1/2 teaspoon salt
1/8 teaspoon pepper
1 jar (12 oz) chicken gravy
1 1/2 cups frozen Cascadian Farm™ sweet peas, thawed

Steps:

  • Spray 3- to 4-quart slow cooker with cooking spray. In cooker, place potatoes, carrots and thawed onions. Sprinkle chicken with salt and pepper; place over vegetables in cooker. Pour gravy over top.
  • Cover; cook on Low heat setting 8 to 10 hours.
  • Stir in thawed peas. Increase heat setting to High. Cover; cook about 15 minutes longer or until peas are tender.

1 chicken (3 1/2 pounds), in 8 pieces, rinsed and patted dry
Salt and freshly ground black pepper, to taste
2 tablespoons unsalted butter
2 tablespoons olive oil
2 cups diced carrots
1 large onion, halved and slivered
2 tablespoons minced garlic
1 tablespoon chopped fresh tarragon (or 1 teaspoon dried)
2 tablespoons flat-leaf parsley, for garnish

Steps:

  • 1. Preheat the oven to 350°F. Season the chicken generously with salt and pepper.
  • 2. Melt the butter with the oil in a large, heavy ovenproof casserole over medium heat. Brown the chicken in batches, about 8 minutes per batch, being careful not to pierce the skin. Remove to a plate.
  • 3. Reduce heat to medium-low. Add the carrots, onion, garlic, and tarragon; cook, stirring, for 5 minutes. Return the chicken and any juices to the casserole, arranging the pieces atop the vegetables. Cover and bake in the oven for 1 hour, basting occasionally. Sprinkle with chopped parsley and serve immediately.

1/4 cup finely grated Parmesan
Pinch of salt
8 tablespoons ice water
3 pounds bone-in, skin-on chicken thighs, rinsed and patted dry
2 tablespoons olive oil
1/2 teaspoon granulated garlic
1/2 teaspoon paprika
Kosher salt and ground black pepper
6 tablespoons unsalted butter
1 large onion, chopped finely
Kosher salt and ground black pepper
3 medium carrots, peeled and cut crosswise into 1/4-inch pieces
1 small bulb fennel, cut into quarters and sliced crosswise into 1/4-inch pieces
1 parsnip, peeled and cut crosswise into 1/4-inch pieces
4 cloves garlic, minced
6 tablespoons all-purpose flour
1/4 cup dry sherry
4 cups chicken stock, plus additional as needed for thinning the sauce
1/4 cup milk
3/4 cup frozen peas
3 tablespoons finely chopped fresh Italian parsley leaves
2 teaspoons chopped fresh thyme leaves
All-purpose flour, for dusting
1 large egg, for egg wash

Steps:

  • For the crust: Combine the flour, butter, Parmesan and a pinch of salt in the bowl of a food processor fitted with the pastry blade. Pulse a few times until the mixture resembles fine gravel. Add up to 8 tablespoons of ice water, a few tablespoons at a time, until the dough comes together and forms a ball. Remove from the food processor and form the dough into a disk; wrap it in plastic wrap and refrigerate for at least 30 minutes or until ready to use.
  • For the roast chicken: Meanwhile, preheat the oven to 325 degrees F. In a large bowl, slather the chicken with the olive oil and sprinkle with the granulated garlic, paprika, 1 teaspoon salt and 1/2 teaspoon pepper. Set the chicken on a rack in a roasting pan and roast until the skin is golden and crispy and a thermometer inserted into the thickest part of a thigh reaches 165 degrees F, 45 to 60 minutes. Set aside to cool.
  • When cool enough to handle, remove the skin, pull the meat from the bones and tear it into bite-size pieces (you need 4 cups of the meat for the pie).
  • For the filling: Heat the butter in a Dutch oven over medium-high heat. When the butter has melted, add the onion, 1/2 teaspoon salt and a dash of pepper and cook until soft, about 3 minutes. Add the carrots, fennel and parsnip and cook until the vegetables are brightly colored, 2 to 3 minutes. Add the garlic and when fragrant, stir in the flour. Cook for about 5 minutes, stirring constantly. Add the sherry and scrape up any bits stuck to the pan. When the liquid has almost evaporated, stir in the chicken stock and milk and cook, stirring, until the sauce is thick enough to coat the back of a spoon, about 10 minutes. If the sauce becomes too thick, add more chicken stock to reach the desired consistency. Remove from the heat and stir in the chicken, peas, parsley, thyme, 1 tablespoon salt and 1/2 teaspoon pepper.
  • To assemble: Preheat the oven to 350 degrees F. On a lightly floured surface, roll the dough to a 1/4-inch-thick rectangle, about 15 inches long by 11 inches wide. If using individual ramekins, cut 6 circles in the shape of the ramekins plus an extra 1-inch overhang. If using a 9-by-13-inch pan or similar-sized shallow baking dish, cut to that shape plus an extra 1-inch overhang.
  • Pour the filling into the ramekins or pan. Lay the dough over the filling and trim to 1/2 inch from the edge. Fold the overhang under itself to create a lip around the edge and use your fingers to flute the edges, or use the tines of a fork to create an attractive edge. Alternatively, simply tuck the overhang dough into the side of the pan. Cut a 1-inch vent hole in each small pie or four to six 1-inch vent holes in a large pie.
  • In a small bowl, lightly beat the egg with 1 tablespoon water. Lightly brush the pie crust with the beaten egg.
  • Bake until the crust is golden brown and the filling is bubbly, 45 to 50 minutes for small pies and about 60 minutes for a large pie.

