CHICKEN SOUP WITH TOASTED FARRO AND GREENS



Chicken Soup With Toasted Farro and Greens image

Somewhere between a soup and a stew, this comforting dish starts with chicken stock seasoned with leeks, carrots and celery. Garlic and fennel seeds are toasted along with the farro to add another layer of flavor. Boneless chicken thighs are cooked in the broth, then greens are tossed in just before serving. This soup is best served right away, as the farro will continue to absorb liquid as it sits, but leftovers can be reheated with some additional broth or water over low heat. Lemon zest lends a lovely lift, but a spoonful of chile oil would also be lively addition.

2 tablespoons olive oil
2 medium leeks, white and light green parts only, halved and thinly sliced (about 1 1/2 cups)
2 medium carrots, peeled and thinly sliced into rounds
1 celery stalk, thinly sliced
3 garlic cloves, finely chopped
1 teaspoon fennel seeds, gently crushed or roughly chopped
1/2 teaspoon red-pepper flakes
Kosher salt and black pepper
1 cup farro, rinsed
6 cups homemade or store-bought low-sodium chicken stock
3/4 pound boneless, skinless chicken thighs
5 cups stemmed and roughly chopped Swiss chard, or other quickly-wilting greens like kale or spinach
Lemon zest, for serving (optional)

Steps:

  • Heat the oil in a large stock pot or Dutch oven over medium. Add the leeks, carrots and celery, and cook, stirring occasionally, until they have softened, but have not taken on any color, 4 to 6 minutes.
  • Add the garlic, fennel seeds and red-pepper flakes, and cook until fragrant, about 1 minute. Season well with salt and pepper.
  • Add the farro and cook, stirring frequently, until slightly toasted, 1 to 2 minutes. Add the stock and chicken thighs. Bring to a boil, then reduce heat to a simmer. Cook until the chicken has cooked through and is no longer pink, 10 to 12 minutes, skimming any bits of foam that float to the surface, if desired. Using a slotted spoon or tongs, transfer the chicken to a cutting board. When cool enough to touch, shred the chicken into bite-size pieces.
  • Continue simmering the soup until the farro is tender but still toothsome, about 20 minutes more. Add the chicken back to the pot along with the greens and stir until greens are gently wilted. Taste and adjust seasonings as needed.
  • Ladle into bowls and grate lemon zest over top, if desired.

1 1/2 cups (9 1/2 oz/295 g) dried chickpeas, picked over and rinsed
1/2 cup (3 fl oz/80 ml) olive oil
1 yellow onion, finely chopped
2 cloves garlic, minced
1 small rosemary sprig
1 Tbsp tomato paste
Salt and freshly ground pepper
4 cups (32 fl ox) 1 liter) vegetable broth or water
1/2 cup (2 oz/60 g) farro
FOR THE MUSHROOMS
1/2 lb (250 g) porcini or crimini mushrooms
1 1/2 Tbsp extra-virgin olive oil
1 clove garlic, minced
1 Tbsp dry white wine
1 thyme sprig
Salt and freshly ground pepper
1 1/2 tsp unsalted butter
Extra-virgin olive oil for drizzling

Steps:

  • Put the chickpeas in a large bowl with water to cover and soak for at least 4 hours or up to overnight. Drain the chickpeas, rinse well, and place in a large saucepan. Add 8 cups (64 oz/ 2 l) cold water and bring to a boil over high heat. Reduce the heat to low and simmer,uncovered, until the chickpeas are tender, about 2 hours. In a large, heavy pot, warm the oil over medium-low heat. Add the onion, garlic and rosemary and sauté until the onion is softened, 5 - 7 minutes. In a small bowl, dissolve the tomato paste in 1 cup (8 oz/250 ml) warm water and add to the pot. Stir in the chickpeas and their cooking liquid and season with salt and pepper. Bring to a simmer over medium heat and cook for 3 minutes. Add the broth, return to a simmer, and cook, uncovered, until the flavors have blended, about 30 minutes. Remove from the heat and let cool slightly. Discard the rosemary sprig. Working in batches, purée the soup in the blender. Return to the pot and bring to a simmer over medium heat. Add the farro and cook until tender yet still slightly chewy, about 25 minutes. Meanwhile, to prepare the mushrooms, thinly slice them lengthwise. In a large frying pan, warm the oil over medium heat. Add the garlic and sauté until fragrant, about 1 minute. Add the mushrooms and cook, stirring until they begin to soften, about 3 - 4 minutes. Raise the heat to high, add the wine and thyme, and cook, stirring constantly, for about 3 minutes. Reduce the heat to low, season with salt and pepper, and continue to cook, stirring often, until the mushroom juices have evaporated, about 15 minutes. Remove from the heat and discard the thyme sprig. Stir in the butter. Stir the mushrooms into the soup. Serve, drizzled with olive oil and garnished with a grinding of pepper.

