CHICKEN MEATBALLS

Chicken Meatballs image

I wanted to make chicken meatballs for quite some time and was never able to find a good recipe. I came across one, but modified it based on my own preferences. I thought these came our absolutely delicious and served them with pasta and marinara sauce and homemade garlic bread!

Categories     Main Dish Recipes     Meatball Recipes

Time 55m

Yield 6

Number Of Ingredients 15

1 pound ground chicken
1 egg, beaten
¼ cup low-fat cream cheese
¼ cup grated Parmesan cheese
4 cloves garlic, grated
1 ½ tablespoons olive oil
1 tablespoon dry bread crumbs
2 teaspoons chopped fresh basil
1 teaspoon crushed red pepper
1 teaspoon garlic powder
½ teaspoon sea salt
½ teaspoon black pepper
½ teaspoon dried parsley
½ teaspoon dried oregano
1 cup chopped fresh mozzarella, or as needed

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Combine chicken, egg, cream cheese, Parmesan cheese, garlic, olive oil, bread crumbs, basil, red pepper, garlic powder, salt, pepper, parsley, and oregano in a freezer-safe bowl and mix well. Place in the freezer for 15 minutes to make the mixture firmer and easier to handle.
  • Use an ice cream scoop or cookie scoop to form the mixture into about 14 meatballs a little larger than a golf ball. Add a piece of mozzarella cheese to the center of each meatball, making sure cheese is covered by meat. Place meatballs on a nonstick baking sheet.
  • Bake in the preheated oven until juices run clear, 20 to 25 minutes.

CHICKEN-ZUCCHINI MEATBALLS WITH FETA

Chicken-Zucchini Meatballs With Feta image

These meatballs harbor a secret: They're half vegetable, half chicken. More than just a surprise, the grated zucchini provides moisture that ground chicken can lack. Roast more zucchini next to the meatballs on the sheet pan, then top everything with feta tossed with lemon juice. For an easy starch, add chickpeas to the feta, or toast bread or pita on the free rack in the oven.

Provided by Ali Slagle

Categories     dinner, weekday, poultry, main course

Time 45m

Yield 4 servings

Number Of Ingredients 11

3 large zucchini (about 1 1/2 pounds)
Kosher salt and black pepper
1 large shallot, halved
1/2 cup panko
1 1/2 teaspoons ground cumin
1 teaspoon red-pepper flakes
1 pound ground chicken or turkey
2 tablespoons chopped fresh mint, basil, parsley or dill, plus more for serving
1/4 cup extra-virgin olive oil, plus more for greasing and drizzling
3 tablespoons lemon juice (from 1 large lemon)
4 ounces feta

Steps:

  • Heat the oven to 425 degrees. Cut 2 of the zucchini into 1/2-inch-thick slices. Transfer to a plate, season with salt, and set aside.
  • Working over a large bowl, using the large holes of a box grater, grate the remaining zucchini. Grate 1 shallot half into the bowl as well. Add the panko, cumin, 1/2 teaspoon red-pepper flakes and 1/2 teaspoon salt, and use your hands to toss until combined. Add the chicken and herbs and toss gently until combined.
  • Lightly grease a baking sheet. With wet hands, form the chicken mixture into 16 meatballs (around 2 to 3 tablespoons each) and place them on one side of the baking sheet. Drizzle with olive oil and roast for 10 minutes.
  • Meanwhile, pat the sliced zucchini dry, then lightly coat with about 1 tablespoon olive oil. Season with pepper.
  • Coarsely chop the remaining shallot half and transfer to a small bowl. Add the lemon juice, season with salt, and stir to combine.
  • Add the sliced zucchini to the other half of the baking sheet, moving the meatballs over, if necessary. Bake until the meatballs are cooked through and the zucchini is golden on the underside, another 15 to 20 minutes. For more browned meatballs, broil for a few minutes, if desired.
  • Meanwhile, crumble the feta into the shallot mixture. Add the 1/4 cup extra-virgin olive oil and the remaining 1/2 teaspoon red-pepper flakes. Stir, breaking up the feta a bit, and season to taste with salt and pepper.
  • Eat the meatballs and zucchini with a drizzle of the feta sauce and more fresh herbs.

Chicken Zucchini Meatballs image

These Mediterranean-style Chicken Zucchini Meatballs are simple to make and bake up in the oven for an easy weeknight (or anytime) meal!

Provided by Herbs and Flour

Categories     Dinner

Number Of Ingredients 9

1 lb ground chicken (or ground turkey)
2 large eggs
1/2 cup bread crumbs
1 cup zucchini (shredded)
1/2 onion (finely chopped)
2 tablespoons fresh parsley (finely chopped)
3/4 teaspoon dried oregano
1/4 teaspoon ground cumin
salt and pepper

Steps:

  • Preheat oven to 400F and line a baking sheet with parchment paper.
  • Finely chop the herbs and onion. Mix all the ingredients in a large bowl until well combined.

  • Place the meatballs on the baking sheet and bake in the oven for approximately 25-30 minutes or until cooked through.

  • Put all the ingredients for the meatballs in a medium bowl. Using your hands, mix all the ingredients until well combined. (This is a little gross, but also kinda fun.) Cover and refrigerate the meatball mixture for 30 minutes to allow the chia seeds to work their gelling magic.
  • With damp hands, very gently roll heaping tablespoons of the chicken mixture into balls. (Try not to squeeze the meat too much, dudes. It will make the meatballs tough.) Arrange them on the prepared baking sheet, making sure they’re not touching. You should have approximately 18 balls.

  • Grate the zucchini in a large bowl and press out all the liquid. Add in the chicken, egg, almond flour, chives, salt, and seasoning. Mix well- the best way to do this is with your hands.
  • Roll meat into balls and place on the sheet tray. They may be a little messy and not perfect circles. It should make 24 balls, so divide the meat accordingly.
  • Bake for 18 minutes, or until they are done. I like to cut one in half and check. They will all have some residue around them, remove that as you take them off the pan.

  • Pour 1/2 cup of the pasta sauce on the bottom of your slow cooker. Place meatballs on top. You will probably have to stack them on top of each other, which is fine. Pour the remaining sauce (1 1/2 cups) on top.
  • Set slow cooker on low for 6-8 hours or on high for 4 hours. Once done, carefully remove (some might be a little stuck to each other since they are stacked on top) and serve with zucchini noodles or pasta.