6 baby yellow potatoes, quartered
3 medium carrots, peeled and chopped into larger chunks
2 parsnips, peeled and chopped into larger chunks
1 fennel bulb, cut in half and cored, then thinly sliced
1 small onion, cut into medium chunks
4 whole cloves of garlic, papers removed
Olive oil
Sea salt
Black pepper
1 tablespoon Herbes de Provence
1/2 cup chicken stock/broth
1/4 cup white wine
1 (3 1/2 - 4 pound) organic chicken, giblets removed and patted dry
1 tablespoon chopped fresh parsley or fresh thyme, for garnish

Steps:

  • Preheat the oven to 400°, and prepare a large Dutch oven or oven-safe pot.
  • Add the quartered potatoes, carrots, parsnips, fennel, onion and garlic to a large bowl, drizzle with a good splash of olive oil, and sprinkle with a couple of good pinches of salt and pepper, and about half of the Herbes de Provence; toss to coat, and scatter on the bottom of the pot.
  • Next, pour the chicken stock/broth and the wine over the veggies.
  • Place the chicken in front of you on a work surface, and drizzle it with about 2 tablespoons of olive oil, rubbing it into the skin; next, season all sides of the bird and the cavity with a total of about 2-3 teaspoons of the sea salt and about 1 teaspoon of black pepper (you need to season this much meat quite liberally), then sprinkle over the rest of the Herbes de Provence.
  • Tuck the wing tips behind the chicken, and simply tie the legs together with some kitchen twine to help keep the chicken more "together" as it roasts; then, insert a digital thermometer into the thickest part of the breast horizontally, taking care not to touch the bone.
  • Place the chicken, breast-side up, on top of the vegetables, and place the pot into the oven (uncovered), and roast until the temperature registers 165° (roughly 1 ½ hours, depending on the size of your chicken).
  • Once roasted, using tongs or two spoons, carefully tip the chicken forward so that any accumulated juices run out of the cavity and onto the veggies, then allow the chicken to rest for about 15-20 minutes.
  • Once rested, sprinkle the herbs over top and serve, cutting slices of chicken and enjoying spoonfuls of veggies in sauce alongside. (I'll usually lift the chicken out of the pot and set it on a board for a moment, and give the veggies a little stir to incorporate them with the juices; then, I return the chicken back on top of the veggies and serve.)

1 frozen bag caldo medley frozen vegetables (has onion, carrot, celery, small red potatoes and corn on the cob segments)-I found it at Kroger, but you could use any medley of hardy vegetables.

lemon juice
Chiavetta's marinade (a local product from Buffalo, NY area. You can order it online, or use a tasty, vinegar based marinade of your choosing)

Steps:

  • 1. Put bag of caldo medley in slow cooker, but separate the corn and potatoes, so the carrots, celery, and onions are covering the bottom. 2. Rinse chicken, and cover in seasonings (chicken seasoning, garlic salt, black pepper, parsley) 3. Put chicken in slow cooker, and place corn and potatoes around it in the pot. 4. Add a few dashes of lemon juice and marinade. You don't need a lot. 5. Put cooker on heating element, set to 5 or as high as it will go, for 4-5 hours, or until internal temp of chicken is 180 degrees. 6. After removing chicken and vegetables, reduce liquid and thicken with a slurry.

