CHINESE STYLE VEGAN TOFU MINCED PORK
This Chinese style vegan minced pork is made from tofu thus pack full of plant protein ! Super flavorful yet comes together in 15 mins.

Steps:
- If using black fungus, soak them in hot water for 20 minutes to rehydrate them. Slice them thinly and set aside.
- In a bowl, mix together both of the soy sauce, maple syrup, garlic powder, onion powder, chili powder and sesame oil.
- Crumble your tofu using a fork or your hands into tiny pieces.
- Heat up some oil in a non-stick pan / skillet. Start by sauteing the black fungus for 3-4 minutes. Then, add in the tofu and cook for another 3-4 minutes, stirring every 30 seconds.
- Pour in the sauce made earlier and toss until the sauce is well incorporated.
- Garnish it with some chopped scallions and serve.

- In a bowl, mix the ground pork with the soy sauce, sesame oil, sugar, cornstarch, black pepper, and red pepper flakes. Marinate at least 10 minutes.
- Place the tofu in a microwave-safe dish. Place the pork over the tofu. Discard any remaining marinade. Top with green onion, carrots, and chile pepper. Cover with microwave-safe plastic wrap. Cut a small slit in the plastic wrap to vent steam.
- Cook 5 minutes on High in the microwave, or until vegetables are tender and pork is cooked to desired doneness.

- Drain tofu and place on a cutting board. Slice horizontally into thirds. Return stack of slices to tofu container and cut into the tofu crosswise and lengthwise to make 1/2-inch to 3/4-inch cubes. Cover with water and set aside.
- In a skillet or wok over medium-high heat, stir-fry pork until no longer pink, about 1 minute. Add the oil, and when hot, add the leek, chili-soybean paste, garlic and peppercorns. Stir-fry for 1 minute.
- Add the chicken broth and bring to a boil. Pour the water off the tofu, and add the tofu to the skillet, shaking the pan so the tofu settles into the broth. Simmer until very tender, about 5 minutes. Serve with or over rice but never under it.
MAPO TOFU (MICROWAVE RECIPE)
Mapo tofu is one of the most common foods in Japanese homes. It's very easy to cook on a stovetop but cooking it in a microwave cuts the cooking time in half. This recipe is very hard to resist. It always makes me want to eat more rice.

- Drain tofu, wrap in paper towels, and place in a microwave-safe bowl. Cook in the microwave for 2 minutes. Unwrap and slice into 3/4-inch cubes.
- Whisk miso paste, soy sauce, sesame oil, sugar, oyster sauce, doubanjiang, ginger, and garlic together in a bowl.
- Whisk 1 tablespoon water and cornstarch together in a small bowl until smooth.
- Combine miso mixture, remaining water, ground beef, and ground pork together in a large microwave-safe bowl. Cover and cook on 600W for 4 minutes. Drain liquid into the cornstarch mixture; mix well.
- Mix tofu, cornstarch mixture, and green onion carefully into the bowl of ground meat. Cover and cook until flavors combine, about 4 minutes.

- Prepare the ingredients. Soak the mushroom. First, soak the dry Chinese mushroom in some water for at least an hour. The dry mushroom will rehydrate and become soft so that you can cut it into small dice easily.
- Deep frying the tofu for extra flavor and texture. Remove the tofu carefully from the box. Place it in a deep-frying basket gently. Deep-fried it in the preheated oil for about five minutes or until it turns golden brown.
- Made the sauce. Saute the garlic and onion in vegetable oil over low heat until they turn aromatic. Since garlic browns faster than onion due to the higher content of water, you should saute the onion first and then add the chopped garlic after a minute.
- Plating and garnishing. Pour the hot sauce over the tofu. Garnish with some cut scallion and chili. You can view two videos I upload previously to show how to prepare both chili and scallion for garnishing.
