Chocolate Roll With Raspberries Recipe

Time: 50 minutes



  1. eggs
  2. semisweet chocolate
  3. butter
  4. cognac
  5. sugar
  6. heavy cream
  7. powdered sugar
  8. raspberries


  1. heat oven to 350 degrees
  2. butter and line a 10x15 inch jelly roll pan with wax paper
  3. separate eggs
  4. cut chocolate into small pieces
  5. melt chocolate with butter and 2 tbsp cognac
  6. remove from heat and add egg yolks , one at a time , beating thoroughly
  7. set aside
  8. beat egg whites with pinch of salt until soft peaks form
  9. add sugar slowly
  10. continue beating till stiff
  11. fold egg white mixture into chocolate
  12. pour batter into pan , smooth top and bake for 15 minutes
  13. let cake cool
  14. remove from pan onto work surface
  15. whip cream
  16. spread cream over the cake and roll up its long edge
  17. transfer to serving plate
  18. dust with powdered sugar and garnish with raspberries
