Categories     Dairy Free     Dinner     Gluten Free     Lunch

Time 1h15m

Number Of Ingredients 36

For the sazon chicken:
1 pounds boneless skinless chicken thighs
1 tablespoons olive oil
1 teaspoon cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1/2 teaspoon garlic powder
1/2 teaspoon oregano
Optional: ¼ teaspoon cayenne (only if you like a little heat)
½ teaspoon salt
Freshly ground black pepper
For the grilled corn:
2 ears of corn, washed
2 tsp olive oil
½ teaspoon cumin
½ teaspoon chili powder
For the salsa:
1 avocado, diced
1 jalapeno, thinly sliced
1/3 cup finely diced cilantro
¼ cup finely diced red onion
1 lime, juiced
Freshly ground salt and pepper, to taste
For the jalapeno lime cashew sauce:
1/2 cup raw cashews
1/3 cup water, plus more to thin if necessary
1 medium jalapeno, seeded
1 clove garlic
2 tablespoons fresh lime juice
3/4 teaspoon salt
1/4 teaspoon onion powder
Freshly ground black pepper
For serving:
8 soft corn tortillas
Extra thinly sliced jalapenos
Extra cilantro

Steps:

  • Soak the cashews in 2 cups of warm water for at least 2 hours; otherwise I've found that you can easily speed up the process by adding the raw cashews to a pot with water and placing over high heat. Bring water to a boil, then immediately turn off the heat; let the cashews sit for about 30 minutes in the hot water, then drain.
  • Once the cashews have finished soaking you'll be ready to make the sauce: add drained cashews, fresh water, jalapeno, garlic, fresh lime juice, salt, onion powder and black pepper to a blender. Blend on high until sauce comes together. If you want a bit of a thinner sauce, add 1-2 tablespoons more water. Set aside.
  • While your cashews are soaking, you can marinate your chicken: in a large bowl add chicken, olive oil, cumin, coriander, turmeric, garlic powder, oregano, cayenne, salt and pepper. Toss together to coat the chicken and allow it to marinate for 30 minutes-1 hour, or up to 24 hours.
  • Next prepare your corn: drizzle corn with olive oil and rub with chili powder, cumin and salt and pepper.
  • Now it's time to grill both the chicken and the corn: preheat grill to 400 degrees F. Place the corn and chicken directly on the grill. Turn corn occasionally until charred and cooked for about 15-20 minutes. Grill chicken thighs for 6-8 minutes per side or until fully cooked and the meat thermometer reads 165 degrees F. Transfer cooked chicken to a plate and cover with foil to keep warm, then chop into bite sized pieces.
  • Allow corn to cool a bit before cutting it off the cob and placing corn into a medium bowl along with following ingredients for the salsa: diced or sliced avocado, jalapeno, cilantro, red onion, lime and salt and pepper, to taste. Toss to combine.
  • Char your tortillas if you'd like, then top each with a spoonful of the jalapeno cashew lime sauce, chicken, street corn mixture, extra jalapenos and an extra drizzle of cashew lime sauce on top. Enjoy! Serves 4; 2 street corn chicken tacos each.

MEXICAN STREET CORN CHICKEN TACOS

Mexican Street Corn Chicken Tacos image

Inspired from one of our favorite side dishes these Mexican Street Corn Chicken Tacos have flavorfully spiced chicken, corn salad, & a creamy avocado sauce, all wrapped up in a homemade corn tortilla!

Provided by Tracy

Categories     Main Course

Time 20m

Number Of Ingredients 19

1 1/2 lbs boneless chicken (sliced into strips )
1 batch Homemade Taco Seasoning
1 tablespoon olive oil
2 ears corn
2 roma tomatoes (1/3-1/2 cup)
1/2 cup red onion, diced
1 tablespoon jalapeno, minced
1 tablespoon fresh cilantro, chopped
1/2 teaspoon salt
1 tablespoon mayonnaise (or sour cream)
1 tablespoon fresh lime juice
2 avocados
1/4 cup sour cream
2 teaspoons fresh lime juice
3 tablespoons fresh cilantro (lightly packed )
pinch salt
pinch cumin
10 Corn or Flour Tortillas
1 - 1 1/2 cups Cotija cheese (crumbled )

Steps:

