Nothing fancy here, just a simple, great comfort food for a long Canadian winter. I used to come inside to this piping hot soup after a day on the outdoor rink. Serve with bread or crackers.

2 tablespoons olive oil
1 large white onion, minced
6 cups chicken broth
6 cups tomato juice
2 cups canned diced tomatoes
1 cup water
2 white potatoes, cubed
1 cup cauliflower florets
1 cup diced celery
2 tablespoons herbes de Provence
1 tablespoon white sugar
1 tablespoon salt
1 tablespoon ground black pepper
2 bay leaves
1 cup elbow macaroni

Steps:

  • Heat the olive oil in a large soup pot over medium-low heat; cook and stir onion in the oil until translucent, about 5 minutes. Stir chicken broth, tomato juice, diced tomatoes, and water into the pot; bring to a boil.
  • Stir potatoes, cauliflower, celery, herbes de Provence, sugar, salt, black pepper, and bay leaves into the pot; reduce heat, cover, and simmer, stirring occasionally, for 1 hour.
  • Return soup to a boil, stir in macaroni, and cook until macaroni is tender yet firm to the bite, about 6 minutes. Remove soup from heat; let stand for 5 minutes before serving.

4 boneless skinless chicken breasts (cut into thirds)
2 cups carrots (peeled and sliced)
1 medium sweet onion (diced)
1 fennel bulb (thinly sliced (optional))
3 stalks celery (sliced)
3-4 cloves garlic (minced)
3 Tbsp. extra virgin olive oil
½ teaspoon dried thyme
1 bay leaf
8 cups chicken broth
1 cup water
Salt and freshly ground black pepper (to taste)
¾ cup uncooked elbow macaroni pasta (I use DeLallo brand)
6 Tbsp. fresh chopped basil

Steps:

  • In a large crock pot, add chicken breasts, carrots, onion, fennel, celery, garlic, olive oil, thyme and a bay leaf.
  • Pour chicken broth and water over the chicken mixture and season heavily with salt and pepper to taste.
  • Cover and cook on low heat 3-4 hours.
  • Remove cooked chicken breasts with a slotted spoon and set aside; shred with a fork.
  • In the hot broth, add the elbow macaroni pasta and basil. Cooke until the noodles are tender, about 8-10 minutes (on low heat).
  • Add the chicken back in; gently mix together. Serve with fresh Parmesan cheese!

I found this recipe while browsing through my Betty Crocker cookbook and thought it sounded tasty. I love that you don't have to pre-cook the pasta. The original recipe called for curry powder but I also like it with chili powder for something totally different (if using chili powder, you will want to double the amount). Also a good use for that leftover holiday turkey!

1 (10 3/4 ounce) can condensed cream of chicken soup (I use low sodium, 98% fat free)
7 ounces elbow macaroni, uncooked
1 (4 ounce) can mushroom pieces, undrained
1 (2 ounce) jar diced pimentos, undrained

Steps:

  • Preheat oven to 350°F.
  • Mix all ingredients together in an ungreased 11"x7" casserole dish.
  • Cover and bake until macaroni is tender, about 55 minutes.

1 lb chicken breast, in bite sizes
1/2 cup evaporated milk
2 tablespoons butter
1 tablespoon of minced garlic
1 medium onion, finely chopped
1/2 cup sliced carrot
1 knorr chicken chicken bouillon cube
salt and pepper
1 tablespoon fish sauce (optional)
8 -10 cups water

Steps:

  • Boil water in a pot, add chicken until cooked and set aside.
  • In med heat, add the butter, onion, garlic and carrots.
  • Add elbow macaroni, raise the heat to high, stirring often until macaroni is cooked.
  • Add back the chicken and Knorr Chicken Cube to boil and simmer.
  • Stir in evaporated milk to boil and simmer.
  • Season with salt and pepper or fish sauce.
