CHICKEN WINGS WITH SALSA VERDE
Steps:
- Prepare the brine: In a large soup pot, bring 8 cups water to a boil. Add the kosher salt, peppercorns and garlic; remove from heat. Let cool 30 minutes, then transfer to a large pot or ice chest lined with a large garbage bag. Add another 8 cups water, then add the wings and twist the bag closed. Refrigerate for 4 hours. Mix all the rub ingredients in a resealable plastic bag. Drain the wings. Rinse under cool water, pat very dry and put in the bag with the rub. Mix to coat evenly. Seal the bag and refrigerate until ready to cook. (You can do this a day ahead.) Preheat the broiler. Remove the wings from the bag and place in a single layer on a lightly oiled foil-lined pan. Broil for 8 minutes, then turn and cook for an additional 5 to 8 minutes, or until crisp and golden. Meanwhile, combine all the ingredients for the salsa, except the olive oil, in a food processor, using salt to taste. Slowly add the oil and puree until smooth. Serve the wings with the salsa.

- Preheat oven to 475 degrees. Combine salsa, honey, and ginger in a blender and puree until smooth. Transfer to a medium saucepan and bring to a boil over medium-high; reduce to a simmer and cook until mixture is reduced by half, 15 to 20 minutes. Stir in lime juice.
- Meanwhile, chicken wings in a single layer on a rimmed baking sheet; season with salt and pepper. Bake until chicken is golden, crisp, and cooked through, 30 minutes. Transfer wings to a large bowl and toss with sauce until well coated. Serve with lime wedges.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Spray a 12-inch nonstick skillet with cooking spray and heat over medium-high heat. Add chicken and cook until browned, 5 to 7 minutes on each side. Add cannellini beans, salsa verde, diced tomatoes with chile peppers, taco seasoning, cumin, and garlic powder; stir to combine. Spread in the prepared baking dish and cover with foil.
- Bake in the preheated oven until an instant-read thermometer inserted into the center of the casserole reads at least 165 degrees F (74 degrees C), 25 to 30 minutes.
- Remove from the oven and sprinkle Mexican cheese blend over top. Recover with foil and let rest until cheese melts, about 5 minutes.

- Heat 1 teaspoon oil in a Dutch oven over medium heat. Stir in 1/2 of the onion and 1/2 of the poblano pepper; cook and stir for 3 to 4 minutes. Add garlic and cook until fragrant, about 1 minute. Deglaze the pan with water.
- Add chicken, 1/4 jar of salsa verde, 1 teaspoon cumin, and 1 teaspoon chile-lime seasoning. Reduce heat to medium-low and simmer until chicken is no longer pink in the center and the juices run clear, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Remove chicken and shred. Add back to the pot with remaining onion, poblano pepper, salsa verde, cumin, and chile-lime seasoning. Add cannellini beans, green chiles, and cilantro. Simmer for 1 hour.
- Add frozen corn and sour cream; cook until heated through, about 5 minutes.

- Remove the tips of the wings and discard or save for making stock. Using kitchen shears, or a knife, separate the wings at the joint. (See how to prep wings for appetizers.) Rinse wing parts under cold water and pat dry with paper towels. Lay wings in a single layer on a wax paper-lined baking sheet and place in refrigerator, uncovered, for an hour.
- In a blender, combine the tomatillos, onion, garlic, serrano chiles, cilantro, and 1 teaspoon salt. Blend until smooth and pour into a saucepan or deep skillet. Bring to a simmer over medium-low heat, then add chicken broth. Simmer for 10 minutes, or until tomatillo mixture darkens and thickens so that it coats the back of a wooden spoon. Set aside to cool.
- Heat oil in a Dutch oven over medium heat. Remove wings from refrigerator and season on all sides with salt and pepper. Place about a tablespoon each of flour and cornstarch in a large clean plastic bag, seal, and shake gently to combine. Working in batches, drop a few chicken wings in the bag, and toss to coat with flour mixture. Shake off the excess before dropping each wing into the hot oil, and fry until golden brown, turning occasionally, about 5-7 minutes. Replenish the flour mixture in the bag as needed.
- Transfer fried wings to a wire rack placed over a rimmed baking sheet. When wings are cooled slightly but still warm, pile them on a serving platter, and drizzle with the tomatillo sauce. Serve immediately with leftover sauce.
