Quick and Easy Chicken Spaghetti image

A quick and easy recipe that has a wonderful southern snap and yet is smooth and hearty! A great way to use last night's leftover chicken!

1 (12 ounce) package angel hair pasta
1 (10 ounce) can diced tomatoes with green chile peppers
1 (10.75 ounce) can condensed cream of chicken soup
¾ (8 ounce) package processed cheese, cubed
2 cups chopped cooked chicken breast
½ (4 ounce) jar sliced mushrooms, drained
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and return to pot.
  • To the pasta add the diced tomatoes with green chile peppers, cream of chicken soup, processed cheese, chopped chicken, mushrooms, salt and pepper. Cook and stir over low heat until cheese is melted and mixture is heated through.

6 boneless skinless chicken breast halves (4 ounces each), cut into 1/2 inch strips
3 tablespoons canola oil, divided
1/2 cup julienned green pepper
1/2 cup sliced onion
2 garlic cloves, minced
1 can (14-1/2 ounces) Italian diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 jar (4-1/2 ounces) sliced mushrooms, drained
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon pepper
6 cups cooked spaghetti

Steps:

  • In a large skillet, stir-fry chicken in 2 tablespoons oil about 6-8 minutes or until chicken is no longer pink; drain. Remove and keep warm; , In the same skillet; saute the green pepper, onion and garlic in remaining oil until vegetables are tender. Add the tomatoes, tomato sauce, mushrooms and seasonings; bring to a boil. Reduce heat; return chicken to the pan and heat through. Serve with spaghetti.

1 fryer, skinned and cut into 8 pieces
1 teaspoon garlic salt
1/2 teaspoon fresh ground black pepper
1 tablespoon unsalted butter
2 tablespoons olive oil
1 1/2 cups sliced mixed mushrooms (porcini, portobello, white)
1 1/2 cups sliced onions
1 1/2 cups sliced green peppers
1/2 cup chopped celery
2 cups spaghetti sauce
8 ounces cooked spaghetti
freshly grated parmigiano-reggiano cheese

Steps:

  • Preheat oven to 350 degrees.
  • Heat the oil and butter in a large skillet.
  • Sprinkle the chicken pieces with garlic salt and pepper.
  • Brown the chicken over medium heat, and transfer to a 13 x 9 baking dish.
  • In the same skillet, saute the mushrooms, onions, peppers, and celery, until tender, about 7 minutes.
  • Stir in the sauce, and heat for 5 minutes.
  • Pour over the chicken, and bake for 30 minutes, or until chicken is no longer pink.
  • Serve over the spaghetti, sprinkle with Parmesan.

1/2 cup julienned green pepper
