Chilled cucumber & prawn skewers image

Thread crunchy cucumber and juicy prawns onto skewers to make elegant canapés - perfect for an al fresco dinner party

Number Of Ingredients 5

20 peeled and cooked king prawns (about 200g)
zest and juice 0.5 lemon
½ tsp poppy seeds
1 tsp rapeseed oil
1 cucumber

Steps:

  • Mix the prawns, lemon zest and juice, poppy seeds and oil in a bowl, and leave to marinate for 10-20 mins while you prepare the cucumber.
  • Peel 20 strips from the cucumber, running the peeler down the full length. Stop and turn the cucumber when the peelings get a bit too seedy.
  • Thread each cucumber strip onto a small wooden skewer, bending back and forth to create ruffles. Add a prawn to each and put in the fridge to chill until the party.

1 can (8 ounces) unsweetened crushed pineapple, drained
1 can (4 ounces) tiny shrimp, rinsed and drained
1/4 cup reduced-fat mayonnaise
1 tablespoon finely chopped green onion
2 teaspoons Dijon mustard
1-1/2 teaspoons minced fresh dill
1 medium cucumber (8 inches), cut into 1/4-inch slices
Fresh dill sprigs, optional

Steps:

  • In a bowl, combine the pineapple, shrimp, mayonnaise, onion, mustard and dill. Spoon onto cucumber slices. Garnish with dill sprigs if desired.

Fire up the barbecue and make these easy, tasty spicy prawn skewers with pickled cherry peppers. They're delicious when served with our saffron aïoli

3 garlic cloves , crushed
1 red chilli , finely chopped
½ small bunch parsley , finely chopped
1 tsp sweet smoked paprika
½ tsp hot smoked paprika
4 tbsp olive oil
400g raw king prawns , in their shells if you like, or keep the tails on
1 jar pickled cherry peppers , drained
lemon wedges, to serve

Steps:

  • Whisk the garlic, chilli, parsley, both types of paprika and olive oil together. Stir through the prawns and season well. Cover, put in the fridge and leave to marinate for at least 30 mins before threading on to skewers, interspersing them with a few of the peppers, so that each skewer has about 4-5 prawns.
  • Light a barbecue and leave until the flames die down and the coals turn white with glowing centres. Grill the skewers, or cook in a griddle pan over a high heat for 3-4 mins until pink and opaque. Serve immediately with a squeeze of lemon and plenty of saffron aïoli.
