Chocolate Almond Overnight Oats are like eating a handful of cocoa-roasted almonds, but in oatmeal form. These oats are packed with four types of chocolate: chocolate almond milk, cocoa powder, miniature chocolate chips, and cocoa roasted almonds. They've got lots of other nutritious ingredients, like Greek yogurt, almond butter, and old fashioned oats.

2 heaping tablespoons creamy slow-roasted almond butter ((See Note 1))
1/3 cup (74g) honey vanilla Greek yogurt ((we love Greek God's honey vanilla yogurt!))
2/3 cup (156g) chocolate almond milk ((See Note 2))
1/2 cup (55g) old-fashioned oats
1/2 teaspoon vanilla extract, (optional)
pinch of salt
1 tablespoon maple syrup or honey ((See Note 3))
2 tablespoons Special Dark cocoa powder ((Dutch-process cocoa powder))
Optional: cocoa roasted almonds, dark chocolate chips/chunks, swirl of almond butter

Steps:

  • PREP THE OATS: In a small bowl, or refrigerator container, stir together the almond butter and vanilla yogurt until well combined and smooth. Add in the chocolate almond milk, old fashioned oats, vanilla extract, salt, maple syrup, and cocoa powder.
  • STIR: Stir until all ingredients are well incorporated. Taste the mixture and add any additional maple syrup as needed.
  • CHILL: Cover the container and refrigerate overnight or until sufficiently cooled and thickened (Sometimes I'll even make them in the morning, get ready, and then go eat them -- they are great even after just 30 minutes in the fridge).
  • OPTIONALLY TOP: Just before serving, top oats with some cocoa-roasted almonds, dark chocolate chunks, and/or a drizzle of almond butter.

This healthy overnight oatmeal recipe is easy to make, vegan, and gluten-free!

1 medium banana (mashed)
1 cup chocolate almond milk
3/4 cup rolled oats
1 tbsp chia seeds
1/3 cup plain unsweetened almond milk
1/3 cup sliced almonds
1/4 cup dark chocolate chunks

Steps:

  • Mash the banana in a medium bowl.
  • Add the chocolate almond milk, rolled oats and chia seeds and stir everything together well.
  • Cover the bowl with plastic wrap and refrigerate overnight.
  • Remove the bowl from the fridge in the morning and stir in the plain almond milk to loosen up the oats. If you want to, you can heat the oats up in the microwave if the thought of cold oatmeal is less than appealing to you. I really enjoy these oats cold from the fridge, especially now that the weather is warmer!
  • Divide the oats between two mason jars (or bowls, if you prefer) and serve with the sliced almonds and dark chocolate chunks on top!

3/4 cup unsweetened plain almond milk
1-2 Tbsp almond butter ((creamy or crunchy // or sub other nut or seed butter))
1 Tbsp maple syrup ((or sub coconut sugar, organic brown sugar, or stevia to taste))
1-2 tsp chia seeds
1/4-1/2 tsp vanilla extract
1/2 cup rolled oats ((certified gluten-free as needed // rolled oats are best, as opposed to steel cut or quick-cooking))
2 Tbsp cocoa powder
1 tiny pinch sea salt ((optional))
Maple syrup
Raspberries
Coconut flakes
Coconut yogurt
Nut butter of choice

Steps:

  • To a mason jar or small bowl with a lid, add almond milk (or other milk of choice), almond butter, maple syrup (or other sweetener), chia seeds, and vanilla and stir with a spoon to combine and distribute the almond butter evenly.
  • Add oats, cocoa powder, and salt (optional) and mix well to incorporate the cocoa powder. Then press down with a spoon to ensure all oats have been moistened and are immersed in almond milk.
  • Cover securely with a lid or seal and set in the refrigerator overnight (or for at least 6 hours) to set/soak.
  • The next day, open and enjoy as is or garnish with desired toppings (see suggestions above).
  • OPTIONAL: You can also heat your oats in the microwave for 45-60 seconds (just ensure there's enough room at the top of your jar to allow for expansion and prevent overflow and that you've used a microwave-safe jar or bowl), or transfer oats to a saucepan and heat over medium heat until warmed through. Add more liquid as needed if oats get too thick/dry.
  • Overnight oats will keep in the refrigerator for 2-3 days, though best within the first 12-24 hours in our experience. Not freezer friendly.

80g porridge oats
4 tbsp natural yogurt or coconut yogurt
2 tsp cocoa powder
2 tsp honey or maple syrup, plus a drizzle
300ml milk of your choice
8 raspberries
weighing scales
small measuring jug
tablespoon
teaspoon
cutlery knife
dessert spoon
2 jam jars, bowls or small containers for serving

Steps:

  • Before you get started, take a look at our weighing and measuring skills guide. If you have digital scales, place one of the jars, bowls or containers on the scales and reset to zero. Weigh 40g oats into the jar, then repeat with the second jar.
  • Fill a tablespoon measure right to the top with yogurt, add it to one of the jars and repeat in the same jar (so you've added a total of 2 tbsp yogurt). Repeat with the second jar.
  • Fill a teaspoon measure right to the top with cocoa powder and use a cutlery knife to swipe across the top of the spoon, knocking any excess cocoa back into its container. Tip the cocoa into one of the jars, then repeat with the second jar.
  • Rinse the teaspoon measure under warm water to wash off the cocoa powder, then use it to measure a teaspoon of honey or maple syrup. Add this to one of the jars, then repeat with the second jar.
  • Slowly measure 300ml milk into a jug, then pour roughly half of the milk into one jar and the rest into the second - you can estimate this rather than weighing again.
  • Stir each of the jars well until the ingredients are combined and the mixture is chocolatey brown. Top each jar with a drizzle of honey and 4 raspberries, then chill overnight to enjoy for breakfast the next day.
