1 lb flank steak
2 tablespoons soy sauce
1 tablespoon dry sherry (can substitute 1 Tbs. orange or pineapple juice with a dash of vinegar)
1/2 teaspoon cornstarch
1 (16 ounce) package frozen broccoli, defrosted
1 garlic clove, minced
1 slice fresh ginger, finely minced
2 tablespoons peanut oil
salt

Steps:

  • Slice the steak against the grain into very thin slices.
  • Combine the soy sauce, sherry, and cornstarch and pour this mixture over the steak.
  • Marinate the meat for 15 minutes.
  • While the meat is marinating, slice the broccoli at a diagonal and mince garlic and ginger.
  • Heat a wok or large frying pan for 30 seconds, add oil, wait about 20 seconds, and add minced garlic and ginger root. Fry over high heat, stirring constantly for about 20 seconds more, then add the beef.
  • Stir-fry, stirring constantly, for about 1 minute. Add broccoli and stir-fry for another 4 to 6 minutes, until the broccoli is cooked but still crisp and still dark green.
  • Serve hot. This is low in carbohydrates.

1 lb flank steak
2 tablespoons soy sauce
1 tablespoon dry vermouth
1 tablespoon cornstarch
1 tablespoon sugar
1/2 bunch broccoli
4 tablespoons olive oil (use peanut oil if you have it)
1 teaspoon salt
1/4 cup onion, chopped

Steps:

  • Cute steak across the grain into thin bite-sized pieces.
  • Pour soy sauce and sherry over steak.
  • Sprinkle with cornstarch and sugar; mix well.
  • Cut broccoli unto thin slices. Peel stem, slice into 2" pieces.
  • Pour half of the oil into a skillet or dutch oven. Add salt and broccoli and cook for 2 minutes. Remove from skillet. Add remaining oil and onion. Stir well and add the steak.
  • Cook for 2 minutes. Add broccoli. Mix thoroughly and serve over rice or noodles.

  • While the water heats and the noodles cook measure the vegetable oil and sesame oil into a large pot or Dutch oven. Turn the heat to medium-low and add the red pepper flakes and the ginger. Stir. Slice the garlic and add it. Cook for 30 seconds. Add the beef broth. Cover and increase the heat to high until it reaches a boil.
  • While the broth is heating cut the broccoli into florets, slice the bell pepper and chop the green onions. Slice the steak into 1/4-inch slices. When the broth reaches a simmer add the broccoli. Cover and return it to a boil. Reduce to a low simmer and cook until broccoli is tender-crisp. Then remove the ginger from the broth. Add the sliced beef. Simmer 2 minutes.
  • To serve divide the noodles among 4-5 soup bowls. Top with the beef soup. Garnish with pepper slices and green onion.
