CHOCOLATE COCONUT ALMOND BARS.

These bars are my dream, full of all healthy ingredients, a thick layer of coconut and an even thicker layer of chocolate.

Number Of Ingredients 12

1/2 cup raw almonds
1 cup unsweetened flaked coconut
12 plump medjool dates (pitted)
2 teaspoons vanilla
1/4 cup coconut oil
2 cups unsweetened flaked coconut
1/2 cup canned coconut milk
2 tablespoons honey
pinch of salt
12 ounces dark chocolate (chopped, or semi sweet)
2 tablespoons rounded almond butter
cacao nibs + hemp seeds (for topping (optional))

Steps:

  • Line an 8x8 inch square baking pan with parchment paper.
  • In the bowl of a food processor, combine the almonds, 1 cup coconut, dates and vanilla. Pulse until finely chopped, but not pureed. Add the coconut oil and pulse until combined, being careful not to over mix the the mixture. You want it finely chopped and a little chunky.
  • Press the base mixture into the prepared pan. Place the pan in the freezer.
  • Back in the bowl of the food processor (no need to clean it!) combine 2 cups coconut, coconut milk, honey and salt. Pulse until you have a finely ground mixture. Remove the base layer from the freezer and add the coconut layer in an even layer. Return the pan to the freezer.
  • Melt the chocolate over a double broiler or in the microwave, stirring every 30 seconds until melted and smooth.
  • Remove the bars from the freezer and spread the chocolate over top. Now take the almond butter and swirl it into the chocolate. Top with cacao nibs and hemp seeds if desired. Cover the pan and place in the fridge for 30 minutes to 1 hour to allow the chocolate to set.
  • Place the sharp knife under hot water and then cut the bars into about 16 squares. The chocolate layer may pop off of the coconut layer as you cut the bars. Don't worry, just push it back into place. Keep the bars stored in the fridge in a sealed container.

2 cups desiccated coconut, unsweetened
½ cup icing sugar
1 teaspoon salt
1 teaspoon vanilla extract
⅔ cup sweetened condensed milk
dark chocolate
almond

Steps:

  • In a large bowl mix together coconut, sugar, salt, vanilla, and condensed milk. If the mixture is too dry add additional milk until it all just comes together.
  • Roll the mixture into 1-inch (2.5 cm) balls and place on a wax paper lined baking sheet. Freeze for 15 minutes.
  • Break apart chocolate bars and add to a microwave safe bowl. Microwave chocolate for 75 seconds, stopping every 30 seconds to check and stir.
  • Remove the coconut balls from the freezer and individually roll in melted chocolate to coat. Place back on a wax paper lined tray and sprinkle with additional coconut and top with an almond (optional).
  • Enjoy!

I love Christmas candy, and these simple but special chocolates are among my favorites. They're easy to assemble in paper-lined muffin cups.

2 cups sweetened shredded coconut, chopped
3 tablespoons sweetened condensed milk
3 tablespoons confectioners' sugar
2 teaspoons butter, softened
1 package (12 ounces) semisweet chocolate chips, divided
8 ounces white candy coating
1 tablespoon shortening
1 package (2-1/4 ounces) unblanched almonds

Steps:

  • In a large bowl, beat the coconut, milk, confectioners' sugar and butter until blended (mixture will be sticky); set aside., In a microwave-safe bowl, melt chocolate chips, candy coating and shortening; stir until smooth. Spoon about 1/2 teaspoon chocolate mixture into 42 paper-lined miniature muffin cups. , Shape 1/2 teaspoonfuls of coconut mixture into balls; gently press into chocolate. Top each with an almond. Spoon 1 teaspoon chocolate mixture over each. Let stand until set. Store in an airtight container.

1 ½ cups brown sugar
4 eggs

2 cups flaked coconut
2 cups chopped almonds

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the eggs, one at a time, then stir in the vanilla. Combine the flour, baking soda and salt, stir into the creamed mixture until well blended. Finally, stir in the chocolate chips, coconut and almonds. Drop by rounded spoonfuls onto the prepared cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

1 1/4 cups slivered almonds
1/2 cup sugar
1/4 teaspoon coarse salt
1/2 cup unsweetened flaked coconut
3 ounces semisweet chocolate, melted
1/4 cup unsweetened cocoa powder

Steps:

  • Preheat oven to 350 degrees. Spread almonds on a baking sheet and toast, tossing occasionally, until golden, 8 to 10 minutes. Let cool completely.
  • Bring sugar and 2 tablespoons water to a boil in a saucepan, stirring until sugar is dissolved. Continue to cook, without stirring, until a thermometer registers 235 degrees, about 3 minutes.
  • Add almonds; cook, stirring, until sugar begins to crystallize, about 1 minute. Stir in salt. Continue to cook, stirring, until a sandlike coating forms on nuts, about 1 minute more. Stir in coconut. Pour onto a parchment-lined baking sheet; let cool 30 minutes.
  • Transfer nut mixture to a bowl. Add chocolate, stirring to coat. Return to sheet; separate into clusters with a fork. Refrigerate at least 30 minutes and up to 2 days. Before serving, toss with cocoa powder, tapping off excess.

1 cup butter, cubed
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg, room temperature
3/4 teaspoon almond extract
2 cups all-purpose flour
3/4 teaspoon salt
1-1/4 cups sweetened shredded coconut, divided
1-1/2 cups milk chocolate chips, divided
1/3 cup sliced almonds, toasted

Steps:

  • Preheat oven to 375°. In a small heavy saucepan, melt butter over medium heat. Heat 6-8 minutes or until golden brown, stirring constantly. Transfer to a large bowl; cool 15 minutes., Whisk in sugars, egg and extract until smooth. In another bowl, whisk flour and salt; stir into sugar mixture. Fold in 1 cup coconut and 3/4 cup chocolate chips. Press into an ungreased 15x10x1-in. baking pan. Bake 24-28 minutes or until golden brown. , Transfer pan to a wire rack; sprinkle with remaining chocolate chips. Toast remaining coconut. Spread chocolate chips evenly over cookie. Sprinkle with remaining coconut; top with almonds. Cool completely in pan on a wire rack. , Refrigerate 15 minutes or until chocolate is set. Break cookie into pieces.

1 2/3 cups almond flour, such as Bob's Red Mill
2/3 cup Dutch-process cocoa powder
1/2 teaspoon kosher salt
1 stick (1/2 cup) unsalted butter or margarine (for Passover), room temperature
1 1/4 cups packed light-brown sugar
1 large egg, room temperature
1 teaspoon pure vanilla extract
1/2 cup chopped bittersweet chocolate
1/2 cup chopped roasted almonds
1/2 cup sweetened shredded coconut

Steps:

  • In a medium bowl, whisk together flour, cocoa, and salt.
  • In the bowl of a mixer fitted with the paddle attachment, beat butter with brown sugar on medium-high speed until light and fluffy, about 5 minutes. Add egg and vanilla; beat on medium speed just to combine. Reduce speed to low and slowly add flour mixture, beating until combined. Fold in chocolate and almonds. Shape dough into a 1-inch-thick disk, tightly wrap in plastic, and refrigerate at least 1 hour and up to 1 day.
  • Preheat oven to 350 degrees. Place coconut in a shallow dish. Scoop 2 tablespoons (about 1 ounce) dough and form into a ball; roll in coconut to coat. Repeat with remaining dough. Place balls on parchment-lined baking sheets, 1 inch apart; press each lightly to flatten. Bake until cookies are cracked but still slightly soft, 16 to 18 minutes.
