Chinese Pastry Roast Pork Puffs image

Chinese Roast Pork Puffs are a dim sum classic similar to the Roast Pork bun except they are wrapped in a slightly sinful, yet heavenly pastry puffs!

1 tablespoon oil
1/4 cup shallots
1 tablespoon sugar
2 teaspoons soy sauce
1 tablespoon oyster sauce
2 teaspoons sesame oil
1 1/2 teaspoons dark soy sauce
1/3 cup chicken stock
1 1/2 tablespoons flour
1 cup Chinese roast pork
1 sheet store-bought puff pastry
egg wash ((1 egg, beaten with a tablespoon of water))
1 tablespoon sesame seeds

Steps:

  • Heat the oil in a wok over medium heat and stir-fry the onion until translucent. Add the sugar, soy sauce, oyster sauce, sesame oil, and dark soy sauce and cook until it starts to bubble up. Add the chicken stock and flour. Reduce the heat to medium low and cook, stirring, for a couple minutes until thickened. Remove from the heat and stir in the pork. Set aside to cool completely.
  • Preheat the oven to 400 degrees F (200 degrees C). On a lightly floured surface, roll out the puff pastry to smooth out the seams. Once rolled, the puff pastry square should be 30% larger than where you started. Cut into equal squares (whatever size you prefer). Ours were about the size of a large ravioli.
  • Put about 1 1/2 teaspoons of filling onto a pastry square and brush the edges with egg wash. Cover with another pastry square and use a fork to crimp it closed. Make sure they're tightly sealed. Repeat until all the filling and/or pastry has been used.
  • Brush the tops of the pastries with egg wash and sprinkle with sesame seeds. Bake for 18-20 minutes, or until puffed and golden brown. Serve warm!

1 tbsp vegetable oil
1 onion (diced)
2 cups barbecued roast pork (cut into ½" pieces)
3 tbsps oyster sauce
2 tbsps sugar
¼ tsp sesame oil
½ tsp dark soy sauce
2 tsp cornstarch
¾ cup chicken stock
90 g cake flour
12 g sugar
36 g water
30 g unsalted butter (melted)
100 g cake flour
50 g unsalted butter (melted)
Egg wash
Sesame seeds (for garnish)

Steps:

  • To make the filling: In a wok or frying pan, heat vegetable oil and cook onions until tender and translucent, about 5 minutes. Add roast pork and stir fry for 3 minutes. Add oyster sauce, sugar, sesame oil, dark soy sauce, cornstarch, and chicken stock. Let it simmer on low heat, until the sauce is thickened. Remove from heat and let it cool in the refrigerator for at least one hour.
  • In a mixing bowl, mix together all of the ingredients for the outer dough until well combined. Cover the dough with plastic wrap and let it rest in the refrigerator for 15 minutes. Divide evenly into 12 pieces, about 14 grams each.
  • In another mixing bowl, mix together all of the ingredients for the inner dough until well combined. Wrap the dough with plastic wrap and let it rest in the refrigerator for 15 minutes. Divide evenly into 12 pieces, about 13 grams each.
  • Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  • Flatten each piece of outer dough, place an inner dough ball in the center, and cover it completely. Using a rolling pin, flatten the dough into an oval. Roll it up by hand, tightly, turn 90 degrees, and flatten it again with a rolling pin.   • Place a heaping tablespoon of the pork filling in the center. Fold both sides toward the center. Lay the pastry seam side down on the prepared baking sheet, spacing about two inches apart. Use a fork to seal the edges of the pastries. Repeat with the rest of the dough. Brush the top of the pastry with egg wash and sprinkle with sesame seeds. Bake for 20-25 minutes, or until they turn golden brown. Serve warm.

  • To make the water dough: combine the flour, sugar, and salt in a food processor and pulse 2 to 3 times. Sprinkle in the pieces of lard/shortening/butter and process 10 more seconds until the mixture looks like coarse meal. (Alternatively, put ingredients in a mixing bowl and use your fingers in a quick rubbing motion to combine).
  • Transfer mixture to a bowl (if you used food processor method), make a well in the center, and add the warm water. Use a wooden spoon or your fingers to stir into a ragged mass. Gently knead for about 2 minutes to create a soft, smooth, and slightly elastic dough. Pressing your finger in the dough should cause the dough to slowly bounce back, leaving a faint impression. Wrap with plastic wrap and set aside at room temperature to rest for 20 to 30 minutes.
  • Meanwhile, to make the short dough: put the flour in the food processor and sprinkle in the lard/shortening/butter. Process for 10 seconds to blend and generate a mealy, lumpy, soft mixture. Transfer to the same bowl as before and squeeze with your fist until the dough comes together into a soft but cohesive mass. (Alternatively, put the ingredients in the bowl and use your fingers or the back of the wooden spoon to mash together until no flour is visible). It will resemble soft cookie dough.
  • To encase and laminate the dough: Gather and pat the short dough on a lightly floured surface into a 3-by-4-inch rectangle. Set aside. Return the water dough to the lightly floured work surface and roll it out into a 5-by-8 ½-inch rectangle, with one long edge toward you (like a landscape photo). Place the short dough in the center of the water dough, with one short edge toward you (like a portrait photo). Fold the sides of the water dough over the short dough with the edges overlapping slightly (like enclosing a photo in a letter). Press the overlapping edges and both ends to seal in the short dough completely. Roll out in the direction of the folds to make a rectangle about 6-by-18-inches. Fold the dough into thirds to form a 6-inch square. Cover the dough with plastic wrap and refrigerate for 30 minutes.

  • Add the chopped Char Siu, mix well then cook until sauce thickens, if the sauce is too thick adjust it by adding a bit more of the chicken stock. Cook for 2 minutes. Remove from pan then let it cool.
  • Prepare your butter puff pastry, place a big spoonful of the cooled Char Siu filling at the edge of the pastry, fold pastry into triangles until it reached the other end, seal the edge.
