1 tablespoon cooking oil
1 15-16 ounce can hominy, rinsed and drained
1 15-16 ounce can great Northern beans, rinsed and drained
1 14 ounce can reduced-sodium chicken broth
1 9 ounce package frozen cooked chicken breast strips
0.25 cup lime juice
2 tablespoon chopped fresh cilantro
0.25 teaspoon ground cumin
0.25 teaspoon ground black pepper
0.5 cup shredded colby and Monterey Jack cheese, Monterey Jack, or cheddar cheese (2 oz.)
White corn tortilla chips
Bottled green salsa (optional)

Steps:

  • In a large saucepan cook onion in hot oil over medium heat for 3 minutes. Stir in hominy, beans, chicken broth, frozen chicken, lime juice, cilantro, cumin, and pepper. Cover and bring to boiling over high heat, stirring occasionally. Remove from heat; cool slightly. Divide into 4 microwave-safe containers. Cover and chill overnight.

1 medium onion, chopped
1 tablespoon canola oil
1 can (15-1/2 ounces) white hominy, drained
1 can (15 ounces) cannellini beans, rinsed and drained

2 cans (4 ounces each) chopped green chilies
1 teaspoon garlic salt
1 teaspoon dried basil

Steps:

  • In a large saucepan, saute the chicken and onion in oil until chicken is no longer pink. Add the hominy, beans, broth, chilies and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. , Remove from the heat; stir in the sour cream, half-and-half and 1 tablespoon cilantro. Sprinkle with remaining cilantro.

2 whole store-bought rotisserie roasted chicken, meat picked from bones and pulled into bite size pieces,skin and bones reserved seperately
2 quarts chicken broth
6 tablespoons vegetable oil
1/4 cup ground cumin
4 teaspoons dried oregano
1/2 teaspoon cayenne pepper
2 large onions, cut into medium dice
2 (4 ounce) cans diced mild green chilies
2 (20 ounce) cans hominy or 2 (20 ounce) cans canned white beans, such as cannellini or great northern
6 cloves garlic, minced
2 cups frozen corn, preferably shoepeg
sour cream
cilantro or scallion
lime wedge
green chili sauce

Steps:

  • Bring skin and bones, chicken broth a 1 quart of water to boil over medium-high heat.
  • Reduce heat to low and simmer about 30 minutes.
  • Strain and discard skin and bones.
  • Heat oil over medium-low heat in soup kettle.
  • Add cumin, oregano and cayenne and cook until spices are fragrant, about 1 minute.
  • Add onion; increase heat to medium; saute until soft, 4 to 5 minutes.
  • Stir in chicken and chilies.
  • Add 4 cups hominy or beans and all but 1 cup of the broth and bring to a simmer.
  • Reduce heat to low and simmer, uncovered, stirring occasionally, 25 to 30 minutes.
  • Puree remaining 2 cups hominy or beans and 1 cup broth in blender or food processor until silky smooth; add to soup.
  • Stir garlic and corn into soup.
  • Simmer for a minute or so longer, then cover and let stand for 5 minutes.
  • Ladle into bowls and top with sour cream, cilantro or scallions.
  • Pass separately the lime wedges and green hot pepper sauce.

1 tablespoon canola oil
1 pound boneless, skinless chicken thighs
1 medium onion, diced
2 garlic cloves, minced
1 medium poblano chile, diced
2 cans (14.5 ounces each) reduced-sodium chicken broth
2 cans (15 ounces each) white navy beans, drained and rinsed
1 can (15 ounces) hominy, drained
Coarse salt and ground pepper
Fresh cilantro, for garnish (optional)
Jalapeno-pepper sauce, such as green Tabasco, for serving (optional)

Steps:

  • In a large pot (5 quarts), warm oil over medium-high heat. Brown chicken until golden, 3 to 4 minutes per side. Transfer to a plate; set aside.
  • Reduce heat to medium. Add onion, garlic, and chile; cook, stirring often, until onion softens, 3 to 4 minutes.
  • Cut browned chicken into 1/2-inch strips. Add chicken, broth, and beans to pot; bring to a boil. Reduce heat to an active simmer, and cook until chicken is very tender and chili has thickened, 25 to 30 minutes.
  • Reserve 1/2 cup hominy to use as garnish; stir remaining hominy into chili. Season with salt and pepper. Ladle into bowls; garnish each serving with reserved hominy and cilantro, and drizzle with jalapeno sauce, as desired.

