I found this wonderful recipe on another website by someone named Gina. Mashed potatoes and a green vegetable would round this meal out nicely.

Steps:
- Butterfly each breast and place in a large glass pan.
- Combine sour cream, worcestershire sauce, cayenne, paprika, salt, pepper, marjoram, thyme and soy sauce and pour over chicken, making sure each piece is coated.
- Marinate overnight.
- Next day remove chicken from marinade, and shake off any excess.
- Place a pat of butter in the middle of each chicken breast and roll up.
- Roll in bread crumbs and fit snugly in an 8-inch square baking pan.
- Bake for 1 hour at 325 degrees.

- Place the chicken cutlets flat on the work surface. Sprinkle the chicken with salt and pepper. Lay 1 slice of prosciutto atop each chicken cutlet.
- Squeeze the frozen spinach to remove the excess water. Season the spinach with salt and pepper. In a small bowl, toss the spinach with 1 tablespoon of oil to coat.
- Arrange an even, thin layer of spinach atop the prosciutto slices. Sprinkle the Parmesan evenly over each. Beginning at the short tapered end, roll up each chicken cutlet as for a jellyroll. Secure with a toothpick.
- Heat the remaining 2 tablespoons of oil in a heavy large skillet over high heat. Add the chicken and cook just until golden brown, about 2 minutes per side. Add the chicken broth and lemon juice, and scrape the browned bits off the bottom of the pan with a wooden spoon. Bring the liquid to a boil. Reduce the heat to medium. Cover and simmer until the chicken is just cooked through, about 8 to 10 minutes. Transfer the chicken to a platter. Simmer the cooking liquid over high heat until it is reduced to about 2/3 cup, about 5 minutes. Season the cooking liquid with salt and pepper, to taste. Remove toothpicks from the chicken. Drizzle the reduced cooking liquid over the chicken and serve immediately.

SAN SEBASTIAN CHICKEN IN DILL MUSTARD SAUCE
We love the San Sebastian Winery in St. Augustine, Florida and try to attend tastings at least once or twice a year. This is a recipe they sent in an email that they have for their Reserva white wine. *NOTE* I made this using 12 drumsticks and they took about 15 minutes to brown in a jumbo frying pan. I used a Chardonnay wine and substituted one tablespoon dried, chopped dill for the fresh dill which resulted in a flavorful but not overwhelming sauce. It was delicious!

Steps:
- Whisk together flour, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a shallow bowl.
- Pat chicken dry, then dredge legs, one at a time, in flour, shaking off excess. Transfer to a sheet of wax paper, arranging chicken in 1 layer.
- Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown chicken, skin sides down first, turning over once, 6 to 8 minutes total.
- Transfer chicken to a plate, then pour off all but 1 tablespoon fat from skillet.
- Add shallots to skillet and sauté, stirring occasionally, until golden brown, 2 to 3 minutes.
- Add wine and deglaze skillet by boiling, stirring and scraping up brown bits.
- Add broth, mustard, and remaining 1/4 teaspoon salt and pepper.
- Bring to a simmer, then return chicken to skillet, skin sides up, along with any juices from plate, and cook over moderate heat, covered, until chicken is cooked through, about 25 minutes.
- Transfer chicken to a platter and boil sauce until reduced to about 1 cup and slightly thickened, 3 to 5 minutes.
- Remove from heat and stir in dill, then pour sauce over chicken.
- Serve with seasonal vegetables and a glass of San Sebastian Reserva or your favorite dry white wine.

This is an incredibly, delicious chicken dish. I have make it twice, once using regular fresh spinach and once with the fresh baby spinach and I highly recommend using the baby. You're gonna love this!!!!

- CHICKEN: Heat oil in skillet.
- Mix flour, salt& pepper.
- Light beat egg& water.
- Dredge each chicken piece in flour, then dip each side of chicken in egg wash.
- Place in pan in single layer& saute to a golden brown, turning once.

- Broil chicken 4 to 5 inches from the heat 2 to 3 minutes or until cheese bubbles& is light golden brown.

THREE CUP CHICKEN (SAN BEI JI)
This Taiwanese classic Three Cup Chicken recipe gets its name from the generous amounts of soy sauce, sesame oil, and rice wine it calls for.

- Heat the oil in a large skillet or wok over medium-high heat. Add the ginger, garlic, scallions, and chilies, if using, and cook until just fragrant, about 1 minute.
- Add the chicken pieces and lightly brown, stirring occasionally, 2 to 3 minutes.
- Add the rice wine, soy sauce and sugar and bring to a boil, stirring occasionally.
- Reduce the heat to a simmer and cook, covered, until the chicken pieces are cooked through and the sauce has reduced to a thick, slightly syrupy consistency, about 15 minutes. If the sauce is not thick enough, continue cooking uncovered, stirring occasionally, until it has reduced to your desired consistency.
- Stir in the basil and remove from heat. Serve immediately with the rice.
CHICKEN IN CHEESY SAMBUCA SAUCE
This is the chicken version of one of my other recipes. Very quick to prepare and cook, this makes a super dish for parties, or, when you need to impress those who might doubt your ability.

- Heat the oil in a frying pan and fry the chicken till done.
- Remove from pan and keep warm.
- Fry the sliced fennel till just soft, 3 minutes set aside.
- De glaze the pan with the Sambuca, add the cream.
- Add the cheese and stir till it has melted and incorporated into the sauce.
- Adjust the seasoning to taste.
- Replace the chicken and fennel, heat through.
- The sauce may be adjusted by adding more cream or Sambuca to your liking.
- Serve with sauteed potatoes and a green vegetable.

- Heat 1 tablespoon oil in a large skillet over medium high heat. Saute mushrooms until golden; remove from skillet with a slotted spoon and set aside.
- Add another 2 tablespoons oil to skillet. Saute onion, garlic and shrimp until opaque. Remove from skillet and add to mushrooms.
