CHILI CASSEROLE
WITH
SWEET POTATO PUFFS

Steps:
- In a 3-quart lidded pan or a 6-quart dutch oven over medium heat, add oil.
- Once warm, add onion, garlic, celery, carrot and bell pepper. Sprinkle with two pinches of salt. Turn to coat. Sauté for 10 minutes; stir occasionally.
- After 10 minutes, add all of your dry spices except for the rest of the salt and the black pepper. Stir to coat all of your vegetables.
- Let cook, continuing to stir for about a minute; until you smell the fragrance of the spices.
- Add beans and tomatoes. Stir well. Bring to a boil then turn heat down to simmer for 10 minutes; stir occasionally.
- Preheat oven 425 degrees.
- The last minute of cooking, add salt, pepper & kale. Stir well. Turn off heat. Let cool for 5 minutes.
- In a 9x13 casserole dish, pour in chili. Smooth out to make sure it's even.
- Place sweet potato puffs on top in one layer evenly across all of the chili.
- Bake for 25-30 minutes; the tops of the puffs will be crunchy.
- Let cool for 5 minutes.
- Enjoy!

I found this recipe on a trip to Southern California. Since then, this versatile dish has become one of my family's favorites. I serve it as a special breakfast, for brunch or even Sunday night supper. Sausage or ham goes well with this snappy dish...and don't forget some corn muffins!

- Preheat oven to 375 degrees.
- Combine beef, yello onion, egg, bread crumbs, chili powder and salt in large bowl, mix thoroughly. Pour beef mixture into medium baking dish, pressing firmly onto bottom of dish. Bake 20 minutes. Pour off any juices.
- Mix potatoes and green onions in medium bowl. Spread potato mixture over beef mixture, sprinkle top with cheese. Broil 3 to 4 inches from heat source 3 to 5 minutes or until top is lightly browned.

EASY CHILI EGG PUFF BAKE
This is really a mix and bake casserole, it makes a great easy brunch! You can add in some green onions if you wish, the jalapeno is only optional, this dish can be served hot or cold.

- Set oven to 350 degrees.
- Butter a 13 x 9-inch baking dish.
- In a bowl beat the eggs until light and lemon coloured.
- Add in the rest of the ingredients except the chilies; blend until well combined.
- Stir in the chilies.
- Transfer the mixture into prepared baking disg.
- Sprinkle the top with grated Parmesan cheese.
- Bake for about 35-45 minutes or until the top is browned and the center appears to be firm.

CREAMY CHEESY CHILI POTATO CASSEROLE
After making way too much homemade chili, I came up with this recipe to use up the leftovers. I haven't seen this one anywhere else, but it is delicious, easy, cheap, and filling.

- Layer sliced potatoes, chili, cubed cream cheese, cream of mushroom soup, and cheddar cheese in a greased casserole dish.
- Repeat layers (like lasagna).
- Bake covered in a 350 degree oven for 1 1/2 hours.
- Top with additional cheddar cheese and bake uncovered for 10 minutes.
- Allow casserole to set for 20 minutes and serve.

- Place a 12-inch cast iron skillet over medium high heat, add the ground beef in an even layer and cook until browned. Drain excess grease, leaving about a tablespoon. Add the onions, garlic, bell pepper, sweet potato and spices. Cook stirring occasionally, until the vegetables soften, about 3-5 minutes. Add the tomatoes, black beans and beef broth and bring to a simmer.
- Place cast iron skillet on the center rack of the oven and bake for 35-40 minutes or until the sweet potatoes are nice and tender. Add shredded cheese and broil until cheese is melted and bubbling, about 2-3 minutes. Salt and pepper to taste; serve immediately and enjoy!
