450 grams boneless chicken thighs, cut into large bite size pieces
3/4 teaspoon black pepper powder
1 tablespoon sugar
2 teaspoons light soya sauce
1 teaspoon dark soya sauce
4 teaspoons shaoxing rice wine
1 1/2 teaspoons cornflour
2 1/2 tablespoons vegetable oil
4 cloves garlic, roughly chopped
6 each dried red chillies, soaked, deseeded
1 1/2 tablespoons red chilli paste, or chilli bean paste
3 each spring onions, green and white parts separated, cut into ½-inch pieces
160 ml chicken stock, (about a generous 2/3 cup), hot
1 tablespoon cornflour slurry, made with 1½ teaspoons cornflour stirred into 1 tablespoon water

Steps:

  • Marinate chicken: Place boneless chicken thighs in a glass bowl. Toss in black pepper powder, sugar, light soy sauce, dark soy sauce, and rice wine. Mix well, then add cornflour and mix till well incorporated. Set aside to marinate for 30 minutes.
  • Place a wok on high heat and add oil. Once the oil is screaming hot but just before it starts smoking, carefully tip in marinated chicken. The marinade will splatter and spit as soon as it hits the oil, so be very careful. Quickly stir fry the chicken, about 2 minutes, then remove with a slotted spoon, leaving the oil in the wok. Reserve chicken.
  • Add garlic and red chillies to the wok in quick succession and stir fry for 30 seconds to flavour the oil. Add red chilli paste and stir. Toss in the white part of the spring onion, stir fry for a minute, then slide in the reserved chicken. Stir to mix well, then pour in hot chicken stock. Cook for about 3 minutes, stirring.
  • Add cornflour slurry, stir, and cook till the sauce thickens and glistens on the chicken, about 1 minute. Garnish chilli chicken with the green part of the spring onion.
  • Remove chilli chicken from heat and transfer to a bowl. Serve immediately with steamed rice. Serves: 4 as part of a larger meal Prep Time: 10 minutes plus 30 minutes marination time Cook Time: 14 minutes

2 chicken breasts
1 teaspoon salt
½ teaspoon pepper
1 egg, beaten
¾ cup flour
1 green pepper, sliced
1 red pepper, sliced
rice, to serve
3 cloves garlic cloves, crushed
1 red chilli, chopped
3 tablespoons soy sauce
2 tablespoons tomato puree
½ cup water

Steps:

  • Season the chicken with salt and pepper.
  • Cut the chicken into thin strips then coat in the egg wash and flour.
  • Shallow fry for a few minutes on each side, until golden brown.
  • Add the peppers and fry for another couple of minutes. Remove the chicken and peppers and set aside.
  • In the same pan, add the garlic, red chilli, soy sauce, tomato purée, and water. Stir and simmer the mixture reduces and is thick and syrupy.
  • Add back in the chicken and peppers and stir well in the sauce.
  • Serve with rice.

  • To make this delicious recipe, begin with washing the chicken in some lukewarm water and rinse it again in cold water. Then take a large bowl and combine chicken, eggs, ginger-garlic paste and cornflour in it. Mix all the ingredients properly. You can also drizzle a little water to the batter to coat the chicken pieces evenly. Once done, refrigerate the chicken for 1-2 hours.
  • After 1-2 hours, take out the marinade. Next, heat oil in a deep pan over a high flame. Carefully place the chicken pieces in the oil until cooked through. Remove and drain excess oil on absorbent paper. Meanwhile, heat 1 or 2 tbsps of oil in a separate pan over medium flame. Once the oil is sufficiently hot, add the onions and fry for 2-3 minutes till they turn translucent. Then add the capsicum and green chillies and mix well again. You can also add some dry roasted green chillies to accentuate the taste. Moreover, If you prefer the dish extra spicy, you can also add some vinegar-soaked green chillies to this recipe, as it adds to the taste and flavour. (optional)
  • When the veggies are partially cooked, add soy sauce, vinegar, chicken and salt. Mix all the ingredients well and make sure that the chicken is well coated in the sauces. Keep stirring so that the chicken does not stick to the pan.