1 teaspoon ground cumin
Kosher salt
1/4 teaspoon ground cinnamon
1/2 teaspoon grated lime zest
8 skin-on, bone-in chicken thighs (about 2 1/2 pounds)
1 15-ounce can white hominy, drained, rinsed and patted dry
1/2 medium acorn squash, seeded and diced
1 yellow bell pepper, chopped
3 tablespoons extra-virgin olive oil
1 tablespoon fresh lime juice, plus wedges for serving
2 scallions, thinly sliced
1/4 cup chopped fresh cilantro

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 425 degrees F. Line 2 baking sheets with foil. Mix 1 1/2 teaspoons chili powder, 1/2 teaspoon cumin, 3/4 teaspoon salt, the cinnamon and lime zest in a bowl. Rub the spice mixture all over the chicken, then transfer to one of the baking sheets; set aside until ready to roast.
  • Toss the hominy, squash, bell pepper, 2 tablespoons olive oil, the remaining 1/2 teaspoon each chili powder and cumin, and 1/4 teaspoon salt in a medium bowl. Spread on the other baking sheet.
  • Transfer the chicken to the upper oven rack and the hominy to the lower rack. Roast, stirring the hominy occasionally, until the hominy is lightly browned and the chicken is cooked through, about 25 minutes.
  • Transfer the hominy to a bowl and add the lime juice, the remaining 1 tablespoon olive oil, the scallions and cilantro. Season with salt and toss. Serve with the chicken and lime wedges.

This is an old family favorite I got from an old Better Homes & Gardens Ground Meat Cookbook. It's super easy and was great after working all day and having to feed 3 hungry growing boys. Now grown, they still request this dish. We like to serve with a salad and a pan of cornbread is a must! If you have a cast iron skillet - use it! No need to dirty another dish. Brown the meat per directions, add everything in and slide it into the oven.

1 1/2 lbs ground chuck
1/2 cup onion, chopped
1 (15 ounce) can yellow hominy
1 (16 ounce) can stewed tomatoes
1 tablespoon chili powder
2 tablespoons all-purpose flour
1/2 teaspoon salt & pepper (mixed or to taste)
1 cup cheddar cheese, grated

Steps:

  • Preheat oven to 375 degrees.
  • In large skillet brown ground chuck and onion till done. Drain well. Stir in stewed tomatoes (including juice), drained hominy, chili powder, flour, salt & pepper. Mix well.
  • Pour mixture into 2 quart greased casserole dish.
  • Bake for 20 minutes.
  • Top with cheese and continue baking for 5 minutes or until cheese has melted.
  • *This is exceptional using ground turkey & ground beef (3/4 lb of each). Lightens the dish but still has great flavor!

1 (1 1/4 ounce) envelope taco seasoning
1 (10 ounce) can rotel
1 (10 3/4 ounce) can condensed cream of chicken soup

Steps:

  • Chop up 1 onion & place on the bottom of a 4 quart slow cooker.
  • Place chicken on top of onions.
  • Top with beans & corn.

1 pound whole dried corn (hominy)
Water
1 tablespoon ground dried red chilies or salt-free chili powder
1 teaspoon dried oregano
Pinch of cinnamon
2 cups chicken stock
Salt

Steps:

  • Place the dried corn in a large bowl, cover with six cups water and set aside to soak overnight.
  • Early the next day, or at least four hours before serving, drain the corn, place it in a three- to four-quart saucepan and add six cups water. Bring to a simmer and stir in the dried chilies or chili powder, oregano and cinnamon. Simmer uncovered about two and a half hours, until the corn is fairly tender. If necessary, add more water during cooking. At end of cooking period, the mixture should be quite moist but not soupy.
  • Add the chicken stock, bring to a simmer, season to taste with salt and cook another 30 minutes. By this time the corn should be barely covered with liquid. Allow it to cool uncovered. It will thicken as it cools.
  • Reheat it to serve as a side dish or use it to make a casserole. Refrigerate any unused cooked hominy and use within a day or freeze it for future use. Yield: 8 to 12 servings

  • In a large Dutch oven or saucepot, heat 1 tablespoon of olive oil over medium-high heat. Season the chicken thighs with salt and pepper. In batches, add the chicken and cook, turning occasionally, until browned, about 8 minutes. Transfer the chicken to a plate and set aside. Pour off some of the fat from cooking the chicken and return the pot to medium heat.
  • Add the remaining 2 tablespoons of olive oil and heat until the oil begins to shimmer in the pan. Add the onions, garlic, red bell pepper and jalapeños and season with salt. Stir in the cumin, oregano, chipotle chili powder and tomato paste until the vegetables are well coated in the seasonings. Return the chicken to the pot and add the crushed tomatoes, beans, beer and hominy. Simmer over moderate heat until chicken is cooked through, about 30 minutes.
  • Using kitchen tongs, remove the chicken from the pot and let cool slightly. Discard the skin and shred the meat into bite-sized pieces. Place the shredded pieces into the pot, and simmer until the chili thickens slightly with the meat. Taste to adjust seasoning with salt and pepper.
  • To serve, ladle the soup into warmed individual bowls, and serve with sour cream, chopped onions and cilantro.
