Chicken Salad with Apples and Walnuts image

Apples and walnuts add crunch to this chicken salad that makes for the perfect midday meal.

1/2 cup reduced-fat mayonnaise
3 tablespoons fresh lemon juice
1/2 teaspoon coarse salt
1/4 teaspoon ground pepper
Half of a leftover chicken from Easy Thyme-Roasted Chicken with Potatoes
2 peeled and thinly sliced Golden Delicious apples
3 to 4 thinly sliced celery stalks
1/2 cup coarsely chopped toasted walnuts

Steps:

  • In a large bowl, whisk together mayonnaise, lemon juice, salt and pepper.
  • Remove skin from half of a leftover thyme-roasted chicken.
  • Shred meat, and add to dressing. Add apples, celery stalks and walnuts. Serve over a bed of lettuce.

2/3 cup grape jelly
2 tablespoons butter or margarine
1 large unpeeled red cooking apple, cut into 2-inch chunks
1 medium stalk celery, sliced (1/2 cup)
1/2 cup fresh or frozen (thawed) cranberries
3/4 cup Original Bisquick™ mix
1/2 teaspoon ground sage
3/4 teaspoon chopped fresh or 1/4 teaspoon dried thyme leaves
2 tablespoons water
4 boneless skinless chicken breasts (about 1 1/4 lb)

Steps:

  • Heat oven to 350°F. In 1 1/2-quart saucepan, melt jelly and butter over medium heat, stirring occasionally. Stir in apple, celery and cranberries; remove from heat.
  • In shallow dish, mix Bisquick mix, sage and thyme. In another shallow dish, place water. Dip chicken into water, then coat with Bisquick mixture. Spray 10-inch skillet with cooking spray; heat over medium-high heat. Cook chicken in skillet 6 to 8 minutes, turning once, until coating is brown.
  • Place chicken in ungreased 13x9-inch (3-quart) glass baking dish. Spoon cranberry mixture over chicken. Bake 40 to 45 minutes or until juice of chicken is clear when center of thickest part is cut (170°F).

I made this up because I thought the flavors would match perfectly--and they do. The balsamic vinegar is really the key ingredient and adds a nice zip. This is for one serving, but it can be doubled, tripled, etc. to feed a larger crowd.

1 carrot
1/2 granny smith apple
1/2 cup fresh cranberries
1 chicken breast
1/4 cup applesauce
1/2 teaspoon cinnamon
salt, to taste
pepper, to taste
sugar, to taste
balsamic vinegar

Steps:

  • Preheat oven to 350°F.
  • Cut chicken into chunks or strips and dice apple.
  • Using a vegetable peeler, peel carrot into strips and sauté until soft.
  • Add salt and pepper during cooking process.
  • Deglaze with balsamic vinegar (as much as you want, actually) Stir in apple sauce, cranberries, diced apple, cinnamon, chicken, then pour into oven proof baking dish.
  • Bake for 15- 20 minutes or until done.
  • Season with more salt, pepper, cinnamon, sugar if desired.
  • Note: Feel free to change the amount of any of the ingredients.
  • The above measurements are approximates because I didn't measure when cooking this recipe.

2 teaspoons olive oil
1/4 cup minced shallots or 1/4 cup onion
2 lbs boneless skinless chicken breasts
2 tablespoons raspberry balsamic vinegar
1 (16 ounce) can whole berry cranberry sauce
2 cups peeled and chopped green apples
1/2 cup dried cranberries (optional)
4 tablespoons chopped walnuts
2 teaspoons curry powder

Steps:

  • Preheat over to 350°F (175°C).
  • Grease large shallow baking dish with vegetable oil.
  • Add oil and shallots (or onions) to baking dish and bake uncovered for 5 minutes.
  • Pour vinegar into baking dish and stir.
  • Add chicken breasts, basting tops with vinegar/shallot mixture; bake uncovered for 10 minutes.
  • Mix together cranberry sauce, apples, dried cranberries, walnuts and curry.
  • Cover chicken with sauce and bake an additional 15-20 minutes until chicken is cooked and sauce bubbles.

When cranberries are in season, I like to stock the freezer so I can serve this dish year-round. The sauce's tangy flavor complements the chicken very well.

3/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
6 boneless skinless chicken breast halves (4 ounces each)
1/4 cup butter
1 cup fresh or frozen cranberries
1 cup water
1/2 cup packed brown sugar
1 tablespoon red wine vinegar
Dash ground nutmeg

Steps:

  • In a shallow bowl, combine flour, salt and pepper; dredge the chicken. In a large skillet, cook chicken in butter until browned on both sides. Remove chicken and set aside. , In the same skillet, combine the cranberries, water, brown sugar, vinegar and nutmeg; cover and simmer for 5 minutes. Place chicken on top; cover and simmer for 30 minutes. To serve, spoon cranberry mixture over chicken.

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place chicken in a lightly greased 9x13 inch baking dish and pierce with a fork. Layer cranberry sauce and pineapple over chicken and sprinkle with cinnamon.

vegetable oil, to coat baking dish
2 teaspoons olive oil
1/4 cup onion, minced
2 tablespoons balsamic vinegar
2 lbs boneless skinless chicken breasts, cut into 8 4 ounce halves
1 (16 ounce) can whole berry cranberry sauce
1 1/2-2 cups granny smith apples, peeled seeded and chopped
1/2 cup dried cranberries
1/4 cup toasted walnuts, chopped
2 teaspoons curry powder
cooked rice

Steps:

  • Heat oven to 350 degrees.
  • Lightly oil 13 x 9 baking dish.
  • Add Olive Oil, shallots or onions to dish.
  • Bake uncovered 5 minutes.
  • Remove dish from oven, add Balsamic vinegar to dish, stirring to combine, Add chicken breasts to dish, turning to coat each piece.
  • Return dish to oven, bake uncovered for 10 minutes.
  • Using a glass mixing bowl.
  • combine cranberry sauce, apples, dried cranberries, walnuts and curry powder, mixing well.
  • Remove chicken dish from oven.
  • Cover chicken with sauce.
  • Bake 15- 20 minutes.
  • Serve atop cooked rice.