  • Add all ingredients for avocado cream sauce to a food processor and blend until creamy. Set aside.
  • Grill corn. If grilling full corn, preheat grill (or grill pan) to high and heat for 10 minutes. Add corn and cook, turning often, until charred all over, about 10 minutes. See recipe notes for how to cook after removing corn from cobs.
  • Remove corn from cobs and add diced tomatoes, onion, jalapeno, mayonnaise (or sour cream), lime juice, and salt to a bowl and mix well.
  • Mix taco seasoning (cumin, paprika, onion powder, chili powder, cayenne, and salt) in a small bowl.
  • Heat oil in cast iron or skillet over medium. Add strips of chicken to pan.
  • Cook for about 4 minutes on one side and then sprinkle on taco seasoning over all of the chicken. Give it all a good mix so all of the chicken is coated, and then finish cooking for another 3-4 minutes or until the internal temperature (of the biggest piece) reaches 165 degrees.
  • With a taco sized corn or flour tortilla, add strips of chicken, top with the corn salad, a drizzle of avocado cream, and top with crumbled cotija cheese.
  • Enjoy!

CHICKEN & SWEETCORN TACOS

Chicken & sweetcorn tacos image

Serve up these healthy chicken and sweetcorn tacos for an easy midweek meal that's full of flavour. You'll also have leftovers to make chicken and sweetcorn wraps for lunch tomorrow

Provided by Anna Glover

Categories     Dinner, Lunch, Supper

Time 1h

Yield Serves 4, plus 2 lunchboxes

Number Of Ingredients 12

250g plain flour , plus extra for dusting
2 tbsp rapeseed oil
2 tbsp taco or fajita seasoning (see tip, below)
5-6 skinless chicken breasts, sliced
¼ red cabbage , finely shredded
3 limes , 1 juiced, 2 cut into wedges
small bunch of coriander , chopped
4 sweetcorn cob , kernels sliced off, or 400g frozen sweetcorn
400g can black beans , drained and rinsed
2 garlic cloves , crushed
4 tbsp fat-free yogurt , to serve
chilli sauce , to serve

Steps:

  • Combine the flour with half the oil and a small pinch of salt in a bowl. Pour over 125-150ml warm water, then bring together into a soft dough with your hands. Cut into six equal pieces, then cut four of the pieces in half again, so you have eight small pieces and two large. Roll all the pieces out on a floured work surface until they're as thin as you can get them.
  • Heat a dry frying pan over a medium-high heat and cook the small and large tortillas for 2-3 mins on each side until golden and toasted (do this one at a time). Leave the large tortillas to cool, then cover and reserve for use in the lunchboxes (see tip below). Keep the small tortillas warm in foil.
  • Sprinkle the taco seasoning over the chicken in a bowl, and toss to combine. Toss the cabbage with the lime juice, half the coriander and some seasoning in another bowl, then leave to pickle.
  • Meanwhile, heat two frying pans over a high heat. Divide the remaining oil between the pans and fry the sweetcorn and a pinch of salt until sizzling and turning golden, stirring occasionally - you want the sweetcorn to char slightly, as this adds flavour, so you may need to leave it to cook undisturbed for a bit. While the sweetcorn cooks and chars, fry the chicken in the larger pan until cooked through and golden (you may need to do this in batches).
  • Tip the black beans and garlic into the sweetcorn and stir to warm through. Squeeze over two of the lime wedges.
  • Reserve two spoonfuls each of the chicken (about 1 chicken breast) and sweetcorn mix for use in the lunchboxes (see tip, below), then serve the rest in bowls alongside the cabbage, yogurt, lime wedges, remaining coriander, chilli sauce and tortillas for everyone to dig into.

Soft Tacos With Chicken and Tomato-Corn Salsa image

Tomato-corn salsa is substantial, almost like a salad. These light, fresh tacos make a wonderful summer meal.

