CHOCOLATE ALMOND CAKE ROLL

i love the combination of cream cheese and almond filling in this cake roll - it is so yummy. recipe is from solofoods.com

Ingredients: eggs,cocoa,baking powder,all-purpose flour,salt,vanilla,sugar,cream cheese,almond filling

Steps:

  1. preheat oven to 375f spray a 151 / 2 x 101 / 2-inch jelly roll pan with non-stick baking spray
  2. line with parchment paper or waxed paper and spray paper also
  3. beat eggs , preferably with a whisk , with baking powder and salt until thick and light-colored
  4. add the vanilla and mix
  5. stir together sugar , cocoa and flour
  6. gradually add the whisked egg mixture
  7. do not overmix
  8. turn into prepared jelly roll pan and spread evenly
  9. bake 10 minutes
  10. remove from oven
  11. immediately turn from pan onto a towel that has been dusted with confectioners sugar
  12. quickly remove the paper
  13. roll , jelly-roll fashion , , with the towel inside and enwrapping cake
  14. chill
  15. cream the cheese with the almond filling
  16. unroll the cake , spread with almond cheese and re-roll , jelly-roll style
  17. chill until cold
