the skillet with the chicken. Add frozen vegetables, dehydrated onion, granulated garlic, minced garlic, gravy mix, and salt. Stir and cover; reduce heat to medium and cook until flavors meld, about 8 minutes. Add instant potatoes and stir until incorporated. Add remaining chicken broth and stir. Cover and reduce heat to low; cook until thickened to your liking, about 8 minutes more.
  • Remove skillet from heat and allow to cool, about 30 minutes. Pour into a container, cover, and refrigerate filling, 2 hours to overnight.
  • Preheat the oven to 325 degrees F (165 degrees C). Spray 2 baking sheets with cooking spray.
  • Open and unroll dough into one continuous sheet. Place on a prepared baking sheet. Pinch all seams together, sealing them. Stretch the dough to twice its size using a small rolling pin. Score the sheet into 8 squares using a knife. Repeat with the remaining dough on the other baking sheet.
  • Place 1 heaping tablespoon of filling into the center of a dough square. Pull the side up and over the mixture. Seal the edge carefully with your fingers and then using a fork. Repeat with remaining dough and filling.
  • Bake in the preheated oven, watching carefully until just starting to brown, about 13 minutes. Brush pies with beaten egg and cook until dried, about 2 minutes more. Allow to cool for a few minutes before eating.

Two 10 1/2-ounce cans cream of chicken soup
One 10-ounce bag frozen vegetables (carrot, corn and green bean mix)
1 teaspoon garlic powder
1 small rotisserie chicken, meat shredded, skin and bones discarded
Kosher salt and freshly ground black pepper
2 boxes refrigerated pie crusts (2 crusts in each box)
1 large egg, beaten

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment.
  • Combine the cream of chicken soup, frozen vegetables, garlic powder, shredded chicken and some salt and pepper in a bowl.
  • Unwrap the pie crusts and cut off the round edges of each to create a square. Cut each square into quarters, then trim the edges to create rectangles. Put 1/4 cup of the chicken mixture in the center of 1 rectangle and brush the pastry with water around the perimeter. Top with another piece of pastry and use a fork to press down on the edges to completely seal closed. Brush with the egg and poke a few fork holes in the top. Repeat with the remaining rectangles and filling to make 8 pot pie pockets. Transfer to the prepared baking sheets. Bake until golden brown, 20 to 30 minutes.

We grew up with these delicious Creamy Chicken and Bacon Pockets and now we make them for our families all the time!

1 8 ounce package chive and onion flavored cream cheese
½ cup Mozzarella cheese (shredded)
3 boneless, skinless chicken breasts (cooked and shredded)
6 strips bacon (cooked and crumbled)
3 Tablespoons sun dried tomatoes (chopped)
1 8 ounce package crescent roll dough
1 egg
1 Tablespoons water

Steps:

  • Preheat oven to 375 degrees.
  • Warm cream cheese in the microwave for 20-30 seconds to soften. Place in a mixing bowl with Mozzarella cheese, chicken, bacon, and sun-dried tomatoes. Stir to combine and set aside.
  • Lightly dust a work surface with flour and roll out crescent dough. Cut into 16 squares.
  • Place about 2 teaspoons of cream cheese mixture onto each square.
  • Press edges together until sealed.
  • After stuffing and folding each pastry, place on a baking sheet. Whisk egg and water together and brush over the top of each pastry.
  • Bake in preheated oven for 12-15 minutes or until puffed and golden brown. Cool 10 minutes before serving.

These handheld pies can go directly from the freezer to the oven to bake. From frozen, place on a baking sheet, brush with egg wash, and bake according to the recipe but for a few extra minutes.

Number Of Ingredients 11

1 3-pound chicken (to get 1 heaping cup of shredded meat; you can freeze remainder for other recipes)
2 tablespoons unsalted butter
1/2 cup chopped onion
1/3 cup chopped celery (1 large stalk)
1/3 cup chopped carrot (1 carrot)
1/2 teaspoon coarse salt
2 tablespoons all-purpose flour
1 1/2 cups chicken broth (from the reduced poaching liquid)
1/4 cup grated Parmesan cheese
Cream Cheese Pastry Dough
1 large egg, for egg wash

Steps:

