Steps:
- Slice the steak against the grain into very thin slices.
- Combine the soy sauce, sherry, and cornstarch and pour this mixture over the steak.
- Marinate the meat for 15 minutes.
- While the meat is marinating, slice the broccoli at a diagonal and mince garlic and ginger.
- Heat a wok or large frying pan for 30 seconds, add oil, wait about 20 seconds, and add minced garlic and ginger root. Fry over high heat, stirring constantly for about 20 seconds more, then add the beef.
- Stir-fry, stirring constantly, for about 1 minute. Add broccoli and stir-fry for another 4 to 6 minutes, until the broccoli is cooked but still crisp and still dark green.
- Serve hot. This is low in carbohydrates.
EASY CHINESE BEEF WITH BROCCOLI

Steps:
- Cute steak across the grain into thin bite-sized pieces.
- Pour soy sauce and sherry over steak.
- Sprinkle with cornstarch and sugar; mix well.
- Cut broccoli unto thin slices. Peel stem, slice into 2" pieces.
- Pour half of the oil into a skillet or dutch oven. Add salt and broccoli and cook for 2 minutes. Remove from skillet. Add remaining oil and onion. Stir well and add the steak.
- Cook for 2 minutes. Add broccoli. Mix thoroughly and serve over rice or noodles.

- In a large mixing bowl, add the steak strips seasoning liberally with freshly cracked back pepper. Add in the corn starch and soy sauce, tossing to combine. Cover the mixture and let it marinate for 10-15 minutes.
- Heat a dutch oven, or other sturdy soup pot, over medium high heat. Add half of the olive oil. Once the oil's hot, which won't take long, add half of the prepared steak, spreading it out in a single layer. Sear the meat for 45 seconds to a minute without stirring.
- Flip all of the meat and cook for another 30 seconds, until it's barely cooked but very tender. Transfer the meat to a clean plate, including any juices, and cover with foil. Repeat these steps with the second half of the uncooked steak.
- Keeping the pot over medium high heat, add in the onion and garlic. Stir in a half cup of beef broth, and season with the ginger and salt, to taste. Use the broth and a sturdy spoon to deglaze the pan, scraping up all the flavorful browned bits stuck to the bottom.

- Fill a medium saucepan with tap water. Cover and bring it to a boil over high heat. When it reaches a boil add 1 teaspoon of the salt and the Chinese noodles. Return to a boil. Reduce heat to low and simmer and cook until tender, 3-5 minutes. Drain noodles and set aside.
- While the water heats and the noodles cook measure the vegetable oil and sesame oil into a large pot or Dutch oven. Turn the heat to medium-low and add the red pepper flakes and the ginger. Stir. Slice the garlic and add it. Cook for 30 seconds. Add the beef broth. Cover and increase the heat to high until it reaches a boil.
- While the broth is heating cut the broccoli into florets, slice the bell pepper and chop the green onions. Slice the steak into 1/4-inch slices. When the broth reaches a simmer add the broccoli. Cover and return it to a boil. Reduce to a low simmer and cook until broccoli is tender-crisp. Then remove the ginger from the broth. Add the sliced beef. Simmer 2 minutes.
- To serve divide the noodles among 4-5 soup bowls. Top with the beef soup. Garnish with pepper slices and green onion.
