EASY BUFFALO CHICKEN WINGS

Easy Buffalo Chicken Wings image

Provided by Developed for CFC by Monda Rosenberg

Yield 4

Number Of Ingredients 5

3 lbs chicken wings
1 tsp each of cayenne pepper, smokey paprika, cumin powder and salt
2 tbsp Tabasco sauce, preferable Chipotle Tabasco sauce
2 tbsp melted butter
1 tbsp rice wine vinegar or cider vinegar

Steps:

  • Preheat oven to 425°F (210°C). Line a large baking sheet with foil and place a wire rack on top. If wings are not already divided into drumettes and winglets, cut wings in half at the joint and slice off tips. They tend to burn and don't have much meat on them.
  • Place wings in a large bowl. Sprinkle with cayenne, paprika, cumin and salt. Rub over chicken as evenly as possible.
  • In a small bowl, stir Tabasco with melted butter and vinegar. Pour over wings. Toss to coat. Place wings on the wire rack. Don't crowd.
  • Bake in centre of 425°F (210°C) oven until browned, from 40 to 45 minutes. (If wings are on a rack, they don't need to be turned.) Great served with a blue cheese dip as is the custom at the famous Anchor Bar in Buffalo, New York.

Provided by Kaitlin

Categories     Chicken and Poultry

Time 6h35m

Number Of Ingredients 10

8 garlic cloves ((finely chopped))
⅛ teaspoon salt
¼ cup warm water
¼-½ cup fish sauce
½ cup superfine sugar
1½ pounds chicken wings ((about 12 wings, split at the joint; discard the wingtips))
⅔ cup rice flour
2 tablespoons cornstarch
¼ cup water
1-2 teaspoons Thai chili paste ((naam phrik pao))

Steps:

  • First make the marinade. Mince the garlic with the salt. We used a garlic press and mixed the salt in. Add the warm water and let sit for 10 minutes. Add the fish sauce and sugar, stirring to dissolve.
  • Place the chicken wings in a separate large bowl with ½ cup of the fish sauce mixture and toss. Marinate for 4 hours or overnight, setting aside the rest of the fish sauce mixture in the refrigerator.
  • When the wings are done marinating, transfer to a colander, and let drain for 15 minutes. Mix the rice flour and cornstarch together, and toss the wings in the dry mixture until coated.
  • Bake the wings at 475 degrees for 24 minutes, flipping halfway through. Halfway through the cooking time, start to make the glaze.
  • Add ¼ cup of water to the reserved fish sauce mixture and transfer to a hot wok. Add the chili paste. Bring to a boil in a wok, and reduce for 1-2 minutes. Add the wings and toss to coat them in the glaze, about 1 minute.

This Oyster Sauce Chicken delivers restaurant quality chicken right in the comfort of your home. With a few ingredients and 30 minutes of your time, you could be enjoying this delicious chicken in oyster sauce.

Provided by Joanna Cismaru

Categories     Dinner     Lunch

Time 30m

Number Of Ingredients 13

3 chicken breasts (boneless, skinless, cut into small strips)
½ red bell pepper (sliced)
½ yellow bell pepper (sliced)
1 cup snow peas (a handful, ends trimmed)
1 onion (sliced)
3 tablespoon olive oil
3 tablespoons oyster sauce
2 tablespoon garlic and ginger paste (if you don't have this, fresh garlic and ginger work)
2 tablespoon soy sauce
1 tablespoon rice wine vinegar
salt and pepper to taste
¼ cup water
basil (for garnish)

Steps:

  • In a large bowl mix together 2 tbsp of the olive oil, the oyster sauce, garlic and ginger paste, soy sauce, rice wine vinegar and salt and pepper. Take half of the mixture and pour into a smaller bowl. Add the water to the smaller bowl, mix and set aside.
  • Add the chicken pieces to the larger bowl and toss the chicken around so that each piece is coated in the mixture. Let it sit and marinate for about 10 minutes.
  • In a large skillet, heat the remaining 1 tbsp of olive oil. Add chicken pieces to it and cook until the chicken is cooked through and it starts to slowly brown. Remove chicken from skillet and set aside.
  • Add onion to the same skillet and fry, add additional oil if needed to the skillet. Once the onion is translucent, add the peppers and snow peas and the remaining oyster sauce from the small bowl. Stir and cook for a couple minutes, the sauce will begin to thicken. Add the chicken to the skillet and toss everything together.
  • Serve over rice and garnish with basil.

  • for the oyster sauce: Heat a medium saucepan over medium to medium-low heat. Add oil. When oil is warmed, stir in garlic and ginger. Sauté for 2 to 3 minutes, stirring regularly, until softened. Do not let the garlic and ginger brown. Stir in oyster sauce, wine, soy sauce, and honey. Simmer the sauce for about 10 minutes, stirring occasionally, until reduced and thickened a bit. Remove pan from heat.
  • for the chicken wings: Preheat oven to 450° F. Spray a large sheet pan with sides. Use a non-coated pan for best results, not one with a nonstick surface – I like this pan. Spray very, very lightly with nonstick cooking spray and set aside. Line another large pan with paper towels and set aside.
  • Over high heat, bring a large pot of water to boiling. Add the salt. Then add the chicken wings. Boil wings for 7 minutes. Remove wings to a colander to drain for a couple minutes before laying them on the paper towel lined pan. After they have cooled enough to handle, take another paper towel and individually dry each chicken wing piece. Wet wings are the enemy of crispy baked wings!
  • Place the chicken wings directly on the lightly sprayed sheet pan, skin side down, and bake for 10 minutes. Flip to skin side up and bake another 15 minutes. If you have exceptionally small or large wings, adjust for less or more baking time. Take care to not cook for more time than is necessary, as that will dry out the wings.