8 cups cold water
1/3 cup olive oil

1 cup warm water
Sea salt and freshly ground pepper, to taste
4 cups vegetable broth or water
1/3 cup farro
For the mushrooms:
1/2 lb. fresh porcini or cremini mushrooms, brushed clean
1 1/2 Tbs. extra-virgin olive oil, plus more for drizzling
1 garlic clove, minced
2 Tbs. dry white wine
1 fresh thyme sprig
Sea salt and freshly ground pepper, to taste
1 1/2 tsp. unsalted butter

Steps:

  • • Rinse the chickpeas under cold running water and drain. Place in a large bowl with cold water to cover generously and soak for at least 4 hours or overnight. • Drain and rinse well and transfer to a large saucepan. Add the cold water and bring to a boil over high heat, skimming off the foam that rises to the surface. Reduce low and simmer, uncovered, until the chickpeas are tender, about 2 hours. Remove from the heat. • In a soup pot warm the olive oil. Add the onion, garlic and rosemary sprig and sauté until the onion is softened and translucent but not browned, about 6 minutes. In a small bowl, dissolve the tomato paste in the warm water and add to the pot. Stir in the chickpeas and their cooking liquid and season with salt and pepper. Bring to a simmer over medium heat and cook for 3 minutes. Add broth, return to a simmer and cook, uncovered, about 30 minutes more. Discard the rosemary sprig. • Process the soup in the pot with an immersion blender. Return the soup to a simmer over medium heat, add the farro and cook until farro is tender. about 25 minutes. Meanwhile, cut away the tips of the mushroom stems. Thinly slice the mushrooms lengthwise. In a large, heavy-bottomed fry pan over medium heat, warm the olive oil. Add garlic and sauté until fragrant, about 1 minute. Add mushrooms and cook until they begin to soften, 3 to 4 minutes. Raise the heat to high, add the wine and thyme sprig, and cook, stirring constantly, to cook off the alcohol from the wine, about 3 minutes. Reduce the heat to low, season with salt and pepper, and continue to cook, stirring often, until the mushrooms are cooked and their juices have evaporated, about 15 minutes more. Remove from the heat and discard the thyme sprig. Stir in the butter. • Add the mushrooms to the soup and stir to combine. Ladle the soup into warmed soup bowls, garnish with a drizzle of olive oil and a sprinkling of ground pepper and serve immediately. Serves 4 to 6.

Italian Chicken Stoup with Porcini, Portobello and Peppers image

Stoup is a term that I made up to describe a soup almost as thick as stew. This is a cacciatore that I think is the easiest way to eat and enjoy the flavors - no bones, no muss or fuss and lots of juice. I won't turn down a bowl of the original, but I prefer this dish.

1 large red bell pepper
1/3 cup dried porcini mushrooms (a handful)
3 cups homemade or store-bought chicken stock
3 tablespoons EVOO
4 ounces pancetta, cut 1/8-inch thick, diced
2 large portobello mushroom caps, chopped
1 onion, finely chopped
4 cloves garlic, finely chopped
1 red chile pepper, thinly sliced
2 sprigs fresh rosemary, finely chopped
1 large bay leaf
Kosher salt and freshly ground black pepper
1/4 cup tomato paste
1 cup dry red or white wine
One 14-ounce can stewed tomatoes
4 cups pulled or chopped cooked chicken meat
Ciabatta or other crusty bread
Shaved pecorino cheese, for garnish
Coarsely chopped fresh flat leaf parsley, for garnish
Bread, for serving

Steps:

  • Char the pepper on a gas burner or under the broiler with the oven door slightly ajar to allow steam to escape. Place the evenly charred pepper in a bowl, cover and cool. Peel and seed the pepper, and then chop.
  • Meanwhile, place the dried mushrooms in a small pot with the chicken stock and bring to a boil. Reduce the heat and simmer a few minutes to soften mushrooms. Once tender, turn off the heat.
  • While the dried mushrooms are softening up, heat the EVOO in a Dutch oven over medium-high heat. Add the pancetta and brown 2 minutes. Add the portobello mushrooms and brown until dark, 8 to 10 minutes. Add the onions, garlic, chile pepper, rosemary and bay leaf. Season with some salt and pepper and cook to soften, 10 minutes. Add the tomato paste and stir 1 minute. Add the wine and stir. Add the porcini mushrooms and their stock, all but the last few spoonfuls, as grit may have settled here. Add 3 cups water, the stewed tomatoes, chicken and chopped roasted red peppers. Bring to a low boil, and simmer 15 minutes. Cool and store for a make-ahead meal. Reheat over medium heat, adding water if necessary to thin.
  • Serve in shallow bowls. Top with the shaved pecorino and parsley, and bread for mopping.

CREAMY FARRO AND CHICKPEA SOUP

3/4 cup dried chickpeas, soaked in water overnight
1/2 teaspoon sea salt
2 imported bay leaves
3 tablespoons extra virgin olive oil, plus more for garnish
1/2 cup chopped onion
1 tablespoon chopped prosciutto
1 tablespoon minced celery
3/4 cup farro or hulled barley, rinsed, then soaked in water overnight
1 quart chicken broth
1/2 teaspoon dried marjoram
2 pinches freshly grated nutmeg
Kosher salt
Freshly ground black pepper
Freshly chopped flatleaf parsley, for garnish

Steps:

  • Drain chickpeas, and place in a medium earthenware pan or saucepan. Cover with plenty of cold water, and bring to a boil. Add sea salt and bay leaves. Reduce heat, and cook, covered, until very soft, about 1 1/2 hours.
  • Meanwhile, in a medium saucepan, heat olive oil and gently cook onion, prosciutto and celery for 4 to 5 minutes, stirring occasionally, until they are soft but not brown. Drain farro, and add it along with the chicken broth, marjoram and nutmeg to the onion mixture. Cook, partially covered, for about 1 hour.
  • Drain chickpeas, reserving the cooking liquid. Discard bay leaves. In a food processor, puree chickpeas with 1 cup of the reserved liquid. Add pureed chickpeas to the farro mixture; if necessary, add more of the cooking liquid from the chickpeas to achieve the consistency of a creamy soup. Adjust the seasoning with salt and pepper. Wait 10 minutes before serving, and sprinkle each portion with chopped parsley and a drizzle of olive oil.
