This is my favorite way to eat oven-baked Buffalo chicken wings. Tons of flavor! Serve with blue cheese dressing on the side.

cooking spray
2 pounds chicken wings
½ teaspoon salt, or more to taste
⅓ cup all-purpose flour
6 tablespoons unsalted butter
½ cup hot sauce
½ tablespoon red wine vinegar
½ tablespoon Worcestershire sauce
½ tablespoon honey
½ teaspoon garlic powder
¼ teaspoon cayenne pepper
2 stalks celery, sliced, or to taste
2 carrots, sliced, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and coat with nonstick cooking spray.
  • Pat chicken wings dry using paper towels. Season with salt. Place flour in a shallow dish and dredge chicken to lightly coat. Place wings on the prepared baking sheet.
  • Bake in the preheated oven until golden and no longer pink in the centers, 40 to 45 minutes.
  • While wings are baking, melt butter over medium heat in a medium saucepan. Add hot sauce, red wine vinegar, Worcestershire, honey, garlic powder, and cayenne. Let sauce simmer on low heat until wings are done baking, about 40 minutes.
  • Remove wings from the oven and place in a large mixing bowl. Pour sauce over wings; toss until evenly coated. Serve with celery and carrots.

LEMONY ROASTED CHICKEN WINGS

These meaty out-of-the-ordinary roasted wings are infused with lots of lemon, garlic and rosemary, then roasted on a bed of fingerling potatoes. Use a large roasting pan that's at least 3 inches deep, or a big earthenware gratin dish, or a couple of Pyrex lasagna pans side by side. The lemony chicken and potatoes are delicious hot and crisp, but just as good at cool room temperature.

2 pounds very small potatoes, such as fingerlings, whole, or use medium-size yellow-fleshed potatoes, cut in halves or wedges)
3 pounds chicken wings, preferably drumettes
Salt and pepper
Red pepper flakes, to taste
3 tablespoons extra-virgin olive oil
6 small lemons, cut into 1/4-inch thick half-moon slices
6 large rosemary sprigs, leaves stripped
8 garlic cloves, minced, or 1/2 cup chopped green garlic shoots
1 cup dry white or rosé wine
Pinch of dried oregano (optional)

Steps:

  • Heat oven to 400 degrees. Rinse potatoes with lukewarm water and pat dry.
  • Spread chicken wings out on a baking sheet or cutting board in a single layer. Season both sides of wings generously with salt and plenty of freshly ground black pepper. Sprinkle with red-pepper flakes as desired.
  • Transfer seasoned wings to a large bowl. Add olive oil, lemon slices, rosemary and garlic and toss well with (plastic-gloved) hands so everything is evenly coated.
  • Place potatoes on the bottom of a roasting pan. Arrange seasoned wings over potatoes in a single layer. Add wine and cover pan tightly with foil.
  • Bake, covered, for about 45 minutes, until potatoes are done. Remove foil and return the pan to the oven and bake about 20 minutes more, until wings are nicely browned. Using tongs, turn wings over and bake for another 20 minutes to brown the wings' other side. Sprinkle with dried oregano, and serve hot or at room temperature.

Oil for deep-fat frying
BUFFALO WING SAUCE:
3/4 cup Louisiana-style hot sauce
1/4 cup unsalted butter, cubed
2 tablespoons molasses
1/4 teaspoon cayenne pepper
SPICY THAI SAUCE:
1 tablespoon canola oil
1 teaspoon grated fresh gingerroot
1 garlic clove, minced
1 minced Thai chile pepper or 1/4 teaspoon crushed red pepper flakes
1/4 cup packed dark brown sugar
2 tablespoons lime juice
2 tablespoons minced fresh cilantro
1 tablespoon fish sauce
SPICY BARBECUE SAUCE:
3/4 cup barbecue sauce
2 chipotle peppers in adobo sauce, finely chopped
2 tablespoons honey
1 tablespoon cider vinegar
Thinly sliced green onions, optional

Steps:

  • Using a sharp knife, cut through the 2 wing joints; discard wing tips. Pat chicken dry with paper towels. Toss wings with kosher salt. Place on a wire rack in a 15x10x1-in. baking pan. Refrigerate at least 1 hour or overnight., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry wings in batches until skin is crisp and meat is tender, 8-10 minutes. Drain on paper towels., For Buffalo wing sauce, bring hot sauce just to a boil in a small saucepan. Remove from heat; whisk in butter 1 piece at a time. Stir in molasses and cayenne pepper., For Thai sauce, heat oil in a small saucepan over medium heat. Add ginger, garlic and chile pepper; cook and stir until fragrant, about 2 minutes. Stir in brown sugar and lime juice. Bring to a boil; cook until slightly thickened, about 5 minutes. Stir in cilantro and fish sauce., For barbecue sauce, heat prepared barbecue sauce in a small saucepan over medium heat. Stir in chipotle peppers, honey and vinegar. Bring to a boil; cook and stir until slightly thickened, about 5 minutes. , Toss wings with 1 of the sauces. If desired, sprinkle with green onion slices.

