2 ounces (2 squares) unsweetened chocolate
1 cup all-purpose flour
1 1/4 teaspoons baking powder
1/4 teaspoon fine salt
1/2 cup (1 stick) unsalted butter, softened
1 cup sugar
2 large eggs
1 teaspoon finely grated orange peel
1 teaspoon pure vanilla extract
1/4 cup milk
Confectioners' sugar for dusting
Serving suggestion: Whipped cream or ice cream

Steps:

  • Preheat oven to 350 degrees F. Butter and flour an 8-inch cake pan.
  • Put the chocolate in a heatproof bowl. Bring a saucepan filled with an inch or so of water to a very slow simmer; set the bowl on the pan (without touching the water). Stir occasionally until melted and smooth. Alternatively, put the chocolate in microwave safe bowl. Microwave on half power until soft, about 1 minute depending upon the power of your machine. Cool.
  • Whisk the flour, baking powder and salt in a bowl.
  • Beat the butter and sugar in a medium bowl with an electric mixer on medium-high speed until light and fluffy, about 4 minutes. Add the eggs, 1 at a time, beating well after each addition. Stir in chocolate, orange peel, and vanilla and mix until fully combined. Add in flour, salt, and baking powder in 3 parts alternating with the milk to make a thick batter.
  • Pour batter into prepared pan. Bake in the middle of the oven until a tester comes out clean, about 30 minutes.
  • Cool cake in the pan for 10 minutes, then turn out onto rack to cool completely.
  • Serve dusted with confectioners' sugar and with whipped cream or ice cream, if desired.

1-1/4 cups all-purpose flour
1 cup packed brown sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
2 large eggs
1/2 cup 2% milk
1/4 cup canola oil
1 teaspoon vanilla extract
1/4 cup chopped pecans
4 scoops vanilla ice cream
1/4 cup chopped pecans, toasted
Hot caramel and/or fudge ice cream toppings

Steps:

  • In a microwave, melt chocolate; stir until smooth. Cool slightly., In a large bowl, combine the flour, brown sugar, salt, baking soda and cinnamon. In another bowl, whisk the eggs, milk, oil and vanilla; stir into dry ingredients until smooth. Stir in pecans and melted chocolate (batter will be thick)., Bake in a preheated waffle maker according to manufacturer's directions until golden brown. Serve with ice cream, toasted pecans and ice cream toppings.

I love that whole flavor contrast/texture experience. Sweet and salty, smooth and crunchy, hot and cold. I came up with this a while ago when I was searching for midnight snack and couldn't decide between a waffle and ice cream. So why not have both? It's not really a recipe, more of a concept. Just use all of your favorites! I used Roselani's Kona Mud Pie ice cream. It's a Hawaiian brand, so if you don't live here, you can't find it. It's a Kona coffee ice cream, with chocolate sandwich cookies, and a mocha fudge sauce. Of course, just use whatever you want! And it's an awesome treat for breakfast! Cooking time is toasting the waffle.

1 waffle (frozen or homemade, I used Krusteaz Homestyle)
1/2-1 cup ice cream, 1-2 scoops your favorite flavor (I used Roselani's Kona Mud Pie, it's a Hawaiian brand)
1 -2 tablespoon hot fudge (I used Hershey's)
1 -2 teaspoon caramel sauce (I used Hershey's)
1 -2 tablespoon chopped nuts (I used toasted, salted macadamia nuts)
whipped cream
maraschino cherry

Steps:

  • Take out ice cream to slightly soften while preparing waffle.
  • Toast (or make) waffle to your liking.
  • At the same time, heat up hot fudge and caramel (or any other toppings you would like to use).
  • To assemble, place waffle on plate.
  • Add scoop(s) of ice on top of waffle.
  • Drizzle with hot fudge and caramel (or desired toppings).
  • Top with whipped cream.
  • Sprinkle with chopped nuts.
  • Top with maraschino cherry.
  • Enjoy immediately!

1 standard-sized keebler waffle bowl (or another store-bought waffle bowl with about 50 calories)
1/2 cup fat-free vanilla ice cream
3 frozen unsweetened strawberries
1 1/2 tablespoons hershey's lite chocolate syrup, divided
1/2 tablespoon sugar-free strawberry jam
2 tablespoons fat, free reddi-wip

Steps:

  • Pour 1 tablespoons chocolate syrup into the waffle bowl, tilting the bowl from side to side so the syrup coats as much of the inside as possible (sides too!). Freeze for 30 minutes, or until syrup has solidified.
  • Place berries in a microwave-safe bowl, and microwave until thawed, about 25 seconds. Do not drain excess liquid. Add preserves and mash with a fork, until you have a chunky strawberry sauce. Set aside.
  • Remove waffle bowl from the freezer and place in a dish. Scoop ice cream into the waffle bowl. Top with strawberry sauce and 1/2 tablespoons chocolate syrup, and then finish it all off with Reddi-wip. Eat the WHOLE thing, waffle bowl and all! (FYI: It's fun to break up the waffle bowl and eat it along with the ice cream, which is why you need another dish to contain it all!).