  • Place the chicken in a pot and add water to barely cover. Bring to a boil, reduce the heat, and simmer for 50 minutes. Skim and discard any foam as it rises on the surface. Remove the chicken to cool continue to boil the broth to reduce and concentrate to about 1 quart. Remove the meat from the chicken and shred.
  • To make the filling, melt the butter in a medium-sized hot skillet and add the onion, celery, and carrot. Saute over medium heat for 2 to 3 minutes. Stir in the salt and flour and cook for 1 minute more. Add the chicken broth and stir until thickened, about 2 minutes. Stir in 1 heaping cup shredded chicken and the Parmesan cheese. Cool in the fridge.
  • Preheat the oven to 375 degrees Fahrenheit. Butter or line a baking sheet.
  • To form the pocket pies, work with half of a disk of dough at a time, rolling it out on a floured surface. Using an overturned bowl (about 5 inches across), cut out circles about 3 at a time from each piece of dough. After cutting out all your circles, gather all dough scraps, reroll, and cut out a final time. Place 1/4 cup filling on one side of a dough circle. Wet the edges of the dough with the water. Fold the dough over to form a half circle. Pinch the edge of the dough together. Crimp the edge with a fork. Repeat the process until all the filling is used. The pocket pies can be frozen at this point.
  • Place the pocket pies on the prepared baking sheet and chill for a few minutes. Prick each pie on top twice with a fork. When ready to bake, beat the egg with 1 tablespoon water. Brush the egg wash over each pocket pie. Bake for 20 to 25 minutes, until golden brown. Let rest for 5 minutes before serving. The pies can be cooled and frozen to reheat in the microwave.

12 large square egg roll wraps (found in the refrigerated section of the supermarket with the other Asian items)
1 (10 3/4 ounce) can 98% fat free condensed cream of celery soup
2 cups frozen bite-sized mixed vegetables (like diced carrots, peas, corn, etc.)
2 ounces cooked lean skinless chicken breasts, finely chopped
1 teaspoon cornstarch
salt and black pepper, to taste

Steps:

  • Preheat oven to 350 degrees.
  • In a small dish, mix cornstarch thoroughly with 1 teaspoons cold water.
  • In a large bowl, combine cornstarch mixture with soup, and mix thoroughly. Add veggies and chicken, mix well, and then season to taste with salt and pepper, if you like. This is your filling. Set aside.
  • On a large dry surface, lay out three egg roll wrappers. Set out a small dish of water, dip your finger into it, and then run your finger along all of the wrapper edges -- repeat this as needed while preparing your pockets, as it will help keep them sealed.
  • Starting about 1/2 inch from the bottom, place 2 - 3 tablespoons of filling along the bottom half of each wrapper, leaving a 1/2-inch border on both sides. Fold the top half of each wrapper over, so that the top edge meets the bottom -- the mixture should be completely encased with a 1/2-inch border on three sides. Dab each border with water, and fold each inward about 1/4 inch to lightly seal all sides. Press firmly along the borders with the prongs of a fork to seal completely.
  • Line a large baking pan with foil and/or spray with nonstick spray. Using a large spatula, carefully transfer the pockets to the baking pan. Repeat the entire process 3 more times, so that you have 12 pockets on the baking sheet. If needed, prepare and use an additional baking sheet.
  • Bake in the oven for 20 minutes. Allow to cool for 5 minutes before serving. Then dig in!

This is a nice savory chicken sandwich pocket that is full of flavor. It makes a great dish for a sit down dinner or when the guys come over to watch the big game.

8 boneless skinless chicken breast halves
1 teaspoon salt
1 teaspoon pepper
1 tablespoon crushed thyme, divided
35 -40 large spinach leaves
2 (8 ounce) cartons of your favorite cream cheese with herbs or 2 (8 ounce) cartons vegetables
1/2 cup chopped pecans, toasted
2 sheets frozen puff pastry, thawed
1 egg
1/2 teaspoon cold water
1 tablespoon poppy seed

Steps:

  • Cut a lengthwise slit in every chicken breast to within a 1/2 inch of the the other side, open so they lay flat.
  • Cover each chicken breast with plastic wrap; pound to 1/8 inch thickness. Remove plastic wrap and sprinkle chicken with salt and pepper.
  • Stir half of the thyme into each carton of cream cheese and set aside.
  • Place spinach leaves over chicken breasts.
  • Spoon 2 Tbs. of the cream cheese mixture down the center of each chicken breast.
  • Sprinkle the toasted pecans over the cream cheese and lightly press so that they stick.
  • Roll up the chicken breasts to cover the filling and tuck in the ends.
  • Unroll the puff pastry; cut into 8 even portions. Roll each into an 8-in.x7-in. rectangle.
  • Combine egg and cold water; brush over edges of pastry.
  • Place chicken at one short end; roll up tightly and tuck in ends as you go.
  • Place pockets on a greased cookie sheet. Brush them with remaining egg and water mixture, and sprinkle with poppy seeds.
  • Bake at 350 degrees for 25-30 minutes or until golden brown.
