EASY CHICKEN SAUSAGE PENNE PASTA RECIPE



Easy Chicken Sausage Penne Pasta Recipe image

An easy to make, 15 minute meal that is the perfect comfort food recipe for any day of the week!

4 ounces penne pasta
3/4 tablespoons olive oil
1/4 cup diced onion
1/4 cup diced red, yellow or orange bell pepper
1/2 pound chicken sausage full, brat size links, cut into bite-sized pieces
1 large clove of garlic, minced
1 1/2 cups pasta sauce
1/4 cup Parmesan cheese
2 1/2 cups baby spinach
3/4 cup shredded Italian blend cheese
Chopped parsley, to garnish

Steps:

  • In a stock pot bring 2 quarts of water to boil. Season with salt. When the water comes to a full boil add the penne pasta and cook until al dente consistency, approximately 9-11 minutes.
  • While the pasta is cooking, heat the olive oil in a large skillet or electric skillet. Once hot, add the diced onion, diced sweet bell pepper and sausage pieces. Cook until the sausage is just cooked through. Add the minced garlic and cook for 1 additional minute.
  • Add the pasta sauce and stir. Heat the pasta sauce for 3-4 minutes, stirring frequently.
  • Stir in the Parmesan cheese and baby spinach. Cook until the spinach is wilted, 3-4 minutes.
  • Drain cooked pasta sauce and add it to the skillet. Stir and coat the pasta with the sauce.
  • Sprinkle the Italian blend cheese on top and cover the skillet with a lid until the cheese melts.
  • Garnish with chopped fresh parsley and additional Parmesan cheese, if desired.

1 skinless, boneless chicken breast half
½ teaspoon Cajun seasoning, or to taste
1 link pork sausage with jalapeno pepper
4 ounces farfalle (bow tie) pasta
2 tablespoons butter
1 green bell pepper, chopped
½ red bell pepper, chopped
½ onion, chopped
1 clove garlic, chopped
1 ½ cups fat-free half-and-half, divided
1 tablespoon cornstarch, or as needed
1 pinch Cajun seasoning, or to taste
1 pinch dried basil, or to taste

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Sprinkle both sides of chicken breast with 1/2 teaspoon Cajun seasoning, or to taste.
  • Grill chicken breast and pork sausage on the preheated grill until browned and no longer pink inside, about 5 minutes per side. Transfer to a plate and let rest for 5 minutes. Cut chicken and sausage into bite-size pieces.
  • Bring a large pot of lightly salted water to a boil. Cook the farfalle pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes; drain.
  • Melt butter in a large skillet over medium heat. Cook and stir green bell pepper, red bell pepper, onion, and garlic in hot butter until slightly softened, 2 to 3 minutes. Stir chicken and sausage pieces into vegetables, reduce heat to medium-low, and pour 1 cup half-and-half into skillet. Stir to combine.
  • Mix cornstarch into remaining 1/2 cup half-and-half in a small bowl until smooth; pour into skillet and stir until sauce simmers and thickens, about 5 minutes. Toss cooked farfalle pasta into mixture until coated; season with additional Cajun seasoning and dried basil.
