QUICK AND EASY CHICKEN SPAGHETTI
A quick and easy recipe that has a wonderful southern snap and yet is smooth and hearty! A great way to use last night's leftover chicken!

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and return to pot.
- To the pasta add the diced tomatoes with green chile peppers, cream of chicken soup, processed cheese, chopped chicken, mushrooms, salt and pepper. Cook and stir over low heat until cheese is melted and mixture is heated through.

- In a large skillet, stir-fry chicken in 2 tablespoons oil about 6-8 minutes or until chicken is no longer pink; drain. Remove and keep warm; , In the same skillet; saute the green pepper, onion and garlic in remaining oil until vegetables are tender. Add the tomatoes, tomato sauce, mushrooms and seasonings; bring to a boil. Reduce heat; return chicken to the pan and heat through. Serve with spaghetti.

CHICKEN AND SPAGHETTI DINNER
Easy, tasty dinner. Nice with a salad and crusty bread. I don't remember how long ago I got this recipe. Everyone had a version of it.

Steps:
- Preheat oven to 350 degrees.
- Heat the oil and butter in a large skillet.
- Sprinkle the chicken pieces with garlic salt and pepper.
- Brown the chicken over medium heat, and transfer to a 13 x 9 baking dish.
- In the same skillet, saute the mushrooms, onions, peppers, and celery, until tender, about 7 minutes.
- Stir in the sauce, and heat for 5 minutes.
- Pour over the chicken, and bake for 30 minutes, or until chicken is no longer pink.
- Serve over the spaghetti, sprinkle with Parmesan.

Steps:
- Cut chicken into 1/2" strips.
- In a large skillet, heat 2 tablespoons of oil; stir-fry chicken until no longer pink, about 6-8 minutes.
- Remove and keep warm; drain drippings.
- Add remaining oil to skillet; saute green pepper, onion and garlic until tender.
- Add tomatoes, tomato sauce, mushrooms and seasonings; bring to a boil.
- Return chicken to the pan and heat through. Serve over spaghetti.
- Yield: 4-6 servings.