2 tbsp olive oil
2.4kg chicken - buy the best you can afford
4 onions, peeled and cut into large wedges
½ bunch thyme
3 garlic cloves
6 peppercorns
175ml white wine
1.2l chicken stock

Steps:

  • Heat oven to 170C/150C fan/gas 5. Heat the oil in a large flameproof casserole dish and brown the chicken well on all sides, then sit it breast-side up. Pack in the onions, thyme, garlic and peppercorns, pour over the wine and stock, and bring to the boil. Pop on the lid and transfer to the oven for 2 hrs.
  • Remove and rest for 20 mins. Carefully lift the chicken onto a chopping board and carve as much as you need. Serve the carved chicken in a shallow bowl with the onions and some of the stock poured over. Serve with some usual Sunday veg and roast potatoes.
  • Strain the leftover stock into a bowl and strip the carcass of all the chicken. Chill both for up to three days or freeze for up to a month to use for other recipes like our one-pot chicken noodle soup.

1 chicken (about 3 lbs give or take)
1/2 cup red wine or 1/2 cup white wine
3 garlic cloves, peeled
1/2 small white onion
1 celery, cut in half
1 carrot, cut in half
1 dash herbes de provence, thyme or 1 dash herbs, combination of your choice

Steps:

  • Crumple three pieces of aluminum foil and place in the middle of your slow cooker.
  • Add wine, garlic, onion, celery and carrot.
  • Place chicken on top of aluminum foil. (You may have to push the chicken down a bit so it'll all fit in there!).
  • Sprinkle chicken with herbs, salt and pepper.
  • Set slow cooker to high and cook for 1/2 hour per pound.
  • When ready, stick a meat thermometer into leg to ensure it is done. Transfer chicken to a roasting pan and set oven to 500º Fahrenheit.
  • Roast for 8-10 minutes, or until skin is golden brown.
  • Serve with roast root vegetables, mashed potatoes, or anything else you'd like!
  • The best part of this recipe? After your done cooking everything, you'll have a considerable amount of jus left over from the chicken. Whisk it with some cornstarch for a truly delicious gravy, or save it in your fridge or freezer for at-the-ready soup stock when you need it in a pinch. (It's so much better than bouillon.).

1/3 cup dry white wine
1 whole chicken (3 to 4 pounds), rinsed and patted dry (giblets removed)
1 tablespoon butter, room temperature
Coarse salt and ground pepper
2 leeks (white and light-green parts only), halved lengthwise, rinsed well, and cut into 2-inch pieces
10 baby carrots or 5 carrots, halved if large and cut into 2 1/2-inch lengths
5 garlic cloves, unpeeled
1 tablespoon extra-virgin olive oil
1 pound new potatoes, halved (quartered if large)

Steps:

  • Preheat oven to 450 degrees. In a 5-quart Dutch oven or heavy pot, combine broth and wine. Rub chicken all over with butter and season generously with salt and pepper. Tie legs together with kitchen twine. Place chicken in pot. Bake, uncovered, 30 minutes.
  • In a large bowl, toss leeks, carrots, and garlic with oil; season with salt and pepper. Remove pot from oven and add vegetables. Bake until chicken's juices run clear when pierced between breast and leg or an instant-read thermometer inserted in thickest part of a thigh (avoiding bone) registers 165, 35 to 45 minutes. Let chicken rest 10 minutes.
  • Meanwhile, set a steamer basket in a large pot filled with 2 inches boiling water. Place potatoes in basket, cover, and steam until tender, about 15 minutes. Season with salt and pepper. Carve chicken and serve with vegetables and pan juices.

Chicken cooked pot roast style, with a wonderful savory sauce. I was inspired to invent this when I bought a friend's homemade mustard at my local Farmer's Market. It turned out delicious and different enuf I thot it was worth posting.

1 whole chicken, cut into pieces
1 onion, chopped
2 -3 garlic cloves, chopped
2 tablespoons olive oil
1 tablespoon Worcestershire sauce
1 teaspoon rice vinegar
1/4 cup strong coffee
3/4 cup chicken broth
1 bay leaf
1 teaspoon basil
1/4 teaspoon pepper
1 tablespoon soy sauce (I use dark, mushroom-flavored available at asian markets)
1 tablespoon capers
1 tablespoon prepared mustard (whole-grain is great)

Steps:

  • Heat olive oil in a heavy, dutch oven-type pan. Saute onion and garlic until transparent.
  • Add chicken pieces a few at a time and brown them.
  • Add the remaining ingredients except for mustard. Liquid should be about halfway up the meat.
  • Heat until simmering.
  • Cover the pan and turn the heat to low.
  • Cook for 1 1/2 - 2 hours until meat is tender. Check once or twice and add broth if liquid is be,ow half-way up chicken.
  • Take off cover, remove chicken, add mustard to liquid. Return chicken to pan and simmer for 5 more minutes.
