1 lb chicken breast, cubed
salt, to taste
pepper, to taste
1 lb broccoli florets
8 oz mushroom, sliced
3 tablespoons oil, for frying
3 cloves garlic, minced
1 tablespoon ginger, minced
2 teaspoons sesame oil
⅓ cup reduced sodium soy sauce
1 tablespoon brown sugar
1 cup chicken broth
¼ cup flour

Steps:

  • In a large pan on medium-high heat, add 1 tablespoon of oil. Once the oil is hot, add chicken, season with salt and pepper, and sauté until cooked through and browned. Remove cooked chicken from pan and set aside.
  • In the same pan, heat 1 tablespoon of oil and add mushrooms. When the mushrooms start to soften, add broccoli florets and stir-fry until the broccoli is tender. Remove cooked mushrooms and broccoli from the pan and set aside.
  • Add 1 tablespoon of oil to the pan and sauté garlic and ginger until fragrant. Add the remaining sauce ingredients and stir until smooth.
  • Return the chicken and vegetables to the saucy pan, stir until heated through.
  • Serve with hot rice or noodles.

4 pita bread rounds

Steps:

  • Cut chicken tenders in half lengthwise and crosswise.
  • Coat large nonstick skillet with nonstick cooking spray.
  • Cook and stir chicken over medium heat 3 minutes.
  • Add onion and bell pepper; cook and stir 2 minutes.
  • Add Italian dressing and red pepper flakes; cover and cook 3 minutes.
  • Remove from heat; uncover and let cool 5 minutes.
  • While chicken mixture is cooling, cut pita breads in half to form pockets.
  • Line each pocket with lettuce leaf.
  • Spoon chicken filling into pockets; sprinkle with feta cheese.

I found this recipe in our local supermarket flyer and thought it looked like a quick and easy meal!

4 cups cold cooked rice
1 cup chopped green onion
1 cup chopped celery
1 cup chopped carrot
2 tablespoons sesame oil
1/2 teaspoon garlic powder
1 lb chicken (chopped)
4 tablespoons soy sauce (divided)
1 beaten egg, with
1 teaspoon water

Steps:

  • Before stir frying, make sure the rice is cooked and cooled and the onions, celery and carrots are chopped!
  • (stir frying goes fast) Combine the sesame oil and garlic powder in a bowl and add chicken to marinate briefly while wok or skillet is heating.
  • Heat electric skillet or wok to about 375 degrees and add chicken.
  • Stir chicken and cook for about 5- 7 minutes.
  • Add onions, celery, carrots and 2 tablespoons of the soy sauce.
  • Stir to mix and add the egg.
  • Continue mixing quickly.
  • When egg is cooked, add cold rice and remaining 2 tablespoons of soy sauce.
  • Stir-fry over high heat until rice is hot.
  • Serve with crisp toasted pita bread.

3 tablespoons cornstarch
2 tablespoons soy sauce
1/2 teaspoon ground ginger

3 tablespoons canola oil, divided
2 cups fresh broccoli florets
1 cup sliced celery (1/2-inch pieces)
1 cup thinly sliced carrots
1 small onion, cut into wedges
1 cup water
1 teaspoon chicken bouillon granules

Steps:

  • Cut chicken into 1/2-in. strips; place in a resealable plastic bag. Add cornstarch and toss to coat. Combine the soy sauce, ginger and garlic powder; add to bag and shake well. Refrigerate for 30 minutes. , In a large skillet or wok, heat 2 tablespoons of oil; stir-fry chicken until no longer pink, about 3-5 minutes. 1 cup chopped fresh broccoli
1 cup fresh snow peas

1/4 cup white wine or chicken broth

2 cups white wine
4 cloves garlic, whole
2 teaspoons rosemary
Salt and pepper to taste
4 medium-size skinless and boneless chicken breasts
1 ripe avocado
1 cup plain yogurt
6 leaves fresh mint (or 2 teaspoons dry mint)
Juice of 1/2 lemon
2 extra large pita bread (or four individually sized)
1 head of lettuce
1 large ripe tomato

Steps:

  • In a pan pour wine and add garlic, rosemary, salt and pepper. Bring to a boil and simmer 5 minutes.
  • Add chicken and poach until cooked throughout but not dry. About 10 to 15 minutes. Let it cool in broth.
  • In a blender puree the sliced avocado, yogurt, mint, salt and pepper. Add lemon juice and mix with a spoon.
  • Remove chicken from broth and dice meat.
  • Cut open pita bread, add chicken, sliced tomatoes and lettuce. Pour sauce over mixture.