2 lb chicken winglets, and/or chicken drumlets
oil, for frying
1 tablespoon butter
1 tablespoon garlic, minced
1 tablespoon ginger
½ cup soy sauce
5 tablespoons honey
1 tablespoon brown sugar
1 teaspoon sesame seed
scallion

Steps:

  • Mix flour, garlic powder, pepper, and salt in a small bowl.
  • Coat each chicken wing with a generous layer of the flour mixture.
  • Pour ¼ inch (6 mm) of oil into a shallow pan, and bring it to a medium high heat.
  • In small batches, fry the chicken wings for 4 minutes on each side.
  • Remove from the oil and let rest on a paper towel.
  • Over medium-high heat, melt the butter and add the garlic and ginger.
  • Add soy sauce, honey, and brown sugar to pan and reduce for 5-7 minutes, stirring occasionally.
  • Add the fried wings directly into the sauce pan and stir until the wings are covered in the sauce, then sprinkle with sesame seeds.
  • Serve with scallions on top.

½ cup honey
½ cup brown sugar
¼ cup soy sauce
¼ cup butter

  • Stir onion, honey, brown sugar, soy sauce, butter, mustard powder, and garlic together in a saucepan over medium heat; cook until hot, about 5 minutes.

1 tablespoon chili powder
1 tablespoon granulated garlic
1 tablespoon paprika
1 tablespoon freshly cracked black pepper
1 teaspoon salt
2 pounds chicken wing drumettes
1 tablespoon olive oil
2 cloves garlic, minced
1 1/2 tablespoons minced fresh ginger
1/2 cup soy sauce
1 tablespoon plus 2 teaspoons light brown sugar
1 teaspoon crushed red pepper flakes
1 tablespoon cornstarch
Peanut oil, for frying
1 cup cornstarch
1 cup all-purpose flour
Black sesame seeds, for serving
White sesame seeds, for serving
Thinly sliced scallions, for serving

Steps:

  • For the wings: In a bowl, combine the chili powder, granulated garlic, paprika, pepper and salt. Pat the wings dry with paper towels. Add the wings to the bowl with the spice mixture and toss to coat. Let sit for a few minutes.
  • For the glaze: Heat the olive oil over medium heat in a saucepan. Add the garlic and ginger and cook for 1 minute. Add the soy sauce, brown sugar, crushed red pepper flakes and 1/4 cup water and stir until the sugar is dissolved. In a small bowl, mix together the cornstarch and 2 tablespoons water until smooth. Stir the cornstarch mixture into the sauce and simmer until thickened. Turn off the heat.
  • Preheat a deep fryer filled with peanut oil to 350 degrees F, or fill a large heavy pot with 3 to 4 inches of peanut oil and heat to 350 degrees F.
  • In a large bowl, combine the cornstarch and flour and stir. Add the seasoned wings and toss to lightly coat. Shake off any excess and fry the wings in batches until golden brown and cooked through, about 6 minutes. Drain the wings on paper towels to soak up any extra oil.
  • Put the wings in a large bowl, pour the glaze over the top and toss to coat. Transfer the wings to a serving plate and sprinkle with the black and white sesame seeds and scallions.

1 cup your favorite barbecue sauce (or my Killer BBQ Sauce)
1 tablespoon finely chopped garlic
2 tablespoons sesame seeds
1 tablespoon sesame oil
1/4 teaspoon cayenne pepper, to taste

Steps:

  • Combine garlic, cayenne pepper, and barbecue sauce in a saucepan and bring to a quick boil.
  • Allow sauce to cool, then add the sesame oil and set aside.
  • With a sharp knife remove the tips from the chicken wings.
  • Place the wings in a large lock-top baggie and add the sauce mixture.
  • Seal the bag and coat the wings with the sauce.
  • Refrigerate for about four hours, turning the baggie periodically to coat the wings with sauce.
  • Remove the wings from the baggie and sprinkle with sesame seeds.
  • Pour the remaining marinade into a saucepan and bring to a boil for one minute and remove from the heat.
  • Grill the chicken wings directly over a medium heat.
  • Turn the wings once with tongs and continue to baste with the boiled marinade for approximately 15 minutes.
  • Serve the wings warm with additional sauce (or a different sauce/dip/dressing of your choice) for dipping.
