A Middle Eastern low fat recipe for marinated chicken breasts, which can be baked in the oven or skewered with mushrooms and barbequed. They taste great with pita bread and some pickled turnips.

3 tablespoons vegetable oil
2 tablespoons plain low-fat yogurt
2 tablespoons ketchup
2 tablespoons prepared mustard
1 ½ teaspoons garlic powder
2 teaspoons paprika
1 ½ teaspoons ground allspice
½ teaspoon black pepper
¼ teaspoon ground cinnamon
¼ teaspoon curry powder
3 pounds skinless, boneless chicken breast halves - cut into bite-size pieces
½ cup mayonnaise
1 cup plain low-fat yogurt
3 cloves garlic, minced
¼ teaspoon salt

Steps:

  • In a medium bowl, stir together oil, yogurt, ketchup, and mustard. Season with garlic powder, paprika, allspice, black pepper, cinnamon, and curry powder. Stir in chicken pieces, coating all sides with marinade. Cover bowl, and refrigerate overnight.
  • To make dipping sauce, mix together mayonnaise, yogurt, garlic, and salt. Cover, and refrigerate.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Transfer chicken pieces to a shallow baking dish. Bake in a preheated oven 30 minutes.

2 pounds boneless skinless chicken breast (cut into large chunks)
½ cup plain whole milk yogurt
¼ cup lemon juice
¼ cup olive oil
6 garlic cloves (crushed)
1 tablespoon tomato paste
1 teaspoon paprika
¾ teaspoon cinnamon
½ teaspoon oregano
½ teaspoon ground ginger
1 teaspoon salt
¼ teaspoon black pepper

Steps:

  • In a large bowl, add the ingredients for the marinade (yogurt, lemon juice, olive oil, garlic, tomato paste, all the seasoning and salt/pepper) and whisk to combine.
  • Place the chicken cubes in the same bowl and coat the chicken in the marinade. Cover, and let rest/marinate in the fridge for at least 4 hours.
  • Thread the chicken on skewers right before grilling. Add one wedge of onions to each skewer, if desired.
  • Grill on medium heat for 5-8 minutes per side.
  • Serve with pita bread, lettuce and garlic sauce, if desired.

¼ cup vegetable oil
¾ cup plain yogurt
4 cloves garlic, minced

  • Preheat an outdoor grill for medium-high heat and lightly oil grate. Thread the chicken, onions, and pepper onto metal skewers. Cook on preheated grill until the chicken is golden and no longer pink in the center, about 5 minutes each side. Sprinkle the parsley over the skewers.

5 skewers, for chicken
pita bread, for chicken
3 sliced tomatoes, for sandwich
3 pieces lettuce
3 stalks green onions
3 medium sliced pickles
3 tablespoons olive oil
3 tablespoons sour cream
2 tablespoons ketchup
2 tablespoons mustard
1 1/2 teaspoons garlic powder

  • **Prepare the marinade by mixing all of the ingredients together (except pita bread) then adding the chicken cubes into the mixture. make sure you mix it well when adding the chicken. Store in the fridge for a few hours. although you should take it out an hour before cooking. when ready to bake,set the oven on 400 degrees. place chicken on skewers then bake for 30 minutes (or until chciken looks ready).
  • **Prepare the garlic spread by mixing the (garlic gloves,lemon juice & salt) in a blender. blend for 1-2 minutes.while its still blending, gradually add the veg oil & olive oil untill you start to see it thicken up. when done, add tahinah into the mixture & blend. finally,add the mayo then whip it with a spoon or fork. Place in fridge for 1 hour.
  • **When making the sandwich, put the garlic spread first onto the pita bread then add chciken & any veggy you desire.
