I love all forms of ice cream. Unfortunately I can't eat it every day, so I love to whip up a healthier version. My nephew definitely shares my sweet tooth, so this one's for him. He loves bananas so I wanted to show him how creamy and sweet they can be without any dairy or added sugar!

Number Of Ingredients 6

5 ripe bananas, peeled, broken into thirds and frozen in a resealable bag 8 hours or overnight
1/3 cup unsweetened cocoa powder
1/4 cup almond butter
1/4 cup unsweetened coconut milk
1/4 cup mini chocolate chips
1/2 teaspoon kosher salt

Steps:

  • Combine the frozen bananas, cocoa powder, almond butter and coconut milk in a high-speed blender. Blend on high speed; use the tamper to push down on the ingredients so they blend evenly. Blend until the mixture is smooth and creamy, about 1 minute. Stop the blender, add the chocolate chips and salt. Blend again until combined.
  • Serve immediately, while it's soft like soft-serve ice cream, or transfer it to a freezer-safe container and freeze until firmer and easy to scoop, about 2 hours. Can be frozen up to 1 month.

6 frozen bananas, chopped
2 tablespoons unsweetened cocoa powder
1 teaspoon vanilla extract
1/4 cup almond milk or milk of choice

Steps:

  • 1. Place all of the ingredients in a blender.
  • 2. Puree on a medium setting for 15-20 seconds, using the tamper of your blender to push down or stopping to push down with a spatula. You can this to be a fast process so the ice cream doesn't melt. 3. Scrape down the sides and puree again. Repeat the process until the mixture is smooth like frozen yogurt/ice cream.** Sprinkle with favorite toppings! ***4. Serve.***** Here's a great way to freeze bananas! Place them in a Ziploc bag (make sure to lay the slices out flat in the bag when you freeze so they don't stick together) and leave them in the freezer so you can always make this treat on a moment’s notice.** Use the lowest setting to puree to avoid the ice cream from getting too loose and so it has more of a true ice cream texture.*** You can top with granola, hemp seeds, sprinkles, berries, chopped nuts, dye free chocolate candies and more.
  • **** To make nice cream even more firm, place in a pyrex or baking dish and freeze for up to 3 hours to resemble ice cream.
