- Preheat oven to 400 degrees F (200 degrees C).
- Place chicken thighs in a lightly greased 9x13 inch baking dish. Season with salt and pepper to taste and bake in the preheated oven for about 25 minutes.
- Meanwhile, in a medium bowl combine the oyster sauce, garlic, sugar and water. Mix together and taste the sauce; if it is not sweet enough, add sugar to taste.
- After chicken has baked for 25 minutes, pour sauce over it and bake for another 20 minutes, or until chicken is cooked through and juices run clear.

CHINESE CHICKEN WINGS WITH OYSTER SAUCE
The marinade of soy sauce, oyster sauce, garlic, and sherry give these wings a delicious Asian-flavor.

- Cut off the wing tips and discard. Separate the wings into 2 pieces. Combine the soy sauce, oyster sauce, garlic and sherry in a zip-top plastic bag. Add the wings, seal the bag, and turn to coat the wings in the sauce. Place in the refrigerator and marinate for 1-2 hours. Preheat the oven to 350 degrees F. Transfer the wings to a baking dish. Season as desired with salt and pepper. Place the baking dish in the oven and bake at 350 degrees F for 1 hour, turning occasionally, until cooked through. To cook the wings in an air fryer, set the air fryer to 360 degrees F. Cook the wings for 12 minutes, then turn the wings and cook for 12 minutes more or until cooked through.
EASY BUFFALO CHICKEN WINGS

Steps:
- Preheat oven to 425°F (210°C). Line a large baking sheet with foil and place a wire rack on top. If wings are not already divided into drumettes and winglets, cut wings in half at the joint and slice off tips. They tend to burn and don't have much meat on them.
- Place wings in a large bowl. Sprinkle with cayenne, paprika, cumin and salt. Rub over chicken as evenly as possible.
- In a small bowl, stir Tabasco with melted butter and vinegar. Pour over wings. Toss to coat. Place wings on the wire rack. Don't crowd.
- Bake in centre of 425°F (210°C) oven until browned, from 40 to 45 minutes. (If wings are on a rack, they don't need to be turned.) Great served with a blue cheese dip as is the custom at the famous Anchor Bar in Buffalo, New York.

- First make the marinade. Mince the garlic with the salt. We used a garlic press and mixed the salt in. Add the warm water and let sit for 10 minutes. Add the fish sauce and sugar, stirring to dissolve.
- Place the chicken wings in a separate large bowl with ½ cup of the fish sauce mixture and toss. Marinate for 4 hours or overnight, setting aside the rest of the fish sauce mixture in the refrigerator.
- When the wings are done marinating, transfer to a colander, and let drain for 15 minutes. Mix the rice flour and cornstarch together, and toss the wings in the dry mixture until coated.
- Bake the wings at 475 degrees for 24 minutes, flipping halfway through. Halfway through the cooking time, start to make the glaze.
- Add ¼ cup of water to the reserved fish sauce mixture and transfer to a hot wok. Add the chili paste. Bring to a boil in a wok, and reduce for 1-2 minutes. Add the wings and toss to coat them in the glaze, about 1 minute.
- Serve with some refreshing sliced cucumbers on the side!

Steps:
- Cut each wing into two pieces by separating at the joint; discard the tips.
- Heat the ginger slices in the oil in a wok; add a third of the wings at a time and brown.
- When the wings are browned, drain the oil and remove the ginger slices from the wok.
- Add the oyster sauce, sherry, sugar soy sauce, and water.
- Place the browned wings in the wok and simmer, covered, for 10 to 12 minutes.
- Cook another 12 to 15 minutes with the lid off, basting frequently with the sauce.
- When the wings are tender and nicely glazed, they are ready to be eaten.

OYSTER SAUCE CHICKEN
Steps:
- In a large bowl mix together 2 tbsp of the olive oil, the oyster sauce, garlic and ginger paste, soy sauce, rice wine vinegar and salt and pepper. Take half of the mixture and pour into a smaller bowl. Add the water to the smaller bowl, mix and set aside.
- Add the chicken pieces to the larger bowl and toss the chicken around so that each piece is coated in the mixture. Let it sit and marinate for about 10 minutes.
- In a large skillet, heat the remaining 1 tbsp of olive oil. Add chicken pieces to it and cook until the chicken is cooked through and it starts to slowly brown. Remove chicken from skillet and set aside.
- Add onion to the same skillet and fry, add additional oil if needed to the skillet. Once the onion is translucent, add the peppers and snow peas and the remaining oyster sauce from the small bowl. Stir and cook for a couple minutes, the sauce will begin to thicken. Add the chicken to the skillet and toss everything together.
- Serve over rice and garnish with basil.

- Clean the chicken wings.
- Pat them dry.
- Add 1 T soy sauce and mix them together.
- Heat wok then add oil.
- Deep fry wings until golden brown.
- Remove.
- Remove the oil from the wok.
- Reheat the wok then add 2 T oil.
- Stir fry the onions and ginger root until fragrant.
- Add chicken wings, oyster sauce, salt, sugar, pepper and water.
