This chili for a crowd was handed down to me by my aunt, who said she got it from a "grizzled Montana mountain man." I added some zesty ingredients to come up with the final version. Hot food is something that my husband's family isn't accustomed to, so I adjust the spices for them. In fact, with a few simple alterations to the "heat" index, I can serve this chili to anyone. -Lisa Humphreys, Wasilla, Alaska

3 pounds ground beef
2 cans (28 ounces each) diced tomatoes, undrained
4 cans (16 ounces each) kidney beans or 4 cans (15 ounces each) pinto beans or black beans, rinsed and drained
1 pound smoked kielbasa, sliced and halved
2 large onions, halved and thinly sliced
2 cans (8 ounces each) tomato sauce
2/3 cup hickory-flavored barbecue sauce
1-1/2 cups water
1/2 cup packed brown sugar
5 fresh banana peppers, seeded and sliced
2 tablespoons chili powder
2 teaspoons ground mustard
2 teaspoons instant coffee granules
1 teaspoon each dried oregano, thyme and sage
1/2 to 1 teaspoon cayenne pepper
1/2 to 1 teaspoon crushed red pepper flakes
2 garlic cloves, minced

Steps:

  • In an 8-qt. kettle or Dutch oven, cook beef over medium heat until no longer pink; drain. , Stir in the remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 1 hour, stirring occasionally.

2 (6-pound) cans chili beans
3 (6-pound) cans kidney beans
2 (6-pound) cans crushed tomatoes
1 (6-pound) can peeled tomatoes
1 (6-pound) can tomato paste
40 tablespoons chili powder
16 to 18 small onions, chopped
4 mild green peppers, chopped
4 tablespoons sugar
Salt and black pepper to taste

Steps:

  • In batches, brown hamburger in skillet and drain off fat. Add all other ingredients and cook in several large Dutch ovens on low heat for 2 hours. Salt and black pepper to taste. Serve immediately. Freezes well.

9 tin cans Kidney beans, rinsed and drained ((16 oz each))
9 tin cans Pork and beans ((15-3/4 ounces each))
3 lbs Onions, finely chopped
9 Green bell pepper, finely chopped
6 cups Finely chopped celery with leaves
6 tbsp Chili powder ((or cayenne pepper))
2 tbsp Salt
1 tbsp Ground cumin
1 tbsp Paprika
1 Table chili or cayenne pepper
1 tbsp White pepper
10 Bay leaves

Steps:

  • Cook the beef in a large skillet (with a little olive oil) until brown and drained, then transfer to a slow cooker (you may need two)
  • Add all the spices like onions and garlic.
  • Add all the diced tomatoes and tomato sauce.
  • Add the other ingredients except for kidney beans and cook for 60 to 75 minutes.
  • Add a little water if the stew is too thick.
  • Add the kidney beans and cook for another 10 minutes.
  • Serve

This is one of the dishes I made for a big crowd that will be partying with us on the Fourth of July. (You can cut the recipe in half or you can freeze for a latter day).I used venison but you can use lean beef. Venison is very lean. I use small cubed pieces of meat as well as ground. Gives it more texture. But its melt in your mouth cubes of meat. It really does melt in your mouth. All the different ingredients blend together to give you a nice spicy almost 5 alarm chili. I used Goya beans which are not to be rinsed. Check your cans most do need a rinse.The picture shown is one serving and topped with grated cheddard cheese, sour cream, and Salsa Verde recipe #84339.

2 large onions, diced
1 large green pepper, diced
1 (4 1/2 ounce) can diced green chilies
4 -6 chipotle chiles in adobo, diced
14 ounces dark beer
1/2 cup brown sugar
2 (28 ounce) cans crushed tomatoes
8 ounces tomato paste
4 -6 tablespoons chili powder
1 tablespoon parsley
1 tablespoon oregano
1 tablespoon cumin
1 tablespoon salt
1 tablespoon pepper
4 (14 ounce) cans kidney beans, I like it but I know down south it unheard of (optional)
4 cups turkey broth or 4 cups water

Steps:

  • In a very large pot.
  • I used my 18 quart electric roaster oven (counter top).
  • It`s like a very very large crock pot.
  • Heat to 400 degrees add oil and brown meats.
  • While meat is browning add onions, peppers, garlic and Worcestershire sauce.
  • Continue to cook till all meat is browned stirring often.
  • Add all the rest of the ingredients and lower the temperature to 275 degrees and cook for 2-3 hour till all the flavor meld into a delish chili. Be sure to stir all the while!
  • Check for seasoning.
  • Enjoy over rice or straight.

4 lb lean (at least 80%) ground beef
8 medium onions, chopped (4 cups)
4 cans (28 oz each) Muir Glen™ organic diced tomatoes, undrained
3 cans (19 oz each) Progresso™ red kidney beans, drained, liquid reserved
1 can (15 oz) tomato sauce
3 tablespoons chili powder
2 tablespoons sugar
1 tablespoon salt
16 small round bread loaves
Olive or vegetable oil

Steps:

  • In 8-quart Dutch oven or stockpot, cook beef and onions over medium heat, stirring occasionally, until beef is thoroughly cooked and onions are tender; drain.
  • Stir in tomatoes, bean liquid, tomato sauce, chili powder, sugar and salt, breaking up tomatoes. Heat to boiling; reduce heat. Simmer uncovered 1 1/4 hours.
  • Stir in beans. Simmer uncovered about 15 minutes, stirring occasionally, until desired consistency.
  • Heat oven to 350°F. Cut off the tops of bread loaves. Scoop out bread from the loaves, leaving a 1-inch thick wall. Brush the insides of the loaves with olive oil. Place on ungreased cookie sheet. Bake about 5 minutes or until light golden brown. Place on serving plates. Spoon chili into bread bowls.

I found this in the 2003 Taste of Home Annual Recipes cookbook. It was sent to them by Norma Grogg of St. Louis, Missouri. Since I like a meatier chili, an extra 1/4 pound of ground beef was added.But even if the extra beef hadn't been added, I still think it would be enough for 4. After simmering, I did a " taste test " and added some crushed red pepper flakes for more heat. If you don't add the crushed red pepper, it's very mild. If desired add some cheese to each serving.