Provided by Martha Rose Shulman

Categories     dinner, easy, quick, weekday, main course

Time 15m

Yield Serves four

Number Of Ingredients 10

1/2 small red or white onion, finely chopped
1 ear of corn, steamed for five minutes
1 pound ripe tomatoes, finely chopped
1 to 3 jalapeño or serrano peppers (to taste), seeded if desired and minced
1/2 cup chopped fresh cilantro
2 tablespoons fresh lime juice
Salt to taste
1 boneless, skinless chicken breast, poached and shredded (about 2 cups)
8 corn tortillas
1/2 cup crumbled queso fresco or feta cheese

Steps:

  • Place the chopped onion in a small bowl, and cover with cold water. Let sit for five minutes, then drain and rinse with cold water. Drain on paper towels. Cut the kernels off the steamed ear of corn.
  • Toss together the tomatoes, minced chiles, cilantro, onion and steamed corn. Season to taste with salt, and add up to 1 tablespoon fresh lime juice. Place the shredded chicken in a bowl, and season with 1 tablespoon lime juice and salt to taste.

MINI CHICKEN AND CORN TACOS

Mini Chicken and Corn Tacos image

My take on the viral mini tacos. These little chicken and corn tacos bites are perfect for a party or for game day snacking. Feel free to experiment with shredded pork and/or beef instead of chicken and your favorite taco toppings!

Provided by fabeveryday

Categories     World Cuisine     Latin American     Mexican     Main Dishes     Tacos     Chicken

Time 30m

Yield 8

Number Of Ingredients 7

10 (7 inch) flour tortillas
butter-flavored cooking spray
2 ½ cups cooked, shredded chicken
1 ¼ cups whole kernel corn, drained
1 ¼ cups salsa
¾ cup shredded Mexican cheese blend
½ cup sour cream

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Spray both sides of the tortillas with butter-flavored cooking spray. Cut small circles into the tortillas using a 2 3/4-inch round cookie or biscuit cutter. You should be able to get about 3 to 4 circles from each tortilla.
  • Flip two 12-cup muffin tins upside down. Fold tortilla circles into a taco shape and arrange each into the space between 2 cups so they hold their shape. Each muffin tin will hold 17 mini tacos.
  • Bake in the preheated oven until tacos are just starting to turn golden brown and crispy, checking every few minutes to make sure they don't burn, 5 to 8 minutes.
  • Mix together chicken, corn, and salsa in a skillet and set over medium-high heat. Cook, stirring occasionally, until heated through, about 10 minutes.
  • Sprinkle cheese blend into the bottom of each taco shell, and fill with the chicken and corn mixture. Top with a dollop of sour cream.

MEXICAN STREET CORN CHICKEN TACOS RECIPE

Mexican Street Corn Chicken Tacos Recipe image

These amazing Mexican Street Corn Chicken Tacos are the best chicken tacos you'll have ever had.

Provided by Camille Beckstrand

Categories     Main Course

Time 30m

Number Of Ingredients 22

1 Tablespoon olive oil
3 boneless, skinless chicken breasts ((about 1.5 pounds), cooked and shredded (or sliced))
1 teaspoon cumin
1½ teaspoons chili powder
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon pepper
2 Tablespoons olive oil
16 ounces frozen corn (1 bag)
3 Tablespoons mayonnaise ((I used light))
4 ounces crumbled Cotija cheese ((could also use Feta cheese))
2 Tablespoons lime juice ((fresh is best))
1 Tablespoon jalapeno pepper (finely chopped)
⅓ cup fresh cilantro (finely chopped)
2 Tablespoons red onion (finely chopped)
2 garlic cloves (minced)
½ teaspoon chili powder
salt and pepper, to taste
6 corn or flour tortillas
2 avocados (sliced)
Cotija Cheese (optional topping)
fresh cilantro (optional topping)

Steps:

  • In a skillet pan over medium heat, heat oil. Add cooked and shredded chicken, cumin, chili powder, garlic powder, salt, and pepper. Stir and cook until completely heated through and all the chicken is coated in seasonings. Remove from heat, cover with aluminum foil to keep warm, and set aside while you prepare the corn.
  • In another skillet (or you can use the same skillet you heated the chicken in), heat oil over medium heat.
  • Add frozen corn and let cook until corn starts to char, stirring occasionally (it took about 7-8 minutes before my corn was lightly charred).
  • While the corn is cooking, mix together mayonnaise, cheese, lime juice, jalapeno, cilantro, red onion, garlic, chili powder, salt, and pepper in a large bowl. When corn is done, gently fold it in with other ingredients.
  • Lay tortilla out on a plate. Top with 1/2 cup chicken, some Mexican street corn, sliced avocados, cotija cheese, and fresh cilantro.
